No Longer Fruitless {My Super Fun Shopping Trip This Week}

May 2, 2013 by Laura 19 Comments

If you recall from my menu plan this week, we were pretty low on our supply of fruits and vegetables. Yesterday, Malachi and I had appointments in Lincoln. Therefore, we made our way to two fun stores that we don’t get to go to very often:  Natural Grocers and Traders Joes.

Fact:  I am so in love with food, it’s not even funny. (Don’t worry, Matt. I still love you most.)  Grocery shopping makes me very happy. Spreading my purchases out and gazing at all the food once I get home offers me long moments of joy. (Don’t worry, kids. I do truly love your handsome faces more than I love staring at zucchini.)

I mean, we all knew this about me already, right? But really. Who else gets so excited when putting food into a grocery cart? How many people are energized just by looking at a package of mushrooms and a big bag of broccoli? What 39 year old lady jumps up and down in the produce department when she finds a four-pound carton of strawberries (while sending her 8 year old back to the other shelf to put away the measly 2-pound carton)? Why get 2 pounds when you can get 4 pounds!!?! After all, at my house, they’ll be gone in two days.

Confession:  I didn’t really jump up and down…very high. Although I may have shrieked a little bit (and startled a baby in a cart by the kiwi).

Here’s what I was able to get:

trader_joes

Clementines (5 pounds), strawberries (4 pounds), pears (4 pounds), gold potatoes (4 pounds), sweet potatoes (6 pounds), cherry tomatoes (1 pound), kiwi (2 pounds), sweet peppers (3-pack), apples (3 pounds), avocados (4-pack), broccoli (three bunches), green leaf lettuce (2 heads), baby carrots (2 pounds), mushrooms (1 pound)…and three small zucchini

I just geeked out and did the math on that. I couldn’t resist. That’s around 35 pounds of fruits and vegetables. You know you were tempted to add it up too. Yeah, and some of you are looking at it right now, double-checking my math. Don’t think I can’t see you.

When I got home, after the boys unloaded the van and grocery bags, and exclaimed loudly over what I had brought home – I decided that “who cares what was originally on the menu plan for tonight – we are soooo having Stir-Fry.”

I cooked up some rice, then filled a cast iron skillet with carrots, broccoli, zucchini, mushrooms, and pineapple – along with olive oil, garlic, and sea salt. I would have thrown in some of the sweet peppers, but I was hoarding them for another meal. :)

Fess up:  Does food make you yawn, or do you love food like I do?  (My heart-felt apologies, once again, for startling the baby in the cart by the kiwi.)

When You’re Sick, You Buy Bread

April 9, 2013 by Laura 58 Comments

Stop apologizing. Stop feeling guilty. Stop feeling like you’ve failed.

Are you doing the best you can with the food you’re eating and/or putting on the table for your family? Well then – you should feel very good about that. Are you working hard to serve lots of fruits and veggies? Have you switched to healthy fats like real butter instead of margarine?

Well then, put your zucchini down for just a second and give yourself a pat on the back.

We likely all have room for improvement. Sure, maybe sometimes we compromise on days when truly, we’re just feeling lazy and don’t want to do better. But do you know what I think? I think all of us work really hard and are rarely lazy. I think we are all doing a really good job, working to put healthy food on the table most of the time. I think it’s impossible to be perfect. Therefore, we should appreciate the good steps we’re taking on our real food journey, and should feel great about how far we’ve come!

Too many times when I’m in conversation with people, it seems that they feel like they need to apologize to me because they don’t eat a perfect diet. News flash:  Neither do I. All of you who have read my book know about my compromises and occasional orange-fingered habits (shh!). Our family loves real food and loves to encourage others to eat real food too, because really – it isn’t very hard and you will feel so much better if you do. But don’t get it in your head that because I’m a “real food blogger” I somehow have “arrived” at real food perfection. And please don’t feel bad that you haven’t arrived either.

Did you eat some fruit today? Find a great way to sneak veggies into your kid’s lunch? Put a simple but satisfying real food dinner on the table tonight? Bravo!

