A Safer Kitchen ~ What to Do About Aluminum Bakeware (and a giveaway from Healthy Cooking Products!)

I really appreciate our discussion last week on switching from Teflon to cast iron and stainless steel! Today we’re going to talk about our bakeware.

A Safer Kitchen

Many cookie sheets and cake pans are made from aluminum. Unfortunately, this is not a safe option. Nor are the baking pans that have a teflon-like non stick coating. Here are safer alternatives that I’ve switched to through the years:

Glass

We all know how much I love my Pyrex. :)  For casseroles and cakes, I use 9×13 Pyrex dishes. I love these so much!!!

Stoneware

I love baking bread in stones. Not only are they safe, they make my bread turn out delish!

Silicone Mats or Parchment Paper

I have several cookie sheets that are made from aluminum. They are in great shape, but I don’t like my food to touch aluminum. I’ve been using sheets of parchment paper to cover the pan, which works great – but even though I reuse the sheets a time or two, I don’t like using the paper.

I was very grateful when the folks at Healthy Cooking Products contacted me and sent me some of their silicone mats to try. This is a great solution, and a huge money saver. No more purchasing parchment paper! These mats are BPA free and can be used over and over and over. I lay them on top of my aluminum cookie sheets, and they protect my food. I am very excited about this solution!

My dad and his wife gave me this super nice air bake pan for Christmas this year since they know how much I love to bake. I am so glad I can use it now with these easy mats. They wash up very nicely, then roll up to store.

We made cookie dough balls last week to store in the freezer for a “cookie emergency.” My silicone mat fit perfectly on this cookie sheet. It does not get easier.

I also used a mat on my aluminum pan this week to make homemade pizza. It worked great, and clean up was super easy!

I’m anxious to hear what you use for baking! Glass, stoneware, parchment on cookie sheets?  I encourage you to look into these silicone mats. They are very reasonably priced and will be a big money saver since having them means you don’t have to use parchment paper.

      My gut says no to silicone bakeware. I’ve had no reason to feel that way, but I go with my gut and don’t use it. If it’s man-made, it has the potential to be unsafe. I looked it up when I read this post, and found this, which is very informative:

    I would love to win the mats. I am curious about making the pizza on them… I made the mistake of doing that once with the mats that I have and when I went to cut the pizza (with a pizza cutter) I also ended up cutting the mats some as well. My mats do look different then yours so maybe yours are sturdier. I just wondered if you cut the pizza with a pizza cutter.

    I use all of the above! I asked for stone bread pans for my birthday since I only have nonstick and they are awful! Even putting the possible health issues aside, they stick like mad even when I grease or flour the heck out of them I just line them with parchment for now! I will have to see if these mats can go under the broiler. Right now I have no other option than a plain cookie sheet for under the broiler.

    I use lots of parchment paper when baking cookies. I also have one baking stone which I use for rolls and cookies though it’s not too big. These mats look like a great idea and much better priced than some alternates I’ve seen.

    USA pans! they changed my life – silicone coated aluminized steel. Great for making foods such as your grapenuts!. The muffin pans changed my ban on making muffins for dread of clean up. I now make quadruple muffin batches and never wash the pan in between – they pop right out without a hint of spray or grease to having to be used! Bread pans are great as well! Find these on amazon or bed bath and beyond in our area.

    This would be an awesome solution! I do a lot of baking and love parchment paper (love it’s non stick qualities since most of my baking is gluten free and the kind I use is recyclable/compostable). Silly question but how do we know what the sheets are made out of? My favorite ones are hand me downs. Thanks!

    I collect (and use!) vintage Pyrex for my baking that requires 9×13, loaf, or square pans. I used to have a large jelly roll style baking stone that I used mostly as a cookie sheet. However it broke when we moved :( and now I am using “regular” cookie sheets. Would love some baking mats :)

    i recieved a Silpat silicone mat as a wedding gift and find it funny that while I can’t remember the giver of most of my wedding gifts, the Silpat gifter will always be remembered! I think this last time I didnt rinse the mat well enough after washing it- the food had a slight soap taste. Yuck! Love having silicone to bake on!!!

    I have a couple of these and love them.

    I use mostly cast iron or stainless steel for cooking, but do have a large nonstick electric skillet I use a few times each month if I’m making pancakes, tuna patties, etc. I did try a lodge cast iron griddle years ago but everything was either burnt or undercooked, I could never get the hang of it (which is strange cause I have no trouble with my other cast iron cookware). For now I’m okay with my nonstick one cause I don’t use it often enough to make me worry.

