Gratituesday: I’ve Been Waiting A Long Time To Write This Post…

It’s been a long, painful road. You know…the kind you can’t possibly walk through without God’s holding you up?

Matt’s brother Randy and his wife Kari have been on quite a journey for the past several years. They’ve dealt with pregnancy and loss…excitement and disappointment…triumph and tragedy. 

Too many times.

It’s been painful, for all of us…Randy and Kari most of all. They’ve clung to God through it all. Because all the time…God is good.

Two years ago, God gave them a new opportunity. The opportunity to adopt.

With this new possibility came a new kind of joy…and a new kind of fear. This adoption process was not a simple one. (are any of them simple?)

There were times it sounded like the whole thing would all fall through. And then it would all seem okay again. And then it wouldn’t.

I think we’ve all been holding our breath for two years.

Until last Friday. Friday, we could let out our breath and jump for joy!

The sweet baby boy God gave to Randy and Kari back in October of 2007 is officially and totally theirs!

What to Do With All the Strawberries in Your Kitchen

We’ve been blessed with tons and tons of fresh strawberries this summer!!! Some of you have been asking what I do with all of them.

This was what we picked the first time. 
We went back three more times!!

First…we eat as many fresh ones as we can. There are only a few weeks during the year that we can do this, so we’re not holding back!

Second, I’ve been flash freezing them (shew, I think I’m almost done now!). I have enough in my freezer now to last me the year (at least)!

Third, I cooked some of them down and made a “strawberry spread” of sorts. I didn’t want to add sugar or pectin to make a jam, so I just experimented with straight strawberries. It’s a little tart…but we like it on toast just fine. I only made one small batch of this, because we really just like strawberries fresh or frozen better!

Now…here’s a list of all the other yummy things I like to make with fresh or frozen strawberries…

  • Strawberry-peach slushies (our favorite way to eat the strawberries!)
  • Strawberry-kefir smoothies
  • Strawberry yogurt
  • Strawberry-yogurt fruit dip
  • Strawberry cheesecake
  • Strawberry shortcake
  • Strawberries on whole wheat waffles

  • Strawberry milkshake
  • Strawberries and cream (either whipped or just poured over the berries!)
  • Fruit salad
  • Strawberry bread (several of you have requested this recipe…I actually don’t have a recipe because my friend made it for us and brought it over. I’ll try to get it for you! And for me!)
  • Strawberry ice cream (just crush strawberries in a blender and add to ice cream mix)
  • Strawberry rhubarb pie (a great recipe in the FREE pie ebook!)

What am I forgetting here? What are some of your favorite ways to eat strawberries?! Besides just…you know…eating them.

Menu Plan for the Week

I have a confession to make. Even though I said I wouldn’t open my curriculum catalogs until July 1…I just couldn’t help myself. I got my house nice and clean…then I sat down under the ceiling fan and opened not one…but BOTH catalogs.

And I looked at them for hours. (It’s practically July, right?!)

It was delicious and delightful. I LOVE looking at all the great books available to us! It makes me SO excited for the upcoming school year. Okay…I’ll gush more about that another time.

Here’s our menu for the week:

Sunday, June 21
Strawberry ice cream (Father’s Day Breakfast of Champions!)
Honey mustard chicken, baked potatoes, steamed broccoli and carrots, pecan pie
Cheesy turkey sausage stromboli, tossed salad

Monday, June 22
Simple sourdough pancakes, applesauce
Pizza casserole, tossed salad, strawberry-peach slushies
Chicken stir fry with zucchini, and whatever other veggies make it in the pot

Tuesday, June 23
Scrambled eggs, oranges
Sloppy joes, creamy cole slaw, angeled eggs, strawberries and cream
Deer steak, mashed potatoes, gravy, peas

Wednesday, June 24
Banana muffins, apples
Salmon patties, creamy mac and cheese, carrot sticks
Italian roast wraps, tossed salad 

Thursday, June 25
Fruit-kefir smoothies
Grilled cheese sandwiches, fruit salad, chips and salsa
Beef and cheese burritoes, fruit

Friday, June 26
Breakfast cookies, pears
Bean dip with salsa and kreme fresh, fresh pineapple
Hamburgers, french fries, strawberry milkshakes

Saturday, June 27
Whole wheat cinnamon rolls, cantaloupe
Black bean taco salad
Chicken fajitas, tossed salad

Homemade Ice Cream! (So healthy you could eat it for breakfast.)

