Just a quick post to share about one of my favorite kitchen tools!
How to use your cast iron griddle
It’s great for pancakes, great for grilled cheese sandwiches, and great for my Cheesy Cauliflower Cakes recipe. I love that I can crank out a lot of food at one time because of this large cooking space. The griddle covers two stove-top burners. Once I get the heat regulated, this griddle works awesome!

CAUTION: This is pre-seasoned with genetically modified soybean oil! (They really should list that in the description since soy allergies are so common.)

How do you care for yours? I’m interested in cast iron but have never owned anything. I think I’ve been worried that there is too much maintenance to keep it from rusting…

Does this conduct heat well in the middle of the griddle? This is the part that does not have direct heat under it. I remember years ago ditching one of these griddles as the pancakes poured in the middle would not brown up.

I’ve found that it does take a few minutes for the middle to get hot enough. But it DOES get hot enough so that I can do a third big pancake in the middle of my griddle. It takes about one extra minute for the middle pancake to finish cooking compared to the outside pancakes.

Six or eight, depending on the size of your bread. That is SO much faster than when I used to do it in a skillet!

How ironic that you posted on pancakes–I posted yesterday also on pancakes and linked to your site! Mine is on my sneaky delicious veggie filled healthy but you wouldn’t know it Chocolate Pancakes. I tried my recipe with less sugar (thanks to your inspiration) and they are still delicious!
