Easy and Healthy Chocolate Peanut Butter Cups

I have eaten at least three of these Chocolate Peanut Butter Cups every single day since September. Please, you must join me in delighting in this simple, and apparently necessary, pleasure of life.

Before I share more about this recipe, allow me to tell a story so that when you eat these in front of others, you will not make the same mistake I did.

See, it all started out back in September when I learned that I needed to add a significant amount of good fat to my diet if I wanted to improve my health, have more energy, and get rid of my brain fog. Seeing as I had no desire to lick coconut oil off a spoon or peel open a stick of butter like a banana, my quest to figure out how to easily eat all these good fats led me to discover these Chocolate Peanut Butter Fat Bombs.

They changed my life, and I’m not exaggerating. They are so very nourishing, made with loads of healthy fat and protein, and sweetened with stevia (stick with me though, even if you hate stevia). The fat bombs are delicious and I started feeling better immediately after I began eating several each day. Who knew? My body had been screaming for more nourishment from healthy fats!

Well, back to my story of what not to do.

We had company one weekend in October. I was eating a Fat Bomb while preparing breakfast. (Had to get my brain going, you know?) One of our guests walked in and asked, “Oh, what are you eating?” Suddenly I found myself in a quandary about how to answer. I could have simply said, “It is a healthy Peanut Butter Cup.” Right? Couldn’t I have just said that??

But no. I found myself launching into a very long narrative about my health journey during the past four years and how I’d been feeling awful during the past few months and couldn’t figure out what I could eat that wouldn’t make me feel awful. The very minute I started the story, I wanted to stop. I quickly realized that the kind ears listening to my “what are you eating” explanation were on extreme overload and most definitely confused. But I couldn’t stop because I’d already started and for the life of me, I couldn’t figure out how to wrap it up. So I kept going on and on. I even found myself using phrases like “adrenal fatigue” and “intense detox.”

The poor dear. Some people want to know more about natural doctors and bad bacteria lurking in the gut. But some people just want to know, “Hey, what are you eating?”

So you guys. Make these, eat them, enjoy them, and let them nourish you. But for the love of pleasant conversation, when an innocent person asks you what you’re eating just say, “It’s a healthy Chocolate Peanut Butter Cup.”

Now, it is Christmastime and treats are fun at Christmas. That’s why I’m re-sharing this recipe. But today I’m calling them Healthy Chocolate Peanut Butter Cups to ease the pain of anyone you might be having a conversation with over the holidays. You are so very welcome.

We say: “It’s a Healthy Chocolate Peanut Butter Cup.”
There now. Was that really so hard?)

Easy and Healthy Chocolate Peanut Butter Cups

Ingredients
  • ½ cup coconut oil (I use expeller pressed so the coconut flavor didn't overpower.)
  • 1 heaping Tablespoon cocoa powder
  • 4 Tablespoons butter
  • ½ cup natural peanut butter
  • Liquid stevia to taste (I use 1½ droppers full of NuNaturals Brand.) OR 2-3 Tablespoons of honey or maple syrup
Instructions
  1. In a small saucepan, heat and stir together coconut oil, cocoa powder, butter, and peanut butter.
  2. Once melted and mixed, remove from heat and stir in stevia.
  3. Pour into 12 muffin lined muffin tins.
  4. Freeze for 20 minutes or refrigerate for 2 hours.
  5. Store in fridge and eat as needed.

By the way, these really taste best when they are right out of the fridge!

I love that these are completely free of sugar when made with stevia. But if you don’t like or don’t have stevia, you can use maple syrup or honey instead. These will still be wonderful for you and only lightly sweetened.

I use silicone muffin cups like these when I make these “Healthy Chocolate Peanut Butter Cups.” This makes it so very easy!