In an effort to remind you (again) that my family doesn’t always eat perfectly, I took a picture of my grocery store visit tonight. Our family has been passing around a nasty flu bug for about a week and a half now. I’m tired.  Therefore, I didn’t even have the energy to go “all the way to Wal-mart” where I would have had a few organic produce choices. Nor do I have the energy to make bread or the tiniest desire to stand at the counter to make tortillas. Next week? I’ll probably be all over it. But right now? We’re in survival mode. Taking care of sick kids is more important than grinding flour and kneading bread, don’t you think?

So guess what? Tonight, I bought a loaf of bread. And two packages of tortillas. And some good looking pita pockets. I checked the ingredient lists and found some without high fructose corn syrup or hydrogenated oils. So I bought them. Then I bought a bunch of fruits and veggies because our bodies need them. Man, citrus tastes good right now! Actually, everything fresh tastes good right now.

grocery_store

I know I’ve said all of this before, but I thought it was worth saying again. Keep it simple.  Focus on eating real food. Do the best you can. Feel great about the right choices you are making!

Share!! What is one (or more) right choice you made in the food department today? (No, don’t think about where you “failed”.)  We want to know what you did right. Bet you did great!

Don’t Have Time to Bake Cookies? Make Cookie Bars

March 28, 2013 by Laura 30 Comments

I remember the moment vividly. I had been a mommy for exactly three weeks. Friends were coming from out of town to meet my itty-bitty new baby boy, and I was going to make cookies.

Had I been using half the brain I had left after giving birth, I would have realized that I didn’t need to make cookies at all. I had a newborn baby after all. I’m pretty sure my friends didn’t expect freshly baked cookies when they came to meet my new son.

But, I was using the irrational side of the remainder of my brain which told me I needed to be the “hostess with the mostess.” So, a few weeks after Asa was born, I remember standing in my little kitchen, trying to figure out how in the world I was supposed to find time to make cookies for our friends who were coming over in a few hours. As a brand new mommy, I was just beginning to figure out how to manage the schedule of a nursing baby, cooking meals, doing laundry…and maybe just maybe, finding time to sleep.

Usually when I made cookies, I took the time to scoop cookie dough out onto cookie sheets, baking for 10-12 minutes per pan, then repeating the process several times until all the cookies were made and the dough was used up. Depending on the size of the batch, this process could take quite a while. What would I do if I needed to nurse the baby, and the timer for the cookies went off, and the cookies burned and….

Yeah, I should have just skipped the cookies.

Ah, but then I remembered. Sometimes, when my mom didn’t have time to make round after round of cookies, she would just spread the cookie dough into a 9×13 inch pan, put it into the oven, and walk away. That is exactly what I would do. Instead of cookies, I would make cookie bars for my friends. That would save me time and help me be more flexible so that I didn’t have to keep scooping cookie dough onto cookie sheets if the baby needed me.

I’ve had my Chocolate Chip Cookie recipe memorized since I was a fourth grader, so even with my post-partum brain – I could mix them up quickly. I threw the 9×13 pan of cookie bars into the oven, carried on with my day, and had freshly baked treats to serve my friends when they came over later.

Guess what they said when they arrived? “You did NOT need to bake us cookies! You just had a baby!”

Yeah well. Some things never change. Apparently, I just can’t not feed people. ;)

Moms of newborns, what have you learned from this little story? Do not make cookies for your friends. It is highly unnecessary.

Everyone else, if you are making cookies and find yourself in a bit of a time crunch, simply spread your cookie dough into a 9×13 inch baking pan, and bake them into bars in a 350° oven for 20-30 minutes or until they are golden brown.

Here is my all time favorite Chocolate Chip Cookie recipe. It makes awesome cookie bars, which I proved in June of 1997, right after becoming a mommy.

cookie_bars

For the record, in case you were worried, this picture is from 2013. My son may be 15 1/2, but the cookies on this plate are fresh. Or at least they were a few days ago. Now the plate is empty. Go figure.

What hard lessons do you remember learning when you had a newborn?

Cooking Ahead – I Now Have Snacks!

March 24, 2013 by Laura 24 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

I know it’s not entirely true, but I feel like I have been away from home for the entire month of March.

Asa had a basketball tournament the first weekend of the month. We were home for a few days, then we went to Branson and were gone for six days. The end of this week we are going to Kansas City for LTC. Phew! It’s hard to get ahead when you can’t even catch up. And it’s hard to catch up when you’re not even home. And it’s hard to be home when…well, when you are traveling. (Profound.)

