Simple Overnight Pumpkin Spice French Toast Casserole

- 1 loaf whole grain bread
- 2½ cups whole milk
- ¼ cup brown sugar or sucanat
- 6 eggs
- 8 ounces pumpkin puree
- 1 teaspoon vanilla extract
- 1 Tablespoon Pumpkin Spice*
- Topping:
- ½ cup melted butter
- ¼ cup brown sugar or sucanat
- ⅓ cup pecan
- 1 Tablespoon Pumpkin Spice*
- Cut bread into cubes and spread them into a 9x13 inch baking pan. Set aside.
- In a bowl, whisk milk, sugar, eggs, pumpkin puree, vanilla, and pumpkin spice.
- Pour liquids over the bread cubes.
- Cover the pan and refrigerate overnight (or all day if you plan to make this in the evening for dinner).
- Before baking, stir together the topping ingredients.
- Sprinkle topping over the prepared casserole.
- Place casserole into a COLD oven, then turn it on to 350 degrees.
- Bake for 45-50 minutes or until casserole is lightly browned.
- Serve with real maple syrup.
