Easy Whole Grain Cherry Muffins

Serves: 9-12
- 1½ cups whole grain flour (I use freshly ground soft white wheat.)
- ⅓ cup sugar (sucanat, brown sugar, honey, whatever your preference)
- 1 teaspoon baking powder
- ½ teaspoon sea salt
- 1 egg
- ¾ cup milk
- ¼ cup sour cream
- ¼ cup melted coconut oil
- 2 Tablespoons lemon juice
- ½ cup dried cherries
- Mix dry ingredients in a large mixing bowl.
- Add egg, milk, sour cream, coconut oil, and lemon juice.
- Stir well, then fold in dried cherries.
- Scoop batter into prepared muffin cups.
- Bake in a 400 degree oven for 18-22 minutes or until muffins are golden brown.
