Many people assume that since I love to cook and since I focus on feeding my family healthy food, I must spend hours and hours in the kitchen. Quite the opposite. Sometimes days go by and I’ve barely found time to pull out a freezer meal and throw down some vegetables. (That’s okay though – that’s what the freezer meals are for!)
As I talked about in the Let’s Do This! eCourse, I have to grab any spare moment I have to try to get ahead in the kitchen. Working ahead is the only way I’m able to keep up with all these big appetites and our full schedules.
After several weeks of barely keeping up because of basketball game travel, colds and flu we’ve been passing around, and just life in general – I finally found some time this morning to get a few extra recipes whipped up. Wow, that felt good!
I got out my cookbook (so handy to flip open and use quickly instead of running back and forth to the computer) and made two batches of Whole Wheat Quick Mix. I made a double batch of Oatmeal Chocolate Chip Cookie dough balls for the freezer. I made two batches of Homemade Instant Oatmeal. I made a big mess. I cleaned it up. The short time it took to make these simple recipes will save me a lot of time during the next couple of weeks.
Hooray for time in the kitchen! It’s therapeutic for me and productive too. :)

I am thankful for blogs like this that help women like myself become Proverbs 31 women. I have been in the workforce for 15 years, and I was quite overwhelmed when I came home to be a homemaker. I am eternally grateful for blogs such as this which have helped me find my way to homemaking sanity and cohesiveness.

I wish I found spending time in the kitchen therapeutic! My 10 year old likes to cook, though. I keep hoping that she’ll eventually take over the process for me. :-)
I loved this idea of gratituesday and used it over on my blog too. http://www.fussell5.blogspot.com
Thanks for sharing this!

I am feeling very thankful today for the two read-aloud times each day that we have finally “gotten back into the groove” with my younger children. They are growing up SO FAST, and as I watch my older sons whisk in and out of the house – going to work and classes – I am so grateful for the sweet time with my youngest ones, cuddled around me and lost in the stories we read.

I need to spend more time in the kitchen. This is the area that I push aside. I use to have baking days and freezer meal prep days, but not so much anymore. Your post reminds me the importance of these days and why I need to get back to into it. Thank you!
Today, I am thankful for “Old Bessie.”

Today I am sick, it is freezing out and I have senior citizens who are making my life miserable at the moment (I am on a board to build a new senior center). But because I believe I know that by the end of the week, it will be much warmer, I will be well and also know that a new building will rise.

This week I am thankful for all the snow we got over the past five days! ;-) We only get a good snow every five years or so, so it was nice, and the two year old loved it!

For my Gratituesday I am thankful for you Laura! You have been such an inspiration and a positive influence for my whole family!! I LOVE reading EVERYTHING you write :) You have been a big influence on my own self esteem, because I know that you are just as normal as me, and I am now more healthy and more health conscience. My entire family has been bettered because of what I’ve learned from you. Thank you so much and may God Bless you and your family.

It’s always so nice to get some food made ahead and know it is there to quickly pull out! I like to have frozen fruitcups in the freezer and monster cookie balls!