Seriously, I’m thinking we really might do this sometime soon. I mean…cream, milk, eggs, maple syrup…all breakfast foods. See?  You could eat this for breakfast. I think we all should. Our children will think we’re awesome. (Not that they don’t already of course.)

A part of this balanced breakfast.

So here’s my recipe:

Homemade Vanilla Ice CreamYum

2 quarts heavy cream
1 quart (4 cups) whole milk
6 egg yolks
1 cup real maple syrup
2 T. vanilla
2 T. arrowroot powder (helps thicken it a bit)

Mix all ingredients together with a whisk. Freeze according to your ice cream freezer directions.

We invested in this Rival F69206-X 6-Quart Electric White
Mountain Ice Cream Freezer last year to go along with our
shaved ice business. It is so great.

In case you’re wondering…I’m not afraid of raw eggs. The eggs we use are free range, organic…and are as healthy as can be. We eat them raw all the time. (On the flip side, I don’t think I would eat a “regular” raw egg from the store…but that’s just me.)  (Maybe I should do a post about that sometime?)

If you like, you can add more than 1 cup of maple syrup. I feel like it’s sweet enough with this amount, but others may not.

You really should put some of this delicious hot fudge sauce 
on top too. It is SO good.

Now, this weekend for Father’s Day, we’ll be adding strawberries to this recipe because of all the delicious strawberries we’ve been picking. I can’t wait!

Shucks, with strawberries in it…it’s an even more balanced breakfast (what with the fruit and all). Perhaps this will be our Father’s Day breakfast. 

(I just mentioned this idea to Matt. His eyes lit up and he said um, OKAY. Uh-huh, we’ll be having strawberry ice cream for breakfast Sunday. :) )

Fun Father’s Day Idea: How to Make a Mystery Message Card

You have to try this great idea for making a mystery message card! I think they’d be super fun for the kids to make for Dad (or Grandpa) (or that ornery uncle) for Father’s Day. They’re very simple to make, yet kind of tricky for the recipient! How fun for the kids to try to stump the grown up!

Instead of trying to explain how to make the card with a picture tutorial, I had Asa video me making one. I think he did a pretty good job taking his first video!

Oh and to answer the questions you’ll all want to know…yes, I’m wearing my old basketball uniform top from high school. I found it when I went to KS last month, and thought it was fun. And no, I wasn’t any good at the sport, but it’s fun to have the uniform. My boys think it’s oh so cool.


**Edited**  Never mind about the gluing step. It doesn’t work. I don’t know what I was thinking!! :)

Gratituesday: The Two Greatest Men in My Life

Have I ever told you that I have a great dad? Not a perfect dad, but a great one.

He spent hours with me in our shed, in our yard, and at the gym trying to help me figure out how to shoot a free throw and for Pete’s sake how to serve a volleyball over the net. That took a lot of patience on his part…because let’s just say I’m not a natural athlete. (I’m not any kind of athlete, really.)  I have fond memories of him running beside me at every track meet while I was warming up to run the half mile race. He would always come straight from working in the field, so his pliers would still be in his pocket. As he ran beside me and gave me a pep talk before the race, his pliers would bounce up and down on his belt. I can still hear the sound of his pliers while he jogged beside me.

My dad taught me a lot about the Bible…how to talk to people…how to see people’s needs and try to meet them.

Here’s what I’m realizing:  My dad has always been great at giving advice.

You want to know the greatest advice my dad ever gave me? When I was playing “the dating game” in college and getting so frustrated with the whole thing, I asked him, “Dad, are my expectations just too high? Am I looking for a guy who just doesn’t exist?”

He told me this, “Laura, you aren’t the kind of girl that boys want to date. You’re the kind of girl that they want to marry.  Don’t compromise on the kind of man you’re looking for. Don’t ever compromise. There is someone out there that is exactly what you want.”

