I hope you’ve had a great day honoring the important men in your life. I had a nice phone chat with my dad this afternoon. (I caught him before his Sunday afternoon snooze. Aren’t I such a nice daughter?!) The boys and I have been trying to spoil Matt today, and based on his reaction at lunch, I’d say we’ve been successful.
Before church, I started marinating some chicken legs in barbecue sauce so that they were ready to grill when we got home. While they were grilling, Justus picked lettuce from our garden for a salad, and I made some sweet corn (the last of what we froze last summer) and some okra (also frozen from last summer). Matt loved the feast, but then I reminded him to save room for his dessert… :)
I typically make Chocolate Peanut Butter Pie about once a year – on Father’s Day. Wowza, this is a rich treat only to be had on rare occasions! But hey, it sure was fun to honor Matt and you know…participate in sharing in his Father’s Day treat with him. And here Matt thought I made the pie especially for him. ;)

Mmm, your lunch looks so good! We had a great Father’s Day, too. Hot dogs for lunch (finally found the organic ones we love again!), and then my wonderful husband spent the entire afternoon building a chicken coop with our boys. For chickens he was not really all that excited about getting. In the heat. And I think he really enjoyed himself! For dinner I grilled steaks and garlic potatoes with carrots and broccoli, and then we had fresh peaches over ice cream. Yum!

Wondering how you prepare your okra … all I know to do is fry it, otherwise it is so slimy! Also, any plans to post about your garden soon? How are things progressing there in Nebraska?

I slice it and fry it in a little bit of olive oil until it’s a little crisp, but not mushy (which is sometimes a tricky spot to find!). I salt it a little bit with sea salt. I’ll try to show pics of the garden soon if I can!

I slice mine and coat it with cornmeal and s&p. Coat a baking sheet with 2T oil and spread the okra on the sheet. Bake at 450 for 15- 20 minutes until crispy, stir once or twice. This is for fresh okra.

I made peanut butter pie for the first time last night. The recipe called for powdered sugar, but I used agave nectar instead. I also used your graham cracker recipe for the crust. My 2 year loves it, so it must of turned out all right :)
