Homemade Apple Cider in the Crock Pot

Once upon a time, my friend Anne and I went to an orchard nearby and picked over 100 pounds of apples. At the time we had 6 children – ages 12 and under – between the two of us. Therefore, I think it is obvious that neither of us had enough to do with our time and we were frequently bored. That’s why we picked so many apples. That, and the fact that the apples were (mostly) organic, very delicious, and wonderfully priced. Most importantly of all though, it is so much fun to take your kids to an orchard to pick fruit. Days like this are some of my favorite memories of time spent with my boys when they were little.

On that very 100-pound apple day, we borrowed the orchard owner’s apple cider press. He kindly came to our house to set it up, promising to come pick it up again when we were finished using it. Our plan was to get all of our kids involved with pressing cider the old fashioned way. Wouldn’t that be fun?! It was a good plan. A beautiful idea, really.

And so we began.

Those pictures make me so happy, I cannot stop giggling. Such precious memories!!! I am going to sit here looking at those for the next few hours. After all, five out of six of those kids are teenagers now, so we are more bored than ever.

Well anyway, it didn’t take long for Anne and I to realize that having our small children press 100 pounds of apples into cider all afternoon was probably a bit unrealistic (you think?). Each child took a turn, then they all headed off to play. Anne and I spend the next few hours pressing cider like super-heros. We got stiff. We got sore. We had a blast. We were a sticky mess. But we had gallons of apple cider by the end of the day.

It was fresh. It was raw. It was the best apple cider ever to be made or consumed on this planet.

If I may, I encourage you to find opportunities to pick fruit with your children. There is something so sweet about this experience. Make cider in an apple press if you ever have a chance. It is so much fun. You will look back at this and the pictures you took whilst pressing apples and you will be so in love with the memories.

In the meantime, I have another homemade apple cider recipe option for you. Just this year, I learned to make apple cider in the crock pot. It is much less work than a cider press, though obviously not nearly as endearing. Still, this recipe turned out delicious. I added no sugar! It’s just apples, water, and cinnamon sticks. Deliciousness!

Homemade Apple Cider in the Crock Pot

Serves: about ½ gallon
Ingredients
  • 10-15 apples, any variety
  • 3 cinnamon sticks
  • 4-6 cups of water
Instructions
  1. Wash, core, and quarter apples.
  2. Place them in a crock pot with the cinnamon sticks.
  3. Add water, enough to fill the crock about ⅔ full of water (but not enough to cover the apples and cinnamon sticks).
  4. Cover and cook on low for 6-8 hours or until the apples are very soft.
  5. Use a potato masher to mash the apples and release the liquid.
  6. Cover and allow the cider to cook on low for another hour.
  7. Strain the chunky liquid through a thin cloth. (I saved the solids and blended them to make apple bread.)
  8. Serve warm or store in the fridge for up to two weeks.

Homemade Apple Cider in the Crock Pot

This recipe isn’t super specific on measurements. I simply fill my crock pot with cored apples, throw in cinnamon sticks, pour in water to fill about 1/2-2/3 full, then let it cook. Your house will smell like the holidays all day long – an added bonus!

Cool Pineapple Cream Dessert – Dairy Free, No Sugar Added – 100% Delicious

I found this recipe and decided to make it on Sunday night for our small group. A couple of my friends who were coming can’t eat dairy, so I figured it would be perfect. I had it whipped together and served into cups by the time friends began arriving. And then, it just sat there, looking ever so inviting and refreshing.

Seeing as this is sort of like ice cream, and seeing as the cups of Cool Pineapple Cream Dessert were just sitting there on the counter while my friends and I waited for the burgers to come off the grill so we could eat, and seeing as my stomach was growling as loud as a mack truck – I interrupted our visiting and said something like, “Forget it. I’m not waiting for a burger. I’m going to try one of these. You guys want one?”

And so it was that three of us gals stood in the kitchen, eating our desserts before dinner even began. Hey, the kids were all outside running around. Nobody even knew. Except that I just ratted us out to all of you. But you’ll never tell, right?

Cool Pineapple Cream Dessert. It’s a dessert, it’s a snack, it’s breakfast, it’s lunch, it’s a cool treat in the evening while you’re sitting outside on the porch. This recipe can be whatever you want or need it to be. Why? Because it’s sweet enough to be a dessert, but it’s healthy enough to be a part of your meal. With only three, whole food ingredients, and no added sugar – this recipe is perfect.

My friends and I decided it tasted a bit like pineapple sherbet from the store. If you want this to taste a little sweeter, simply add a few drops of real maple syrup. I thought it was great without any added sugar. In fact, after I was a good girl and ate my dinner, I went ahead and ate two more cups of this goodness, guilt free. I just couldn’t help myself.

4 cups (give or take) frozen pineapple chunks
1 can (13.5 ounces) chilled coconut milk
1 teaspoon vanilla extract

Blend all ingredients together in a food processor or blender until smooth and creamy. Serve right away. Makes 6-10 servings.

Can other milk options work in this recipe? I don’t see why not. Regular cow milk should work just fine (1 1/2 cups), and I’m guessing almond or rice milk would work – although I don’t have much experience with either of those. Coconut milk gives this extra great nutrients, plus a mixture of pineapple and coconut will help you make believe you are vacationing in Hawaii. Especially if you are eating dessert before dinner, right? Ah the beauty of being a grown up. :)

How I Get a Soda Fix While Avoiding High Fructose Corn Syrup and Extra Sugar

I’m the one who used to be addicted to Pepsi.

I’m the one who drank a minimum of 4-5 Pepsis every day. I’m the one who drank Pepsi for breakfast, Pepsi for a late morning refresher, Pepsi for an afternoon treat, and Pepsi with dinner. I’m the one who bought cases of Pepsi cans and loaded my cart with 2-liter bottles each time I went to the store.

I’m the one who took advantage of free refills at restaurants by filling my cup over and over and over. I’m the one who came up with excuses to go out to eat so I could refill my Pepsi cup over and over and over. I’m the one who had a double standard – not letting my kids drink soda, but going through the drive-through every time I was out so that I could get a large cup of Pepsi, easy on the ice.

I’m the one who finally learned more about eating healthy, decided to make big changes in our diets, started buying free-range chicken and organic lettuce, but still couldn’t give up Pepsi. I’m the one who learned to hate high fructose corn syrup, but still couldn’t give up Pepsi. I’m the one who had to land in the hospital because I hadn’t been taking care of myself before I recognized my need to stop drinking Pepsi and fill myself with nourishment.

So I’m the one who understands others who have a hard time giving up their favorite soda. I’m the one. I totally get it.

There were two main reasons I struggled to give it up:

  1. It tasted good to me. It was a treat!
  2. I love the fizzy burn of soda.

Now that I’m a recovering Pepsi addict (8 years clean!), I have actually come to a point that I don’t miss it any more. That’s a total God thing, and I’m so thankful for this!

But here are two things you should know:

  1. I still love drinks that are a treat.
  2. I still love the fizzy burn of soda.

I love drinking plain water, believe that drinking plain water is super important, and make drinking lots of plain water a high priority every day to keep my body healthy. We should never substitute our water drinking needs for “treat drinks.”

But just like I think food is fun, I think drinks are fun too. It’s fun to sit down with a cup of coffee topped with Chocolate Whipped Cream. It’s fun to sip a Warm Vanilla Soother. It’s fun to treat myself to a glass of refreshing iced tea. It’s fun to drink Creamy Orange Cooler with breakfast.

Enjoy Soda Without the Sugar

For my soda “fix?” Here are some fun treats I like occasionally:

1. Mineral Water With a Little Bit of Juice Added

I’ve found that about 1/4 cup of 100% juice (usually grape) mixed with about 1 1/2 cups of mineral water really hits the spot. It’s mildly sweet, fizzy, and fun.

2. 100% Juice Cans of Soda

I am so pleased that I continue to find more and more varieties of “healthier soda” on the market. It’s not cheap, and it’s still not going to offer us much in the way of nourishment – so we only drink this rarely. But it’s fun to order a case of this type of soda every once in a while for a special treat. It’s fizzy and sweet – but not too sweet because it only contains 100% fruit juice.

3. Flavored Sparkling Water

It has no sugar, and no fruit – so if you’re looking for a sweet drink, this isn’t it. But the FIZZZZZZZZ!! I love the fizz in these. I think it’s fun that there are different flavors like lemon, lime, orange, etc. I just ordered a fun variety pack of Talking Rain Sparkling Water online. I’ll enjoy one every few days as a refreshing treat.
