Alu Paratha

The boys and I have been studying the country of India for several weeks now. Fascinating! We’ve all learned a lot…me  most of all.

One thing that has been a good lesson for all of us is the fact that there are so many people who want to live in the cities to get a job (not that there are enough jobs)…that there is not nearly enough housing…and so tons of people will live in one tiny apartment…and sometimes it is just too crowded and someone has to go sleep outside.

So I’m reading this information to the kids while we sit in our kitchen, which is probably the SIZE of some of the apartments in India, and looking around at the rest of my house, which is probably the size of the country of India (not really, but I DO have a very big house) (for which I am thankful) (even when I have to clean it).

So, that is your social studies lesson for today…and I hope you gained an appreciation for the size of your home and the fact that you can read and have enough food to eat and that you don’t have to sleep outside when we don’t have enough room for you in the house because we are packed in here nose to nose like a bunch of sardines. (Oh, sorry. I forgot I was not talking to my kids. Sorry ’bout that.)

(“Mama, what’s a sardine?”)

Okay, so ANYWAY…one of Asa’s assignments this week was to make an Indian dish. He looked some up online and found one here. He chose to make something called:  Alu Paratha which is kind of like a tortilla (although just flour and water) with mashed potatoes with spices inside.

It was a bit time consuming to make, but not toooo bad and Asa did awesome making them. He had to peel potatoes, cook them, mash them and put spices in, knead the dough, roll out the dough, plop some potatoes inside, flatten them out a bit and seal ’em up, then fry them in butter.

asaindiandish2sm.JPG

asaindiandish3sm.JPG

asaindiandish4sm.JPG

Daddy got home for lunch just as Asa was finishing! Perfect! (Of course, it always happens this way…I am pulling a beautiful lunch from the oven just as my darling husband walks in the door, and so he is greeted by my perfect hair and smile and the aroma of the wonderful meal that awaits him…)

So, we had Asa’s Alu Paratha for lunch and they were delish!

Now, I have to admit that there were a few of the spices that I didn’t have in my cupboard…and I wasn’t able to make a quick trip to the store for them, nor was I able to make a quick trip to India for them…so we settled on just leaving them out and using what we did have.

So, it probably wasn’t a true Alu Paratha. And also, when it said to put the potatoes into the bready part and then flatten it…I just wasn’t sure how to instruct him to do that without potatoes squishing out and getting all over the rolling pin, so we just sort of pushed them down a little with our hands to flatten them.

I’m pretty sure women all over India were rolling with laughter yesterday at me when I was telling him, “See Asa, you do it like this.”

Yes, those Indian women were saying, “Girlfriend, that is SO not a Alu Paratha…” (tehehehe)

That’s okay, they can laugh. We had fun and enjoyed trying something new!

Wonder what country we’re supposed to study next?!

P.S. Now, I know you’re all thinking, “Huh. Here she is trying to sell us this Funky Kitchen book on how to keep an organized and functional kitchen…just look at the background in all those pictures she just posted. Dirty dishes everywhere. Huh.”

 (And you’d be right, I do need to do a few dishes.)  Hey, we dirty up a lot of dishes at our house. And I was helping to educate my child and allow him to create a native dish from the country of India so that he might have a heightened awareness of the cultures around him….

(I know what you’re doing, by the way. You didn’t even notice the dirty dishes before since you were really just noticing the fine strapping young lad in the pictures…and now you’re all going back to look at the dirty dishes in the background. Yeah, I’m on to you..)

Even if you can tolerate gluten, it’s great to have a recipe for a sweet treat for friends and family who can’t. This recipe is YUMMY and so super easy!

pbflourlesscookeis2sm.JPG

Yum

My seven year old chef made these yesterday! His thirty something year old mommy ate three one tiny nibble to make sure they were good. (and they were)

Only four ingredients!

