Stir-and-Pour Honey Oat Bread

The day my Whole Wheat Stir-and-Pour Bread turned into this Stir-and-Pour Honey Oat Bread is the day I discovered that my family is spoiled.

Hear me out. My kids and my husband are incredible, fabulous, and godly. They are kind, gentle, and they amaze me on a daily basis. But the day I made this Honey Oat Bread for the first time, they did not blink. They did not flinch. They did not leap off the couch and run to the kitchen the very moment they smelled the deliciousness of homemade bread wafting into the living room.

They did not praise me. They did not admire me. There were no tears of joy in their eyes. Hmmfff.

Y’all, my kids don’t know that homemade bread is amazing. I mean, they know that it is because they love it and enjoy eating it very much. But homemade bread? Meh, it’s just another average Monday. (Simply because it’s so easy to make this bread, I actually have time to do it regularly. You will too. Keep reading!)

I remember once when my kids were little and I told them, “I’m going to give you a special treat this afternoon!” Their eyes lit up with excitement…until later that day when I presented them with a plate of homemade cookies. They saw the “treat” and they were like, “oh.” I mean, they ate them and they loved them. But homemade cookies? Special? We ate those last Thursday.

Now boxed cookies from the store? Now THAT’S a treat. Whatever my dudes.

Here’s the interesting fact. I’m not even the mom who has time to bake bread and cookies much anymore. I’ve bought more un-homemade (but still real) food in the past couple of years than ever before. (Thank you, Mr. Dell’s unprocessed frozen potatoes for being there for me when I need you most.) The only reason I can still make homemade food these days is that I’ve learned the art of barely working and still putting incredible dishes on the table. (I’m looking at you, Simple Recipes.)

And so it is with this Honey Oat Bread. Because of this recipe, your family can be spoiled too! They can become the ones that are so used to eating homemade bread that they no longer realize how amazing it is to be treated with such goodness!

Why? Because anyone in the world can make this bread. It requires measuring, dumping, stirring, pouring, and that’s it. Do no work. Make no mess. Smell homemade bread. Eat homemade bread. Cry tears of joy. Or just sit there unphased, eating fresh, delicious bread because it is, after all, just another average Monday.

Stir-and-Pour Honey Oat Bread

Stir-and-Pour Honey Oat Bread

Serves: 1 loaf
Ingredients
  • 3 cups whole wheat flour (I use freshly ground hard white wheat)
  • 1 cup rolled oats
  • 2 teaspoons active rise yeast
  • 2 Tablespoons sucanat or sugar or honey
  • 1 teaspoon sea salt
  • 2 cups warm water
  • Optional Topping:
  • 2 Tablespoons honey
  • ¼ cup rolled oats
Instructions
  1. Stir all ingredients together in a large mixing bowl.
  2. Cover and allow dough to sit for 30-45 minutes.
  3. Pour contents into a well-buttered loaf pan.
  4. Heat honey in a small saucepan and drizzle over the unbaked loaf.
  5. Sprinkle ¼ cup oats on top.
  6. Bake in a 350° for 50-60 minutes or until evenly browned.
  7. Allow it to sit in the pan for 15 minutes.
  8. Remove the loaf to let it cool completely before slicing.

It is very worth noting that one of our college-aged sons (who no longer lives at home or eats much homemade food) came home for a haircut on a day I had made homemade bread. His face lit up, and he exclaimed joyfully over the bread on the cutting board. Rest assured, he was sent back to the dorm with a bag of sliced homemade bread and a butter knife.

So make this amazing Stir-and-Pour Oat and Honey Bread. It’s easier to make this bread than it is to go to the store to buy bread. True story.

My 17-Year Old Confesses How He Really Feels About How I Make Him Cook

Oh my goodness, this guy!!

At his very core, our Justus is the same motivated, hard working, creative, g0-getter that he has been since he was little. Now he is 17 and getting ready to be a senior in high school. Ahhh, the senior year! Here we go again…

Recently, Justus and I were working on lunch together in the kitchen and out of no-where he said, “When I have kids, I am totally going to teach them to cook like you taught us. Why do people think this is hard?”

