Menu Plan for the Week

Shew. We partied all weekend. Matt performed a wedding ceremony on Saturday and of course there was cake. Then we went to a graduation reception that afternoon…where there was cake.

Sunday afternoon we were invited to about five more graduation receptions. Five parties…five cakes. You’d think instead of the Eat More Fruits and Veggies Challenge…I’d put my family up to the Eat More Cake and Also More Cake Challenge. 

No, we didn’t eat cake at every reception…not that the boys didn’t ask. Actually, by the end of the day, I don’t think their little punch stained faces wanted to see another piece of cake either. :)

Here’s our very cakeless yet very fruit and veggie full menu for the week:

Sunday, May 17
Pumpkin muffins, bananas
Roasted chicken, potatoes, carrots
Graduation parties (cake for dinner?)

Monday, May 18
Simple sourdough pancakes, fruit
Skillet meatballs, stir fried asparagus, fresh pineapple
Tuna casserole, peas

Tuesday, May 19
Scrambled eggs, toast, oranges
Quesadillas, fruit-kefir smoothies
Lamb chops, baked potatoes, green beans

Wednesday, May 20
Baked oatmeal, apples
Hummus on crispy cheese crackers, fruit salad
Popcorn chicken to go, carrot sticks, apples (Hershey Track meet day…anyone else participating in a Hershey Track meet in your area?!)

Thursday, May 21
Potato, egg and pepper scramble, clementines
Homemade pizza, raw veggies
Lamb burgers, creamy scalloped potatoes, steamed mixed veggies

Friday, May 22
Apricot breakfast bars, applesauce
Chicken chef salad, garlic toast
Cheesy beef and rice, green beans

Saturday, May 23
Biscuits and gravy
Grilled burgers, baked beans, fruit salad
Spaghetti, tossed salad

I hope you’re going a little crazy with all the wonderful fruits and veggies available this time of year!

Hey, I have a question. As you understand it…is corn a vegetable…or a grain? 

(and while you’re at it…which came first the chicken or the egg?)

    I love your menus! Thanks so much for doing them every week. When I am stumped (which happens fairly often these days) I just pull up your week and grab a couple of ideas!

    The chicken definitely came first…um, duh, right? The garden of Eden must have had them laying lovely eggs all over the place.

    And corn is quite surely a grain. We are growing some in our garden right now, in fact!

    Hmm, maybe it depends how you use it? If you dry it and grind it – grain; if you eat it fresh or preserved (I’m thinking hominy) – vegetable.

    I was on a quest a while back to figure out if hominy is good for you or not, but I never did figure it out. Ah, well, everything in moderation anyway, I guess.

    I think it depends on how you eat it and when you eat it. Dried, I think, is more grain. But fresh would be starchy vegetable, like a potato. I think that if you are planning meals and trying to count various food groups, you would make the decision–corn may be one of you 4 starches for the day, so it couldn’t also count as a vegetable. Similar to how you do it with beans–starch or protein.

    Wow! Cake overload.
    Yes, it’s wedding and graduation time of year.
    Our teen graduates next year. If we’re still living in Vegas my husband and I will throw him a party.

    That’s a lot of cake! ‘Tis the season, I guess.

    I have it on the authority of 2 nutritionists and 1 personal trainer that corn, peas and potatoes are considered to be starchy vegetables. Vegetables, but high in starch, so they count as a carb (if you keep track of that sort of thing).

    Corn is a grain. It has little nutritional value as a vegetable, or as a grain, for that matter.

    Corn not a veggie, it’s ruffage. It has NO nutritional value to it.

    Corn: a vegetable when I’m trying to count it as one for the day ;)

    Otherwise, a grain and awfully yummy on the cob with a lot of butter!

    Corn … though delish, does not count in the veggie category in our house … not that my family doesn’t try to convince me on a fairly regular basis that it should.

    And I’m pretty sure chickens were first, but that’s a much longer discussion.

    Believe it or not, I read in a Raw Foods book that our body treats raw corn as a veggie but cooked as a carb. The cooking changes the structure, apparently. Raw corn may sound weird, but I once sliced it off the cob raw and sprinkled it over my salad. It was incredibly sweet and juicy and WONDERFUL! Although, I imagine a lot of our current day corn “hybrids” are so great… anyway, there’s my thoughts for what they’re worth. :)

    Corn is a grainy vegetable! ahha I can’t go wrong witht this answer-can I?
    Oh and God created every living creature and said multiply so I’m guessing the chicken came first Am I right??