    I use silicone ALL the time had them for 16+ years would never go back. I use parchment paper occasionally ie for when I bake a birthday cake and do not want it to stick to the pan. I also my favourist bbq silicone mats. They are a lot thinner and easier to use. I line my baking pans with them, roast on them etc. with regard to pizza. I use the Bbq mats under the pizza and then once cooked carefully slide the si.icone mat from underneath so that you can cut the pizza. Knives and silicone do not mix!

    I mostly use parchment paper on my baking sheets, because I hate the clean up without. I have been wanting to try a silicon sheet but haven’t yet. Maybe I’ll win a set to try.
    My daughter just did her science fair project on which type of bakeware bakes the best cookies. Her testing showed that glass bakeware baked the softest chewiest cookies so now she is only using my Pyrex 9X13 bakeware to bake cookies in.

    I have tried to switch to stainless steel and glass. I still like to use parchment paper on my cookie sheets though to aid in clean up. No need to wash the pan when using parchment.

    Unfortunately most of my cookie sheets and cake pans are aluminum, but I do have one silicone mat for the sheets. I use glass as much as possible for baking. I need a new bread pan and would love to find one with straight sides (or less sloped than my Pyrex loaf pan anyway.)

    I’ve just been doing some catching up on this series on safer cookware, and I’ve really appreciated what I have learned. I never knew about the potential health risks associated with aluminum cookie sheets. I have used parchment paper to aid in clean up, and I do own stoneware on which I make pizzas and sometimes cookies. I tried a silicone mat one time, but without much success. Maybe these are different and better…sure look like they work well for your pizza!

    My bakeware collection is a mesh of stone, silicone (love the muffin cups and loaf pans!), Pyrex, and aluminum. Basically it started out as a cheapie collection of unsafe materials when I was in college, and over the years as I’ve learned more and had the funds, we upgraded.

    My cookie sheets, however, are still aluminum. I’d love to try the silicone baking sheets! Thanks for the opportunity.

    Glad you found success with the silicone mats. I tried them and didn’t care for them. On the other hand I LOVE parchment paper. I used to feel guilty about the environmental waste, until I found the “If You Care Brand” at whole foods. It is unbleached, made from sustainable forests and COMPOSTABLE! It keeps baked goods from getting too brown on the bottom and makes clean up a breeze. I stock up when it is on sale.

    Looks great! Would they work to bake a pumpkin roll? And then work to roll the pumpkin roll for cooling, instead of having to roll in a powder-sugared kitchen towel?     I’ve been working on getting my food safer and healthier. I’ve been using parchment paper just because it saves cleaning another item. Using it for health is a good idea too. Would love to try the silicon mats…have always heard folks raving over them, but have never tried them myself because I wasn’t sure if they were a healthy option or not.     I have a couple of those. They do come in handy. One thing though, if you’ll forgive me. I saw you had it under pizza. I’m under the impression that you’re not supposed to cut on those. At least with the brand I have (I think it’s silpat), the silicone is supported by a fiberglass framework, and tiny cuts into the mat would potentially let out bits of fiberglass…non ideal :) I don’t know if that’s true of all baking mats.

    I cook with Corningware, the “old stuff”, smile. For baking I also use Corningware and Pyrex, except for baking sheets…I too have the lovely air-bake cookie sheets that I use an awful lot of parchment paper on for pizza, cookies, crackers, etc. Would be exciting to have the silicon pads to use instead–save money and waste!

    I am slowly replacing ALL of my pyrex glassware with stoneware and steel baking pans. Last fall a 9 x 13 pyrex baking dish literally exploded on top of my stove- I was so grateful no one was nearby, because my kitchen was literally covered with shards of glass. After much research, I discovered that this DOES happen sometimes. That shattered and flying glass could have destroyed someone’s eyeball.

    So my Christmas wish list was enameled stoneware and steel baking pans made in America. I received one Le Creuset 9 x 13 (so pricey, but so worth it) and a spectacular steel 9 x 13. I promptly threw out all of my 9 x 13 pyrex dishes.

    I also recently got an Emile Henry pizza stone that is enamel coated. Oh my gosh, best thing for baking pizzas, cookies, scones, biscuits and breads. It cooks perfectly evenly and I don’t have to worry about aluminum residue.

    Mats are a good thought, but are they really safe? What would be in them. I use my aluminum trays for baking, freezing produce from the garden, then put in baggies. Marinade meat on them, use them as serving trays in summer. Bringing in meat that was barbequed .

    Think maybe it’s time to change but I would hate to spend the money and not like them.