I’m not exactly sure what inspired his proclamation as it came without prompting somewhere between the steaming of the green beans and the grating of the cheese. But he went on with, “So many of my friends think cooking is hard, and I’m like, ‘Not really. It only takes 5 minutes to make scrambled eggs.'”

It hit me then that cooking with my kids from the time they were little became such a natural thing that they didn’t even know they were learning. To Justus, cooking is just cooking…a normal part of any day. There’s nothing hard about it for him because it’s just a fact of life.

Sure it takes effort, and sure at any given time my boys would rather sit on the couch playing a video game. But when I say, “Justus I need you to brown the meat for dinner; Elias please make Guacamole; Malachi head on in and get the veggies ready…” they just do it.

What started with me “letting my boys help” in the kitchen has turned into my ability to turn them lose. During this on-the-run season in our lives, I’m really not sure how I would keep them all fed if they didn’t pitch in and help.

Hearing these words from my 17-year old meant a lot to me. He gets it. He understands that the reason most kids think cooking is difficult and that eating out is the only option is because they haven’t been taught how simple it is. And apparently he’s on a mission to tell his friends, “Dude. Learn how to scramble an egg. It’s not even hard.”

My turn for a confession: I found it easier to naturally teach my older three boys to cook, but my youngest kind of got the shaft. Why? I think because by the time Malachi was old enough to truly be of help, I already had three bigger boys doing the jobs I needed done. Then when the older boys got busier and didn’t have time to help as much, I didn’t have as much time to focus on teaching Malachi the basics. Oops.

All that to say, I encourage you to try and make it natural to teach your kids to cook. Pull them into the kitchen with you as much as you can so they learn without even knowing that they’re learning. But if that doesn’t work or it isn’t coming naturally, consider doing what I did with Malachi…

He and I sat down together and went through the Kids Cook Real Food eCourse together. That was the magic bullet for both of us as it finally inspired him to want to get in the kitchen and gave him all kinds of confidence! And it helped me because the course did most of the teaching so my overloaded brain didn’t have to think so hard or work so hard. Why reinvent the wheel, right?

Easy Crustless Pizza Pie

Without a doubt, this crustless pizza pie tastes as good as it looks. Better actually.

Malachi's Pizza Pie

This recipe is simple enough for my 11-year old to make by himself, and tasty enough that we all decided to add it to the menu frequently.

The best part is: You can make this with any pizza toppings you like. Make it full of veggies, full of meat, or a combination of both.

I will say that we made one with hamburger and one with pepperoni and all of us enjoyed the hamburger pizza pie best. The day we made these for pictures, I had no peppers or mushrooms in the house. Boo. We made them with sauce, meat, and cheese and served olives and tossed salad on the side.

Once the Cream Cheese Layer was in the oven, Malachi browned the hamburger meat – while standing on the AlienBoard. Is there any other way to do it? I promise you will not catch me multi-tasking in this way. But yay for the 11-year old!

Ingredients
  • 8 ounces cream cheese, softened
  • 2 eggs
  • ¼ teaspoon ground black pepper
  • ½ teaspoon garlic powder
  • ¼ cup grated parmesan cheese
  • 1 cup pizza sauce
  • 1½ cups shredded mozzarella, cheddar, or colby jack cheese
  • Any meat or veggie toppings you like
Instructions
  1. In a medium-sized bowl mix cream cheese, eggs, pepper, garlic powder, and parmesan cheese until creamy.
  2. Spread mixture into a pie dish.
  3. Bake in a 350° oven for 15 minutes.
  4. In the meantime, prepare pizza toppings.
  5. Spread pizza sauce over hot cream cheese layer.
  6. Top with any meat, veggies, and cheese you like.
  7. Bake in a 350° oven for 10 minutes or until cheese has melted.

