Breakfast Organization (With Some Great Giveaways!)

At the mention of my family’s Oatmeal Rebellion, many of you piped in with your ideas for quick and easy breakfast ideas. You shared some great suggestions, which made me excited to mention some more. You can NOT have too many helpful breakfast ideas in your back pocket. Although I don’t really recommend keeping your actual breakfast in your back pocket. That would be a bad situation on so many levels.

While Sunday mornings are a bit crazy as we all try to get out the door looking halfway presentable…I’m going to also venture to say that every day can be hectic at breakfast time if we don’t have a plan. My kids are hungry from the moment they wake up. One of my boys would actually eat my leg if I didn’t shove an egg in his mouth as he rolls out of bed. He is that hungry. You’d think I didn’t just feed him four helpings of dinner the night before (and a snack before bed).

One of my best recommendations for us to keep our Breakfast Time Organized is to plan ahead. But my best, best recommendation is that if at all possible…make breakfast the night before. 

If I can, I bake our next day’s breakfast muffins or bagels or quick bread while I’m making dinner the night before. Or, I’ll start my pancakes or waffles to soaking. Or, I’ll mix up a Breakfast Casserole to have ready to bake the next morning.

It’s easy really…to make breakfast the night before while I’m cooking dinner. I’m already in the cooking mode. I’m already making a mess. Might as well make a bit of a bigger mess and get breakfast baked up too, right?

Then, after dinner, we get the whole kitchen clean (LOVE our Kitchen Chore Chart!) and put our breakfast on the table for the next morning (unless it needs to go into the fridge because leaving out a raw Breakfast Casserole would be about as bad as putting your breakfast in your back pocket).

Add some fruit or a smoothie or a quick scrambled egg to round out these meals! Planning ahead and cooking ahead can save money and help your family to eat much healthier too. It’s much better than letting my son eat my leg, is it not?

    Oh I am stuck in such a rut for breakfast….I think I am gonna try your breakfast cookie for my little girl…we have such a hard time getting on the move in the mornings…and something sweet but healhty always helps smooth the way!!!

    Hope you are snug and warm this morning…we have a huge blizzard raging! And I’m all about organizing this house right now. At least I was until the colds set in. And once we are healthy I’ll be back at it. It is about time we got this house in shape…we’ve lived here almost 4 years!

    Thanks for this opportunity. I was just looking at your breakfast cookie recipe and was wondering if you have ever substituted plain kefir for buttermilk? We make our own kefir, and I’ve been looking for ways to use it in cooking as well as drinking it.

      Yes, you can definitely use kefir instead of buttermilk in this recipe. I do it all the time when I’m low on buttermilk!

    I never thought of making breakfast ahead of time, What a great idea! With 6 kids and a husband, breakfast is always so crazy on Sunday mornings. I will typically give the kids some cereal and my husband and I will skip breakfast which only makes us hungry an hour later.

    Very excited to try some of these recipes. My 2 year old is ready to eat before I can get around each morning.     Our favorite breakfast-Homemade McGriddles

    Easy to take in the car if needed

    sausage patties (homemade turkey ones if you are so inclined-can be made the night before)

    Banana Snack-Cakes

    Mix dry’s: 1C flour (I use half whole/half white)
    2 t baking powder
    1/4 t salt

    In blender: 1 really ripe banana
    1/4 C real maple syrup
    2 T Oil (whatever kind you use)
    1 egg
    1/4 C milk (whatever kind you use)

    blend wets and stir into dry’s. This should be a thickish pancake batter. Add a little more milk if needed and cook like regular pancakes….we also like to eat these plain for a snack because the syrup is inside so there is no sticky mess. Also good spread with peanut butter.

    I love your blog…one of my favorite things to read each week!

    I didn’t plan ahead for breakfast today, so made a quick couscous:
    2 c milk
    2 t honey
    Warm this on the stove until boiling, then add
    2 c couscous
    1/4 c hemp seeds
    1 t cinnamon
    and 1/2 c dried cranberries.
    Cover for five minutes, fluff before serving.

    Would love the organization help. We moved a while back from a 1800sq ft home in another state that is still for sale after a few years to a 800sq ft rental in the country. It is really hard to keep organized with no storage space. I have found that the gamma seals and buckets from Azure store grain, rice, oats, and beans quite well out in an old bus that we are allowed to use part of. Thank you for all of your ideas and help.

