Low Sugar Butterscotch Bars

Serves: 15 bars
- 1 cup melted butter
- ½ cup sucanat or brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1¼ cups whole wheat pastry flour (regular white whole wheat flour works too)
- Cream melted butter and sucanat together.
- Add eggs and vanilla.
- Stir in flour and mix well.
- Spread mixture into a 9x13 inch baking dish.
- Bake in a 350° oven for 20 minutes.