Anyway, Saturday I was home. Yay for me! I had big kitchen plans. I decided that I wasn’t going to go anywhere all day, that I certainly wasn’t going to change out of my sweat pants, and that I would get caught up on some work, and spend several hours cooking. I’m so glad I did! I got my email inbox down to 82 (It had made its way up to well over 200 last week) and spent four hours cooking and baking. I now have some healthy convenience foods in the freezer, as well as several snack items that might just last two whole days around here.

First, I mixed up a double batch of Whole Wheat Butterhorns. While the dough was rising, I got my food processor whirling as I made three batches of Homemade Peanut Butter.

peanut_butter

I put two jars of peanut butter into the fridge to have ready for later. Then I used one batch to make Healthier Rice Crispy Treats and Mudballs (thinking of my awesome cousin Jayme the whole time, since she’s the one who gave me that recipe).

cooking_ahead

I should also mention that the day before, I had made 80 Chicken Fried Steak Strips.
I had the boys help me take them off the cookie sheets and put them into freezer bags for
easy meals in the future.
I love getting that mess out of the way in big batches!

I then made two dozen eggs worth of Easy Breakfast Casserole. I put the 9×13 dish in the freezer to thaw and bake another day. I baked the two round dishes for our lunch.

egg_casseroles_1

While they were baking, I began shaping 64 Butterhorns. I baked several to go with our egg casseroles for lunch – yum! – then shaped and froze the remaining butterhorns. I love having these in the freezer to pull out, thaw, and bake when I need them for company!

butterhorns

I froze the shaped rolls on cookie sheets,
then popped them off the next day and put them into freezer bags.

Last, I made a double batch of Homemade Poptarts. We ate some of them for breakfast on Sunday morning, and the rest went into the freezer. These are so good when warmed in the toaster oven, served with fruit and a glass of milk!

poptarts

I should also mention that I roasted two chickens and made broth for the freezer. It’s always great to have homemade chicken broth on hand!

As you can imagine, my wheat grinder, oven, and dishwasher got quite a workout that day! And I slept really well that night. :)

What’s your favorite food to have on hand for snacks or easy meals?

Practicing My “Oh, For Real” Tips and Tricks

March 14, 2013 by Laura 10 Comments

Ever read the acknowledgements in the front of a parenting book that say something like, “A big thanks to my sister, who took care of my kids while I was writing this book.” Get the irony there? The author can’t take care of her kids…while she’s writing a parenting book. Hahaha…makes total sense, and cracks me up.

But, I’ve got to admit:  The last few weeks while I was finishing Oh, For Real: Real Food, Real Family, Real Easy – I certainly didn’t do everything I was describing in the book. We did continue to eat real food. It was all homemade. I totally drew the line at ordering pizza when I was writing about avoiding take-out. But I was very much squeaking by each day, not doing anything to prepare food ahead of time to make life easier. I should have just stopped for a few hours and spent some much needed time putting healthy convenience food into the freezer! But I was determined to finish the book, even if it meant that I was scrambling eggs or asking the kids to cook more often than normal.

We didn’t starve, we didn’t make compromises, and we all stayed healthy – even if I was fumbling around with last minute Creamy Mac and Cheese and frozen peas more often than is typical. All that to say – with the book finished and at the printer, I have had so much fun this week in the kitchen – practicing what I had written about, using many of the recipes I had shared in the book, enjoying the methods that make life so much easier each day as we work to eat healthy, whole foods!

Here’s another bit of irony: While I was making each of these foods this week, I was SO wishing I had my book right in front of me! (I didn’t get my proof copy until I had all of this food already made.)  Without the book, I kept having to run to the computer to look at the recipes on my site, double checking ingredients and measurements. It wasn’t the end of the world – especially if Matt was sitting at the computer because that is, of course, always a convenient time to flirt.

