Blueberry Shortcake with Cream Topping

Ingredients
  • 2⅔ cups flour (I use freshly ground whole wheat)
  • 1 teaspoon baking powder
  • 4 eggs
  • ½ cup honey or 1 cup sugar
  • ⅔ cup oil (I use coconut oil)
  • 1 teaspoon vanilla extract
  • 1 cup milk
Instructions
  1. Mix ingredients well.
  2. Pour mixture into a buttered 9x13 inch baking dish.
  3. Bake in a 350 degree oven for 25-30 minutes or until a toothpick inserted in the middle comes out clean. (While it's baking, prepare the blueberry topping.)
