Easy Low Sugar Cream Cheese Cut Out Cookies

Is it just me, or can we all agree that when we add cream cheese to a recipe, it will become extra – top notch – amazing? May I interest you, then, in these Cream Cheese Cut Out Cookies? Don’t worry – they are low in sugar. Oh, but also don’t worry – they still taste incredible!

You’re going to want to add this recipe to your list of keepers! We make these Cream Cheese Cut Out Cookies for just about every holiday. Pumpkin shapes in the fall, trees and stockings at Christmas time, and hearts for Valentine’s day. If we’re really feeling crazy, sometimes we’ll make them randomly in June. It just so happens that we have a cookie cutter in the shape of Mickey Mouse. June’s as good a month as any to make a Mickey cookie.

Since I’m not much into sugar anymore, I like eating these as-is, without frosting. My kids, of course, prefer to frost theirs. In case you need some low sugar (or high sugar) frosting recipes, I will share them below. But for now…

Easy Low Sugar Cream Cheese Cut Out Cookies

Easy Low Sugar Cream Cheese Cut Out Cookies

Serves: 24-30
Ingredients
  • 1 cup melted butter (two sticks)
  • 8-ounces softened cream cheese
  • ½ cup raw sugar or sucanat
  • 2 eggs
  • ½ teaspoon baking powder
  • ½ teaspoon vanilla extract
  • 3½-4 cups flour (I use freshly ground hard white wheat flour)
Instructions
  1. Stir together melted butter, softened cream cheese, and sugar.
  2. Add eggs, baking powder, and vanilla.
  3. Stir in flour until well combined. (Use a little less or a little more flour as needed.)
  4. Place dough in the refrigerator for at least two hours.
  5. Once dough is chilled, roll on a well-floured surface and cut out into desired shapes.
  6. Bake in a 350° oven for 10-15 minutes or until cookies are lightly browned. (I prefer mine just barely done so that they stay soft!)
  7. Allow cookies to cool completely before frosting.

Cream Cheese Frosting

1/2 cup butter, softened
8 ounces cream cheese, softened
4 1/2 cups unbleached organic powdered sugar
1/2 teaspoon vanilla extract

Whip butter and cream cheese with beaters until fluffy. Add vanilla and powdered sugar and beat until mixed thoroughly.

Stevia Sweetened Cream Cheese Frosting

8 ounces softened cream cheese
1 cup heavy whipping cream
1/2 teaspoon vanilla extract
Liquid stevia to taste (I use 2 droppers full)

Whip ingredients together until smooth. Frost cookies just before serving.

Low Sugar Chocolate Frosting

1/2 cup butter
4 Tablespoons cocoa powder
2 Tablespoons milk
2-4 Tablespoons honey (sweeten this to your taste)
1 teaspoon vanilla extract

In a small saucepan combine butter, cocoa, milk, and honey. Cook and stir over low heat until ingredients are well combined and mixture begins to thicken slightly. Removed from heat. Stir in vanilla. Spread onto cookies.

So You Wanted a Low Sugar Chocolate Frosting for your Low Sugar Chocolate Cake?

When I shared this Low Sugar Super Moist Chocolate Cake recipe and told you that I’d adapted it from a Texas Sheet Cake recipe, several asked if I could come up with a low sugar chocolate frosting to go with it. I mean, the Cream Cheese Frosting is great, but sometimes we just need some chocolate with our chocolate, yes?

Low Sugar Super Moist Chocolate Cake

Creating a chocolate frosting for this cake was a little bit tricky. See, low sugar chocolate can turn out quite bitter if you’re not a dark chocolate fan (um, or even if you are). Plus, powdered sugar is typically what gives frosting its bulk. That’s why I’ve been using cream cheese frosting. The cream cheese and whipped cream provided the bulk, then the stevia provided the sweetness and we were good to go. (More about stevia here.)

Here’s what I learned through this trial and error process: Making chocolate frosting with stevia is not so good. Spread on top of the cake it was so-so, but wow, the bitterness had too much of a bite, even for me – the one who loves dark-dark chocolate.

So here’s the solution I came up with: I used honey. This frosting is really more of a glaze, because there’s not much in it to make it thick and creamy. But a thin chocolate glaze on a chocolate cake like this? Just right.

Low Sugar Chocolate FrostingYum

1/2 cup butter
4 Tablespoons cocoa powder
2 Tablespoons milk
2-4 Tablespoons honey (sweeten this to your taste)
1 teaspoon vanilla extract

In a small saucepan combine butter, cocoa, milk, and honey. Cook and stir over low heat until ingredients are well combined and mixture begins to thicken slightly. Removed from heat. Stir in vanilla. Spread over cooled cake.

Honey Sweetened Chocolate Frosting

We really liked this cake with whipped cream on top. I simply whipped the cream, then added a few drops of stevia.

I continue to be fascinated by the fact that we can take so much of the sugar out of recipes and still turn out a delicious treat.

Cheesecake Brownies ~ Share Your Story

Share Your Heavenly Homemakers Recipe Story

This Cheesecake Brownies story was one of the first to inspire our Share Your Story feature here. I love reading your experiences with our recipes! Why should I keep them to myself?

Jacquelyn originally left part of this story in a comment on my Cheesecake Brownies post. I emailed her to ask if she would mind if I featured her story….wait. Why am I telling the story?? Here’s Jacquelyn:

I’ve been reading Heavenly Homemakers for a couple of years. I’ve tried lots of the recipes. Most of my kitchen regulars come from the website. Recently, we had a church event and I was responsible for taking a dessert. I scrolled through Laura’s list of desserts and happened upon the Cheesecake Brownies. I definitely wanted to try them. I love brownies (especially the corners) and my husband loves cheesecake. Plus, Laura said the recipe needed to be shared. What could be more perfect?

So I whipped up a batch. They looked delicious. They smelled delicious and what I licked off the spoon was delicious. As soon as they cooled, I lined them up on a serving plate and off to church we went.

People started oohing and aahing over the brownies. They wanted the recipe so I told them about Heavenly Homemakers. I didn’t worry that they were eating all the brownies. That’s why I made them. My kids were upset that they weren’t going to get dessert because everyone else was eating the brownies. I reassured them that it would be okay because I had left a couple at home.

The event ended and we headed home. When we got home, I cut up those last brownies. I managed to split the remaining brownies between my three kids and left one in the pan for me. I hurried the kids upstairs to bed. Tucked them in and went downstairs to savor my gooey cheesecake brownie.

I walked in the kitchen to find the pan empty! Just then my husband walked in and one look at him told me everything. He had eaten the last brownie! I didn’t get a single one. Not a single brownie. I was left to eat the crumbs from the pan. And I did.

I just had to share the story with Laura. It was too funny not to share. She asked me if I would make them again and share my story with a picture. So I’ve been looking for a good time to once again make these brownies that everyone else went on about. I finally got the chance this weekend for a family party. I made sure to leave more at home this time, just in case I didn’t eat one at the party. I ate one at the party and then another when we got home. These Cheesecake Brownies really are so very yummy. My husband says that the second batch didn’t turn out as good as the first. I guess I’ll have to try again. ????
