In case I ever really wondered how much I really rely on my menu plan…going without one last week proved it to me! Thanks for all your meal suggestions…they were super inspiring!

I’ve enjoyed reading your site since I stumbled on it, from Money Saving Mom, I believe. I have a silly question…I really enjoy cooking and will tackle just about anything; however, it seems like EVERY time I roast a chicken I set off our smoke detectors (does not make my two year old or dogs happy). How do you cook yours? I’m always curious to try a new recipe/method.

This is how I do mine… preheat over 350 degrees. Place rack on next to top (not broiler spot, one down)
I drizzle some oil oil on the chicken, then season it up. I generally cook mine for an hour and 15-20 mins. Smoke alarms don’t go off, and the chicken is nice and tender and brown!

I just put a chicken into a big roaster with carrots, onions, salt and potatoes and put it into a 300 degree oven for about two hours. Right now since it’s hot…I stuck it all in my crock pot for the afternoon!