    I love the term “clutter rehab”. Although I stay pretty organized, this time of year with three kids throws that concept right out the window! I love all things breakfast, thankfully my kiddos LOVE breakfast. They very seldomly pass up on the first meal of the day! Their new favorite is my homemade yogurt with honey, homemade granola, fresh fruit, topped with shredded coconut! The best part about it,all the ingredients are at hands reach and quick to prepare! No more telling me “my oatmeal is too hot”, when its time to run to the bus stop! Thanks Laura, I look forward to your emails everyday.?

    I make a breakfast cassserole that uses crescent rolls. I’d love to find a way to avoid using these. Do you think it’s possible to use the dough from your cinnamon roll recipe and just roll it into a rectangle for the bottom of the casserole? Eggs and sausage go on top.

    I love the idea of breakfast cookies, but am wondering – when you soak the grains in buttermilk overnight, do you refridgerate that?

      No, I just leave the flour/oats/butter/buttermilk combo soaking on the countertop overnight. Otherwise, there’s no way I’d be able to stir it the next morning…it’d be too stiff. Even while being on the countertop, it sometimes is pretty stiff the next morning. I often put all the ingredients into the food processor and let it do the hard work for me!

    I love your recipes. Every time I try one I am always so doubtful. Then my family loves the results. I started with the applesauce bread (and, yes, I doubled the recipe).     I so need to grow in this area. I try to do oatmeal at least 3 times a week, but so many times I forget to soak it. I’m not huge on oatmeal anyway, but it is so much more palatable when it’s soaked. Making it with dinner is such a great idea, but my kids would be bugging me to eat it for snack before bed. Hmmm, I’ll have to think about that one.

    Ok, so just this week I was getting ready to get breakfast ready and pulled out my homemade baking mix to make pancakes and had the HUGE brainstorm that “DUH!” (I only say that to myself) – why don’t I just mix one double recipe of waffle batter while I’m mixing a double recipe of pancake batter and make both pancakes and waffles at the same time so I’m only standing there one morning instead of two waiting to flip/refill the griddle/waffle iron! Boy, I thought I was genius – ok, so I know better than that. But now you had to go and have the brilliant idea to cook breakfast while I’m cooking dinner the night before!!! Genius, I tell ya! Think I’m coordinated enough to do waffles, pancakes, and dinner at the same time?!?!? Hmmm…. yeah – I need some help in the organization department! ha, ha!

    I struggle with breakfast sometimes because my kids get up super early and are hungry right away. I usually just make something really quick, like eggs and toast or, yeah, cereal. And I don’t care for scrambled eggs or cereal! :) I need to do better at making breakfast ahead. Thanks for your ideas!

    There are some good ideas—I usually just get up and fix cereal or oatmeal, easy stuff, but the casseroles and muffins are a good alternative.

    I’d love some more organization!!! DH and I work full-time and have 2 boys. I try to avoid processed food as much as I can, but sometimes I do have to break out the evil Hamburger Helper! (Acutally only DH and 1 son eat it, the younger one and I get something else!)

    My biggest breakfast challenge is to actually get up on time so I don’t SKIP breakfast trying to make it to work on time. If I have 2 minutes to spare, I make toast to eat in the car. I really could stand to be a bit more organized so each of us can have a nutritious breakfast. Thanks! I’ll try the breakfast cookies for sure!

    Oh my stars all this food looks so yummy! I’m going to try the easy breakfast cassarole for myself. Do you know if it is good to make ahead of time?     Drowning in others clutter. Finally able to get my kids to clean out a lot of their clutter. Now it is all piled in the dining room as I need to sort through what can be consigned, donated, trashed, etc!

    Great giveaways! We are trying to revamp breakfast at our house. We have been in a rut and if I don’t serve a good, protein-filled breakfast, my three-year-old will ask for food EVERY.TWENTY.MINUTES until lunch time.

    I am thankful to see that there is so much help available to those of us who struggle with daily life! I have almost reached a point of resignation that my kitchen will always be chaos, and supper will never be ontime…at least that was until I came across the crockpot website and the orgjunkie website! I am so HOPEFUL that I will become a more organized wife, mother, and daycare owner!!!

    Hi Laura,
    I am still curious about how many muffins you give your boys for breakfast. I have 9 boys and they would eat 10 or more if I let them. Is there something you make with muffins to make it more filling?

      Typically my boys eat 3-6 muffins each. I try to load them with fruit to help round it out, and often eggs too if I have time. :)