Did I just write that out loud?  {blush}

Ummm, but anyway. It sure is nice to have the book in my kitchen now. And I’ll just have to find other opportunities to flirt. (Goodness, now I’m all flustered. I should really just move on and start talking about my pizza crust. {cough}

Yes indeed, I made a double batch of Whole Wheat Pizza Crust, which will be wonderful for the boys to take out of the freezer and make individual pizzas in the toaster oven.

pizza_crust

I also made a double batch of Whole Wheat Quick Mix.

quick_mix

In preparation for our trip, I made Chewy Granola Bars, Breakfast Cookies, and Peanut Butter Chocolate Chip Muffins (recipe coming soon).

food_for_trip

I had a blast! I’m talking about the cooking session – not the flirting. I think. Oh, never mind. ;)

If you’re interested, you can read my thoughts on The Great Marriage Flirt here.

Done any flirting extra cooking lately?

Can You Use Coconut Oil in Whole Wheat Quick Mix?

February 24, 2013 by Laura 14 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

I’ve had several emails and comments since I posted both the Whole Wheat Quick Mix recipe and the Tropical Traditions buy one get one free (with free shipping) coconut oil deal. Many are wondering:  Can you use coconut oil instead of palm shortening in the quick mix?

Yes, you sure can!

While I really, really love Palm Shortening and do prefer it in this recipe, Coconut Oil does work just as well and is just as healthy if not moreso. Plus, the Expeller Pressed Coconut Oil that is on sale at Tropical Traditions right now is flavorless, making it perfect for a recipe like Quick Mix.

So…if you haven’t taken advantage of the BOGO coconut oil with free shipping at Tropical Traditions, I say “go for it!” Then make yourself some Whole Wheat Quick Mix so that you’ll be all set for the recipes I’m sharing here and in my upcoming book!

coconut_oil

Tropical Traditions has their Expeller Pressed Coconut Oil (flavorless) on sale again for $12.50 for two 16 ounce jars. Plus, they are offering free shipping (code 25213) with a minimum $16 order.

A Fresh Tablecloth Makes Everything Better

February 13, 2013 by Laura 40 Comments

Really? Does a fresh, clean tablecloth really make everything better?

It doesn’t heal you when you’re sick. It doesn’t take away life’s frustrations and grief. It doesn’t make the “to-do” list go away or suddenly give you an empty laundry hamper. It certainly won’t make sure your bills are paid.

But every single time I get our table cleaned off, our kitchen counters wiped down, the leftovers put away, the dishwasher humming – and I lay down a clean, fresh tablecloth – I suddenly feel as though I can breathe again. I find it extremely refreshing.

tablecloth

It probably sounds silly, simplistic, and maybe even a tiny bit ridiculous to those who could really care less about a tablecloth. But I find that a clean tablecloth gives me a fresh start – even if it’s just a fresh start to the morning or the afternoon. The next time I walk into the kitchen to serve my family, I can look at the table and say, “Aaaaahhhhhhhh”, instead of looking at it with discouragement because it is covered with school books, crumbs, maple syrup drippings, dirty dishes, and a variety of Lego people or paper airplanes. I’m all about letting our house have a “lived in” look, because indeed, we do very much live here. But it is no fun to cook a meal around a huge mess.

When I begin with a less cluttered kitchen, I can then cheerfully make a new mess of the kitchen, cook up a storm, dirty up pots and pans, serve a meal, watch the kids dribble gravy or ketchup or cheesy pasta off of their plates and onto the table.

And it’s all okay. Because a fresh tablecloth will make everything better. :)

Are you a tablecloth user? Do you find that you can breathe easier when your table is all cleaned off?

Vanilla Shake Time!

Are you in the process of making Homemade Vanilla Extract, like I am? Have you shooked, shaken, shaked, shooken…um…have you given your homemade vanilla a shake in a while?

If not, might I encourage you to get out the vanilla that you are brewing and give it a good shake? It’s all a part of the lovely extracting process.

There, now wasn’t that fun?

Carry on.

And if you aren’t making Homemade Vanilla, I highly encourage you to look into it following these very simple directions on how to make homemade vanilla extract!  It’s super easy and very fun. Then you, too, can say that you got your vanilla shaked, shooken…{cough}…that you shook your vanilla. :)

Friday Food

February 1, 2013 by Laura 9 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

I hope what you’ve learned by having a sneak peek at all of our food this week is that I really try to keep our meals simple. I don’t have time for fancy meals – but I do love to take time to make our food healthy, well balanced, yummy, and fun!