1 cup brown sugar or sucanat
1 cup peanut butter
1 egg
chocolate chips or chocolate stars…depending on how you want to make them

Just mix the brown sugar, peanut butter and egg together.

For bar cookies, stir in about 1/2 cup chocolate chips, spread mixture into a 9×9 pan and bake for 20 minutes at 350 degrees.

pbflourlesscookies1sm.JPG

For cutesy cookies, place a small scoop into a mini muffin paper (using a mini muffin  pan), put a chocolate star in the middle of each and bake at 350 degrees for 10-12 minutes.

Flourless Peanut Butter Chocolate Star Cookies

And that’s it! Easy and yummy…that works for me!

gratituesday11.jpg

 Welcome to week two of GRATITUESDAY!

Recently at church we sang “Great is Thy Faithfulness”. The words were particularly touching to me and phooey, I can’t sing when I’m crying.

What a beautiful reminder to us that his mercies are new every morning, God doesn’t change, his compassion is unfailing, nature is witness to God’s faithfulness and greatness…oh sorry. Here, you read the words and see if you aren’t touched too.

Great is thy faithfulness, oh God my Father
There is no shadow of turning with Thee
Thou changest not, Thy compassions, they fail not;
As Thou hast been Thou forever wilt be.

Summer and winter and springtime and harvest,
Sun, moon, and stars in their courses above
Join with all nature in manifold witness
To Thy great faithfulness, mercy and love.

Pardon for sin and a peace that endureth,
Thine own dear presence to cheer and to guide;
Strength for today and bright hope for tomorrow
Blessings all mine, with ten thousand beside!

Great is Thy faithfulness! Great is Thy faithfulness!
Morning by morning new mercies I see;
All I have needed Thy hand hath provided;
Great is Thy faithfulness, Lord unto me!

 May you have “strength for today, and bright hope for tomorrow…” as you consider God’s faithfulness to you. God is good.

Join me this GRATITUESDAY and leave a comment letting my know what you are thankful for.

 Make Your Home a Haven Monday

Here’s what I’m doing to make my home a haven this week:

We don’t need stuff, we don’t buy stuff, so how do we end up with SO MUCH STUFF?!

This week I plan to go through each room and clean it  out!!!

I  have completed cleaning out one bedroom and have gotten a whole trash bag full of stuff we don’t need. Some of it is trash…some of it will go in our garage sale pile, some of it will be given away.

getridofstuffsm.JPG

Oh yes, I knew you’d be excited to see my big bag of stuff!

funkycollectionsm.JPG
These were among  my favorites in the big bag of stuff we don’t need:

Sunglasses from the 1980’s (blocks 0% of UV rays);
One half of a plastic soccer ball;
One plastic spider that has scared too many little people around here;
And one plastic toy that never did work (it was supposed to shoot balls up and out of the top), and has been repaired with lovely masking tape, so that it can continue not to work…

There’s no telling what else I’ll find as I clean out the house!

Does anyone else LOVE getting rid of unneccessary clutter as much as I do?

P.S. You’ll see my menu for the week here!

Make Your Own Yogurt and Cream Cheese

January 25, 2008 by Laura 271 Comments

How to Make Homemade Yogurt

Yum

You can make your own yogurt and cream cheese, and it is not hard! You don’t have to have any fancy equipment (and when you see my pictures, you’ll believe it!). Not only will this save you money, you’ll have yogurt and cream cheese that is very good for you! Try making this yogurt, then add your own fruit, sweetener (I recommend stevia or real grade B maple syrup) and a touch of vanilla. YUM!

Here’s what you need to do to make yogurt:

1 quart of whole milk (I use unpasturized milk from a farming friend)
3/4 cup plain yogurt or this yogurt starter

Pour the yogurt into a quart jar (using a glass container is important). Heat the milk on the stove in a saucepan until it is just under 100 degrees.

yogurt1sm.JPG

Pour the milk over the yogurt in the jar and shake.