I loved the advice, but still didn’t really think that there was anyone out there in this whole wide world that would meet my expectations for a husband. Still, I held onto my dad’s advice not to compromise. I didn’t want to date around anymore feeling like, “Well, this guy is great, except for (fill in the blank).”

It wasn’t long before Matt and I began dating. I could tell from the beginning of our relationship that he was different. And…it didn’t take long to realize that he was the definition of “exactly what I wanted in a husband.” With no compromising.

When my dad walked me down the aisle on my wedding day and handed me over to Matt, I know he did it with confidence. Not only did I find just what I’d been looking for in a husband, my dad found exactly what he’d been looking for in a son-in-law.

Not compromising was the best advice I ever took.

I actually don’t mind if Matt reads my menu plan. He’ll kind of figure out what we’re eating this week when I put the food on the table in front of him anyway. I’m just trying to keep a couple of Father’s Day surprises a secret, that’s all. :)

This week, I’ll be sharing a few fun Father’s Day gift/treat ideas for dad that you and your kids can make together. I’ll share one right now that I’m REALLY excited about…

I bought this very inexpensive Father’s Day Brag Book Album…digitally “slid” my own pictures into the pages…and sent it off to Walgreens to be made into a little book. Not even the boys know about this one…so I can’t wait to share this with all my men next Sunday!

Gardening 101: The Garden that Grows in Spite of Me

Welcome to my garden tour. Here are a few of my disclaimers:  I’m a much better cook than I am a movie maker. I played with all the different features of Windows Movie Maker because I needed to edit out quite a bit of my video…like the parts where I walk from one part of my yard to another talking about random things that would have bored you to pieces. Several parts of the video might seem are choppy. And also…I needed to weed a few areas of my garden…but I wanted to get the video done, so I waited…and now you get to see parts of my garden in all their overgrown grassy glory. I took the hoe to the garden soon after the video, just so you know. 

So here…without any more excuses for lame video footage…is the garden that grows in spite of me:

I’ll try to make another video in a couple more weeks. We’ve had tons of rain lately, so everything is growing like crazy!!

The Story of My Sleeves

I promised you here that I would share this. Oh how refreshing it is to take a break from all the hard work of writing and sharing healthy recipes and gardening tips… so that I can make myself look ridiculous.

Really. This story is ridiculous.

It happened on a day soon after we had moved back to Nebraska (about seven years ago). I was extremely exhausted from the move. I had three kids ages four and under. My youngest at the time was four months old. I blame this story all on post-partum brain. And whatever else I can possibly blame it on.

Matt and I, along with the kids, were in the home of some fellow church members. The husband was a Bible professor at the college…the wife a psychology professor. That means they are both smart. And also incredibly brilliant.

You know…the kind of people you want to sound intelligent in front of?

Anyway…we were getting ready to leave, and our kids were doing their kid thing, because they were ages four and two and four months old.

I don’t remember exactly what brought it up, but the wife and I got onto the subject of mothering…and how we have to always be on our toes in order to keep the kids under control.

And then I said it.

I said, “Yep, I’ve got some tricks up my sleeves.”

Doesn’t sound too bad does it?

That’s because I THOUGHT I said that I had tricks up my sleeves.

What actually came out of my mouth was,

“Yep, I’ve got sleeves.”

That’s all I said. 

“I’ve….got….sleeves.” 

Then I stood there nodding and looking all smug because I was a good mother with tricks up her sleeves. At least I thought I did. But no…apparently all I had was sleeves. Nothing up them. And certainly no tricks.

It took way too long for me to figure out what I had actually said…at which point I sort of lamely mumbled, “uumm…I mean tricks up my sleeves…”

The lady was kind enough to act like she didn’t really notice…even though I know she did. It didn’t help that I’m pretty sure I was wearing a sleeveless shirt that night. Good grief.

I’ll end this story with a word of encouragement and blessing to all you moms out there:

May you get enough rest to enable you to formulate entire sentences. May you always sound intelligent around those you wish to sound intelligent in front of. And more importantly…

May you always, always, forever and ever amen…have sleeves.
