Yes indeed, today is the big day. It’s National Pretzel Day! (I’m sure you all dressed up for the occasion.)
I made a big batch of pretzels earlier this afternoon. They came out fat and sassy this time, and rich and buttery, and were best hot and steamy and well {she says, with a bit of a tear in her eye}, this is quickly becoming one of my favorite holidays.

Can you please tell me how you get your whole wheat bread to rise so well? My bread is always very dense and not good at all unless I add vital wheat gluten, which I dont want to continue to do.

Your recipe is the best! Everyone I have made them for loves them. I make them with whole wheat (fresh ground from the Nutrimill).
Is there a reason you don’t boil them in baking soda? I’ve only made them a couple of times and used this recipe (this was before my trying to go whole grain, but I’ve been thinking about tweaking the recipe): http://allrecipes.com/Recipe/Soft-Giant-Pretzels/Detail.aspx. I assumed the baking soda was what made them pretzels! I’d love to hear your thoughts!
Many people do like to boil them, which makes them more like the big pretzels you get at the mall. We like them this way, but I don’t know why it would hurt this recipe to try the baking soda method.
Did you make some gluten-free? If so, what did you do? Honestly, I can’t imagine that you sat there savoring the warm, golden pretzels fresh from the oven while Malachi sat and cried,err… I mean, watched. :o)
I didn’t make any gluten free, but am hoping to figure out something that will work in the future.
Bob’s Red Mill’s website has a recipe for gluten-free pretzels. I haven’t tried them – simply haven’t had the time, but one of these days I will.

These were on my agenda to make today but my pepper jelly boiled over on the stove so I spent an hour cleaning up the sticky, icky mess and ran out of time! Tomorrow I will take up the challenge! Thanks for the recipe!
Would love to see what you come up with a gluten free recipe. The coconut flour is not available to me where I live though. :)
I’m only able to find coconut flour online myself. I just got some from Amazon https://www.heavenlyhomemakers.com/my-exciting-grocery-posts-for-the-week-in-which-i-received-a-lot-of-bonus-groceries
I think if I try to make these pretzels gluten free though, I won’t use coconut flour. Probably a mixture of some other flours (rice, millet, buckwheat?).
