    Can I stop by and help you cook?!!

    I’ve been trying to make several things in one “sitting” so that we have some choices through the week. It’s not a detailed “Laura Coppinger” menu but, it suits us, at least for now.

    Just finished a rice/beans/tomatoes dish (it is yummy by itself or as a burrito filling), shredded some cheese, and put chicken and BBQ sauce in the crock pot with an onion. Tomorrow I’ll either make or buy potato salad and buy buns (can I confess to buying potato salad on your blog?!). And I have an easy soup to put together when I get the one little ingredient that I forgot to pick up at the store.

    I’m a big kid, and I still lick the beaters when I have the chance… When I was a kid, there were three of us, and we would figut over who got the bowl b/c there was usually more in the bowl than on the beaters. To stop our fighting, my mom got in the habit of making sure the bowl was nearly empty so that things were more “equal.” :-P