Today’s menu was:

Friday, February 1
Giant breakfast cookies, apples
Taco corn fritters, fruit smoothies
Homemade pizza, fruit

This morning, I cheated and spread the Breakfast Cookies batter into a 9×13 pan to bake. The entire pan was empty when we finished breakfast, plus we had big glasses of milk and clementines.

friday_1

Our Taco corn fritters at lunch were a huge hit. Everytime Matt or one of the boys came into the kitchen to see what I was making, they each said, “Corn fritters?! We haven’t had those for a while.” As in – every single one of them said this to me at a different time as they came into the kitchen. It totally cracked me up. And I guess I learned that I need to make these more often. There were only two left on the platter when we were done. Instead of making fruit smoothies, I simply got out a bowl of baby carrots and some pineapple and called it good.

friday_2

Between meals, we spent the day wrapping up our school work lists for the week, putting final touches on research papers, and preparing our house for guests. This weekend, our church is hosting a youth rally for middle and high school kids. Youth groups came from all over Nebraska (and beyond) for the event. We’ll be housing 6-8 middle school boys tonight and tomorrow night. Soooo, while I didn’t feel that we necessarily needed to have our house spotless for a bunch of middle school boys who would likely not care if I had a little dust or dirt in the corners of a room, we did need to clean up a little bit and get beds and mattresses ready. :)  Our boys were a huge help.  Love them.

Before taking Asa and Justus to the rally tonight, I made Homemade Pizzas. I love that we still have some peppers in our freezer from the garden.

friday_3

And now I will think about snacks for all those boys when they get here tonight. I wonder how long it will be before they find the ping-pong table. My guess is that it will get quite a work-out this weekend. :)

Hope your weekend is off to a good start!

P.S. I don’t think I’ll plan to share our Saturday food with you. Why? Because it will be very, very boring. We have quite a few leftovers, so just picture us eating everything else you’ve seen pictured this week – just warmed up a second time. :)

Thursday’s Meals – Kid Friendly Food!

January 31, 2013 by Laura 12 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

I didn’t really think of how “kid friendly” everything was when I was planning today’s meals, but everything on the list made my boys pretty excited!

Thursday, January 31
Simple sourdough biscuits, fruit
Homemade corn dogs, baby carrots, fruit
Popcorn chicken, homemade fries, peas

Probably the only thing that would have made them happier was if I would have made gravy to go with the biscuits. :)

I didn’t make very many biscuits this morning, but they were big and filling. I served the last of our California oranges.  {sniff}  Mmm, those were good!

thursday_1

It was super cold today, and I was having a hard time warming up, so I decided to make Hot Cocoa to go with our breakfast. It was perfect with the biscuits!

thursday_2

To make our Homemade Corn Dogs at lunchtime, I pulled out Elias’ Snacks on a Stick Maker like I had used on Monday for our pancakes. This time though, I went “stickless”. It was easier and quicker that way. And since we ended up making 40 corndogs (20 hotdogs cut in half), that saved a lot of sticks! (We’ve been reusing them, but still.)

thursday_3

Matt and the boys got me an Oster Deep Fryer for Christmas, which we used at dinner tonight. We are LOVING it!! Our french fries and chicken nuggets are soooo yummy. And we eat them guilt free. How about that? Fried food that is not bad for you! I use  Expeller Pressed Coconut Oil, which doesn’t go rancid at high temperatures and is a very healthy oil.

While we love this sort of meal, it is a little “higher maintenence”. I made several rounds of chicken, several rounds of fries, and one pan of peas. Everyone just ate fries and chicken as it came out of the frier.

thursday_4

I do not even want to tell you how many potatoes my family ate tonight. Or chickens. I will admit to eating dozens of peas though. :)

thursday_5

It was fun to treat the kids to so many of their favorites today. (It was also very fun to put them to work scrubbing potatoes – a job they don’t mind doing when they know there are french fries coming!)  I love making family-friendly meals in a healthy way. No need to deprive your family of their favorites – just make them with healthy ingredients!

What foods did you make today? Did you follow a meal plan?  I have to admit – blogging our menu this week has really kept me on track with following our plan. So thanks!! My kids especially thank you for the fries. :)
