Well, after feeding the soccer team last week, we’re back to just the six of us for most of this week. I’ve gotta say that while I LOVED feeding the team…I’m tired. :) I’m kinda glad to be back to just feeding six people three times a day (okay five times a day, who am I kidding?).
My tomatoes are ripening at lightening speed even though I thought they’d never be ready. Just a few days ago I said to Matt, “Do you think the tomatoes will EVER turn red?!” And now ALL the tomatoes are turning red. At the same time. And they’re big.
It’s awesome really…just keeping me very busy making tomato sauce and salsa. That’s what this time of year is though…busy!

Thank you for mentioning making tomato sauce. I will be sure to grab some tomatoes at the farmer’s market for that very purpose. It is definitely a staple and great to keep on hand.

My kids and I spent all day Saturday making tomato sauce. We have 50 tomato plants and are up to our ears in them :)
Lanise says
What kind of tomato plants do you use for your canning tomatoes? Do you use the same kind for all your canned tomato products?
Laura says
I plant a variety of tomatoes, heirloom and hybrid, whatever I can get my hands on. I love romas, but have a hard time finding them for some reason. I have a lot of brandywine this year, which I love. When I make tomato sauce for canning, I use a big mixture of all of them! As they ripen, I just put them all together into sauce. Works great!

I am up to my eyeballs in tomatoes too. Just finished up some BBQ sauce, ketchup, salsa, taco sauce, tomato soup, tomato juice and now need more tomatoes to ripen for spaghetti sauce, tomato sauce and diced tomatoes. I think that will do for the winter. :)
I love reading your meal plans for the week I get so inspired to actually cook!

I’m really enjoying following your menus. My children are actually thinking I’M a good cook now! I am just thankful to be learning some life skills, and feeding my family more healthy things. Would you ever consider posting your shopping list also for those of us who need to borrow brains? Thanks.
Laura says
I may try to do that sometime, although I shop so differently (using local farms and health food coops) I don’t usually use a grocery/shopping list. Hmm…
