Low Sugar Pecan Cookies
- 1½ cups melted butter (3 sticks)
- ½ cup sugar (sucanat, raw, brown)
- 1 teaspoon vanilla extract
- 3 cups whole grain flour (I use freshly ground soft white wheat)
- ½ cup pecan pieces toasted in 2 Tablespoons butter
- Toast pecans by stirring them in a small saucepan over low heat for 2-4 minutes. Set aside.
- In a mixing bowl, stir together butter, sugar, vanilla, and flour.
- Fold in toasted pecans.
- Scoop ½ inch sized balls of dough onto a cookie sheet.
- Press balls down with the end of a drinking glass.
- Bake in a 350 degree oven for 10-15 minutes or until cookies are golden brown.