The Work It Takes to Teach Your Kids to Cook: Is It Worth It?!

The goopy finger reaches into the dough you asked him not to touch. The flour spills. Everyone wants a turn at the same time. The cookbook gets slopped on. The tiny hand grabbing for the spoon knocks over the glass of water. The excitement escalates. An egg gets cracked onto the floor. The smiling kid with cinnamon and honey all over his hands, face, and arms runs out of the kitchen to smear himself all over the couch….

Ah, it’s the picture of parenting bliss. These are the delightful reasons we all love letting our kids help us in the kitchen. Mmm-hmmm. 

I remember it all very well. I knew the value of getting my kids into the kitchen with me to teach them the basics – plus they always loved helping me. But wow, usually it was so much easier to do it myself. After all, I didn’t need help spilling the buttermilk. I could do that very well all by myself.

The next time you have your kids helping you in the kitchen, and you begin to feel exasperated, wondering if it’s worth all the trouble and extra work – be encouraged by this walk down memory lane in the Coppinger Household:

These are my four boys, back in 2007. I don’t recommend always having all of your kids help you at once, but hey, when it’s Monkey Bread – everyone wants to help.

Oh look, here they are making Snowflake Quesadillas. The little cuties. It’s great to look back at pictures of the kids and forget that what was really happening when I snapped the shot was that the five year old had his pants on backwards, the two year old was in the background screaming, and the other quesadillas were on the stove burning.

Why the walk down memory lane? Those pictures were all taken six years ago. See that little one in the middle of the picture above? Here he is now, making French Toast for our family brunch with very little help from me:

My encouragement to you is this:  If you continue to let your kids into the kitchen with you, teaching them basic skills and letting them do what they are able to do – your hard work WILL pay off.  Now, all I have to do is hand my 11 year old a recipe and he can make it on his own. Now all I have to do is ask my 13 year old to brown hamburger meat for lunch, and he has it done in 15 minutes. Now all I have to do is ask my 8 year old to get the eggs ready for breakfast and he knows just what to do (except for the actual cooking part – we’re still working on that one). Now I can turn parts of our meal over to our 16 year old and he’ll take care of them completely.

My kids still have a lot to learn, but they’ve spent a lot of time helping me in the kitchen through the years, which has made learning to cook come more naturally to them.

Teaching Your Kids to Cook: Turkey Ranch Pinwheels

As I mentioned a few days ago, we’re working hard at our house on a new curriculum/ebook called Teaching Your Kids to Cook. Just like Learn Your Letters, Learn to Serve, this has become a family project. I’m the one writing it, but all the kids get to be a part of putting this all together (and posing for pictures), which makes this task so much more fun!

Malachi (age 6) was eager to help me try a new “recipe” idea – one that requires no cooking – just a little bit of spreading, rolling and sprinkling. In the middle of summer, any recipe that requires “no cooking” is a winner, so we decided we’d give you a sneak peek into this recipe before the book is completed!

4 Soft Whole Wheat Tortillas
3 Tablespoons Ranch Dressing (we make our own ranch dressing)
½ cup Turkey, cut into tiny pieces
½ cup Shredded Cheddar Cheese

Spread Ranch Dressing on each tortilla.

Sprinkle bits of cheese and turkey over the ranch covered tortilla.

Roll the filled tortilla up as tightly as you can.

Let a grown up help cut the rolled tortilla into pinwheels:

Malachi was so excited that he “made dinner for our family” and he declared this to be the “awesomest dinner ever!” It’s true – these Turkey Ranch Pinwheels were super easy to put together, didn’t require a stove or an oven and Malachi (age 6) was able to do most of the work all by himself (okay, not really, but sort of). We devoured this entire plate – and we had made a triple batch!

Since we had been taking pictures of the entire process Malachi wondered, “Don’t you need a picture of me eating them, Mom?” Well sure. Just in case you aren’t sure what to do once you finish putting your Pinwheels together, here’s Malachi to show you:
