We spent the weekend in Kansas at a home school basketball tournament for our oldest, Asa. We had a great time! My dad and his wife were able to come join us for the weekend. Asa’s team played very well and ended up taking first in their division! Very fun. More importantly, we were able to focus on and build relationships with wonderful families. We’re so thankful to be a part of this program.

Mini apple pies & bacon – AWESOME combination!
I don’t comment much, but I just had to for that delicious breakfast. Sweet and salty. Mmmmmmm……

Great menu plan! I’m just doing dinners right now with my meal plan. Thanks for the recipe ideas!

Laura, I see on your menu that you’re serving corn. Are you able to get non-GMO corn? If so, what is your source? I haven’t been able to locate any in my area so far, but still searching!
Laura says
I bought organic, non-gmo corn at the farmers market last summer and froze it for this winter! :)
Randi @ ExpressionsOfPerceptions.com says
Woodstock Farms brand!
Leah says
I heard some of Woodstock Farms organic produce is imported from China. What does your packaging say? I’m trying to buy U.S. produce as much as possible.
Randi @ ExpressionsOfPerceptions.com says
Mine says “Product of USA”.
I understand wanting to buy local, but I believe sometimes foreign is better – when it’s concerning gmo’s. I can detox China’s chemical-coated corn. I can’t detox a gmo because gmo proteins become part of your intestinal flora (bacteria) and continue to function, thus altering your intestinal flora indefinitely.

Good menu plan. We have been so busy, I tried to make this one simple yet keep a few favs and add a couple new things to try.

We have been eating out too much lately. It hurts the check book and and I am not happy with the food choices that we have made. To night since my daughter is sick. I will be making homemade chicken noodle soup.

I’m actually menu planning right now (got behind over the weekend). After looking over your menu, I think I’ll add in salmon patties (maybe Asian inspired and serve with a Chinese cole slaw), home made pizza and the mini-apple pie/bacon combo. YUM. Thanks so much!

A weekend trip is always fun and usually exhausting. It is always hard for me to get back in the swing of things, like I need a weekend to recover.

I love to see your meal plans every week! I have just started last month planning out all three meals and it has gone well so far. I am trying a few of your meals this week!

Laura,
Is the name of the homeschool basketball program nationwide? Our oldest only has one year until she is too old for the Upward Basketball program in our area, and we are looking for alternatives that will not compromise our values. Any suggestions from anyone else would be appreciated too! (FYI-We live in Ohio if that helps). Thanks!
Laura says
No, it’s not nation wide, simply a homeschooling group in Kansas that put together a tourney for teams in the midwest. :)

I tried the Italian Pasta Bake yesterday. My family loved it! And we ate it all up for lunch the next day. Thanks for sharing.

How do you make your garlic shrimp pasta?
Laura says
We just melt some butter with garlic powder in a skillet and cook the shrimp in that mixture.
