Easy Cinnamon Crumb Cake
- 1⅓ cups whole wheat flour (I use freshly ground whole wheat)
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 2 eggs
- ½ cup honey
- ⅓ cup oil (I use coconut oil)
- 1 teaspoon vanilla extract
- ½ cup milk
- 1 Tablespoon ground cinnamon plus 1 Tablespoon brown sugar
- Mix together flour, baking powder, and cinnamon.
- Add in eggs, honey, oil, vanilla, and milk.
- Mix well.
- Pour into a well buttered 8×8 inch baking pan or a round cake pan.
- Sprinkle cinnamon/sugar mixture over the top.
- Bake at 350° for 20-25 minutes.