    Also think maybe time to get them out of the house before the Grandkids inherit them,,they have a long way to go in life…

    I’d love to hear some suggestions on reheating in the oven without using aluminum foil. One thing I’ve found that works is using the baking sheet that came with my toaster oven turned upside down on top of a casserole dish as a lid to keep it from drying out while reheating.

    I use stainless steel, stoneware, and cast iron. I have wondered about the silicone mats (if they were BPA free or not) and have used parchment paper but I may have to think about buying some of these since they are BPA free.

    Let’s face it, we are as fussy with our tools as men are with theirs. I use stoneware for most cookies, pyrex and stoneware for casseroles, but I use aluminum lined pans for things like pork chops. I have a 9 inch square silicon pan I use for a lovely baked french toast I make weekly. Its my first time using silicone products and I love it. Those liners would be a great addition.

    Thank you for spreading the word about the dangers of aluminum. My Dad pointed it out to my Mom 60 years ago after she purchased a cookware set. Scraping a spoon across the surface of a pan resulted in minute flaking and acids caused discoloration.

    I have switched most of my bakeware and storage containers to glass and stoneware over the past few years. When I use my aluminum cookie sheets, I cover them with parchment paper but these mats look great!

    I have glass baking dishes and a couple stones, but I just don’t typically pull them out when the cookie sheets are easier. It’s really hard to get my husband to use the stones because he wants to use something he can wash with soap, so he won’t touch them. Plus, they are quite heavy. So much easier to grab the light aluminum. I do sometimes use parchment paper, but not every time because of the cost. We may have to make some changes! I would love to be entered to win these!     I use baking mats to construct our pizzas and slide them into the oven. Just remember to take them off the mats before you cut them up.

      I have used them for years in my gas oven, and they are fine. They are NOT related to plastic at all; they will not melt.

    I got a HUGE baking pan for Christmas that’s absolutely PERFECT for cookies, sourdough biscuits, pizza, etc. Unfortunately, it’s not good for our health unless I put parchment paper on it. I’d love to get those mats! I am curious though how you clean them…can they be put in the dishwasher?     It is hard to move away from aluminum. I actually found a web site that sells stainless steel cookie sheets that are made in the US. They are not cheap, but they are great quality. Because they have no sides though, I have not gotten rid of my other cookie sheets, so that would be a great way to continue using them. Thanks for the opportunity!

    I have just stopped using foil for baked potatoes so I am ready for more new ideas about baking! I have always loved my Pyrex and I just bought my first roll of parchment paper.

    Here’s a silly question that has nothing to do with aluminum bakeware but does have to do with a safer kitchen. We have been reheating leftovers in the oven for quite some time because it simply tastes better. I would like to get rid of the microwave and replace with a toaster oven. The only issue holding me back is defrosting meat when I don’t plan ahead for dinner. I’ve looked at past posts regarding microwave, but only find the topic of reheating foods. What do you about defrosting meat when you are in a pinch?

      hello!

      This was the one thing i had the hardest time giving up using our microwave for because I was notorious for not planning ahead! What I do now is put the meat in a bowl and cover with hot water, as hot as our tap will go…. then I just change out the water 2,3 or 4 times as the meat cools it off. It doesn’t thaw as quickly of course, but much faster than i thought it would! This is what we do every night now, and we haven’t used our microwave in 5 months! :) Hope this helps you give up your microwave once and for all! You can do it! :D

    We usually just use aluminum foil, unfortunately. It is the cheapest option aside from excessive amounts of cooking spray. I am interested in these silicone mats. I wonder how they transfer heat. One problem we have with baking cookies is that the bottoms always become to overcooked. If this mat does not transfer heat like foil, you could make the perfect cookie!!!

    Yay! I am trying to rid my kitchen of aluminum as well. We had some water damage and our kitchen is down to the studs right now (much like your bathroom!), so I figured that when my “new kitchen” is done, I would restock with a few new pans and baking dishes.     I received my order of two of these “Healthy Cooking Products” mats just yesterday based on your recommendation. Today I made cinnamon rolls and some cookies. These mats are wonders! Besides enabling baked goods to just slip off, these mats also produced a superior baking product. Instead of some of the good stuff seeping into the pan or parchment, it stayed on the bottom of the cinnamon rolls. Delicious! Thank you for this recommendation.

    I have used silicone mats for years, but I find that after several years of use, they start to get discolored and have a funky smell about them. I’ve tried soaking them in vinegar, but they still smell. I rinse them well (or wash with plain dish soap if they have pizza sauce or something on them) and hang them out on the line to thoroughly dry before storing them. Are they ruined, or is there a way to bring them back to life?
