If you haven’t tried our Easy Noodle Stir Fry recipe, you’ve gotta do it. It’s such a fantastic way to eat veggies. You can pick and choose your favorite veggies, which is always nice. Here’s what Virginia had to say about this recipe:

Hi Laura!

We had the Easy Noodle Stir Fry tonight and it was a huge hit!! In fact, my pickiest eater, came downstairs and declared, “Mom, what is that delicious smell?” as I was finishing it up. By the way, that’s him on the right- with a mouthful because he couldn’t wait to eat for the picture! ;) (I do need to give a shout out to my oldest, not pictured, who missed out on what would be a favorite of his for sure- sorry, buddy, next time!)

I have always been intimidated by stir fry but your recipe is truly simple, very versatile, and definitely delicious! Thank you!! :)

    My kids eat veggies very well and I believe it is due, at least in part, to the fact that I have served stir-frys on a regular basis for as long as I can remember. They are easy, healthy, frugal, and delicious.

    Every once in awhile some “ramen noodles” just sound good. But I make my own and they are so much better. You can use any noodles you like – brown rice vermicelli, rice noodles, buckwheat soba… just adjust your cooking to suit the noodles. In a pint of chicken stock I bump up the flavor with some turkey or chicken Better Than Boullion and then add garlic powder, onion powder, dried onion bits, dried chive, enough turmeric to give it a rich golden color, and some sea salt. Pre-cook your noodles/pasta if they need a longer cooking time or you are using a large serving. I cook mine in my glorified broth. If your boy loves ramen, this should make him very happy.

    Talk about a post college poverty meal. I ate a lot of Ramen in college and the first few years of our marriage. I never thought of putting them in a stir-fry though. I’ve given up white past too, so I may have to try this. I had a couple of friends who were exchange students from China, they used to drown them in Siracha sauce. Yow! Made my mouth burn just watching them.