Place the jar into a cooler of hot water, cover and leave in the cooler for seven hours.

yogurt2sm.JPG

There, you just made yogurt!

Now, you can eat the yogurt as I mentioned before, or you can take your yogurt and make cream cheese (and impress the socks off of someone!).

To make cream cheese, line a strainer with a tea towel. Pour the yogurt into the tea towel.

creamcheese1sm.JPG

You need to secure the tea towel full of yogurt and hang it for 7-10 hours (I usually do this overnight) so that the whey can drip off. I’m sure there must be a more impressive way to hang your yogurt, but what we’ve come up with works just fine!

creamcheese2sm.JPG
Here are the secrets to my effective cream cheese-hanging-whey-dripping process (I know, you’re on the edge of your chair!):

I fold over the top of the tea towel and hold it closed with a couple of rubber bands. Then, I use several more rubber bands to attach a long wooden spoon to the wadded up tea towel. Then, I use a rope to dangle the tea towel from a cabinet door. And, of course I leave a bowl under the whole contraption so that whey doesn’t drip all over the floor (because then, my process would not be nearly as cute).

Then, after you can tell that the whey has all separated from the cream cheese (you can tell it’s finished if it isn’t dripping any more), then you pull the whole thing down and scrape the cream cheese into a jar. And that’s it. It is so simple.

creamcheese3sm.JPG

Sure, you can tell people that it took you hours and hours to make yogurt and cream cheese (because technically it DID take hours to make), but the part you actually played in it took about 10 minutes.

Pssst! It’s GRATITUESDAY at Heavenly HomeMakers! (Pass it on!)

gratituesday1.jpg

Today, I am especially thankful for the ways He is providing for our family, and for the ways He is teaching me to trust Him.

Several months ago, I began a journal, recording “extras” God was giving us. When I pulled it out to write yet another surprise blessing this weekend, I couldn’t believe how long my list was!

While I’m sure that Satan will keep working on me to make me stop trusting God, and He’ll keep telling me lies so that I’ll worry about how God will provide for us…God just keeps proving over and over that HE is in charge and that HE is going to take care of us.

Please, please join me this Gratituesday and share with me something that you are grateful for…

Getting the Week of to a Great Start!

January 21, 2008 by Laura 3 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

I decided today to hop onto Monday Meanderings…check it out! It’s a great way to help get you organized and start your week off with a  plan.

Here are the five areas of focus:

1. Bible Study:

*We are reading as a family through the book of John and helping the boys memorize John 1:1-14.
*We are also soaking in the words of John the Baptist in John 3:30, “He must become greater, I must become less.”

2. Must Do:

*I MUST bake bread and make granola early in the week.
*All of our sheets need to be washed.
*I’ve got to baby proof the house (I started babysitting for a 10 month old each morning, and I’m quickly learning that we have way too many marbles in our house.) (and legos) (and game pieces…)

3. Cleaning Zone:  This week my zone will be the kitchen.

*I need to clean out the fridge because somehow maple syrup spilled. I’m actually less upset about the sticky mess than I am about wasting good organic maple syrup! Do you think it would be too weird if I swiped my pancake over the spill tomorrow morning? (I’m pretty sure I’m kidding.)

*I also REALLY need to clean my oven. Last week, a casserole spilled over and made a big stinky, smokey mess. I’m tired of running over to the smoke alarm to wildly fan my dishtowel in front of it to get the thing to stop screaming. Hey, at least we can be confident that it works!

*My kids could write their spelling words in the dust on the top of the fridge (please don’t tell them this…I don’t need little boys climbing up there to give it a try). So, I need to clean it off before someone really tall comes over.

4. Train Them Up:  We are working on “obeying the first time…without arguing or whining”. Time for Mama and Daddy to enforce this a little better.

5. Menu Plan:  You can see what we’re eating this week here. You’ll also find a link to some fun, FREE new menu planners here!

So, what do you have going on this week?