Delicious Candy You Can Make Yourself (with healthier ingredients)

As you all know, I don’t mind the occasional healthy food compromise, especially on special occasions. Christmas qualifies as one of the most special occasions of all, doncha think? But when I turn over a package and see that the yummy contents therein contain hydrogenated oils or high fructose corn syrup – I just can’t do it. (I know, I know. It’s best not to even read the label. Wait. What?)

What I love is trying to re-create some our favorite treats so that we can have our Christmas candy and eat it too. These treats are best shared and in moderation though, because they are full of sugar! (I know, I know. It’s best not to even think about how much sugar is in them. Wait. What?)

Here are some goodies I make every once in a while for a very special treat:

Homemade Peppermint Patties

These call for none other than mashed potatoes. Weird, but true. And they also have tons of powdered sugar in them. Better than high fructose corn syrup, but wowza. You’ll be amazed at how much these taste like the “real thing.”

This is my husband’s favorite. It’s super fun to make these for him every once in a while. We think they taste better than the packaged variety. It’s amazing how good peanut butter tastes when it’s only made with peanuts.

Homemade Chocolate Caramel Cups

Can I interest you in a Chocolate Caramel Cup recipe to go along with the Chocolate Peanut Butter Cup recipe I shared earlier this week?

Upon typing that sentence, I am suddenly reminded of Mrs. Hendricks, my really, really old 2nd grade teacher. Seriously, she had to have been at least 33. She taught us how to carry the 1 when adding double digits and she would never let any of us say the word can.

We would frequently forget this rule, saying in our best whiny 7 year old voices, “Mrs. Hendricks? Can I get a drink of water?” And she would say, “I don’t know. Can you?” We would then roll our eyes without her seeing us because we were really sneaky and cunning and besides at her age, surely her failing eyesight wouldn’t allow her to see our facial expressions clearly. Obligingly we would come back with, “I mean, may I get a drink of water?” I believe those of us who shall remain nameless who were really sweet and running for teacher’s pet of the year award also added a please in there too.

To this day, I am not able to say can I without switching to may I and I think I might also roll my eyes a little bit while I’m saying it. Old habits die hard.

So, can I interest you in this wonderful recipe to go along with the Chocolate Peanut Butter Cup recipe? And together, with all of the second graders and Mrs. Hendricks we say, “I don’t know.  Can you?”

Chocolate Caramel Cups Yum

1 cup chocolate chips
2 Tablespoons butter
1/4 cup homemade caramel sauce

First, whisk together a batch of Homemade Caramel Sauce. You won’t need it all for this recipe, but get yourself some vanilla ice cream and you’ll be serving the best caramel sundaes with the leftovers.

Prepare 6 regular sized or 16 mini-sized muffin cups with paper liners. In a small saucepan, heat chocolate chips and butter, stirring until melted. Spoon half of the melted chocolate mixture into the prepared paper-lined muffin cups.

Place a spoonful of caramel sauce (hot or cold) into each cup, dividing the mixture evenly among the cups. Top each with the remaining chocolate, smoothing it the best you can to cover the caramel.

Refrigerate for two hours until solid. (Or place in the freezer for about thirty minutes to speed the process.)  Store in the refrigerator until ready to serve.

Homemade Chocolate Peanut Butter Cups {Real Food Recipe Makeover}

This recipe was inspired by Laura S., someone I met at the Colorado Springs Meet and Greet. Not only was her idea brilliant, I think her name is absolutely beautiful. ;)

I wasn’t able to make these Chocolate Peanut Butter Cups look perfect and beautiful like one you’d pull out of a Reese’s wrapper. But I did make them taste better, so we’ll go with “taste before beauty” on this one. And of course, with these, you avoid the hydrogenated oils and turn out an even more delicious treat than one that comes from a factory.

Warning:  These are super rich and slightly messy. Children and adults alike may end up with chocolaty fingers and faces, not to mention a sugar high. You’re welcome and I’m sorry.

1/4 cup natural peanut butter
2 teaspoons honey
1 cup chocolate chips
2 Tablespoons Butter
