Menu Plan for the Week

Soccer season for our boys starts up this week. Malachi is finally “big” enough to play. He’s been waiting his whole life for this moment. :) 

So, here we go. Four boys on four different teams…Matt coaching two of the teams…Evenings and Saturdays full of practices and games…Freezing our tushies off while we jump and cheer and say things like, “No! Go the other way!!”.

I’m mostly looking forward to the season…because it truly is delightful to watch each of the boys play at their different levels. I can’t wait to see Malachi in his uniform, which is surely going to look like a dress on him. 

Oh my word, I hope we have cleats to fit everyone this year. Usually this isn’t a problem because we have had soccer shoes of every brand and size handed down to us. It’s just a matter of finding them all and making sure there is a left shoe to go with the right shoe. Details, details.

This weekend I tried to work ahead in the kitchen so that we’d have some easy meals to pull from before we head off to play soccer. Everyone seems to need to eat before we leave and after we get home from practices and games. 

To make things a little simpler (or whatever), I planned our bigger meals during lunchtime this week, saving our grab and go food for the evenings. At least this way I can try to make sure we get enough veggies in, right?

Sunday, April 5
Honey whole wheat bagels, applesauce
Friends took us out to lunch!
Chicken and noodles, mashed potatoes, carrot sticks

Monday, April 6
Simple sourdough pancakes
Oven fried chicken, mashed potato pancakes, peas
Beef and cheese burritoes, apples

Tuesday, April 7
Biscuits and gravy, scrambled eggs, oranges
Beefy enchilada bake, tossed salad
Homemade pizza pockets, peaches

Wednesday, April 8
Chocolate chip muffins, pears
Lamb chops, baked potatoes, green beans
Baked spaghetti, tossed salad, corn

Thursday, April 9
Fruit-kefir smoothies, granola
BBQ chicken, potato salad, creamy cole slaw
Cheesy quesadillas, carrot sticks, apples

Friday, April 10 – Sunday, April 12
LTC and Easter weekend with friends!!

    Our schedule is like that with baseball. When we don’t have practice, we have games. And naturally, you gotta eat before… and then you gotta eat after! ;)

    Just have to say I am jealous about LTC. We used to do LTC when we lived in Omaha and miss it like the dickens. Couldn’t find a good CoC nearby after we moved to CA, much less one that did LTC.

    Hi! What do you know about food combining for better digestion/health? I have read a little, but it doesn’t make allot of sense. Is it necessary?

    Don’t you just love spring sports! DD#2 who is 12 yrs old is playing soccer, softball and basketball! That is three days a week of practice at least and 4 days of games (most weeks we have 2 softball games a week)
    Practice nights are around dinner and she also feels like she has to eat before and after. I plan to do a lot of research on meals for young athletes and quick portable meals.

    I noticed in one of your older posts that you make crinkle cut french fries (and carrots). What tool do you use for doing this. I searched (using swagbucks) but I’m not seeing a tool for this. My kids LOVE crinkle cut fries and we have potatoes in the garden for the first time this year. I would love to make crinkle fries from real potatoes! Thanks.
