Just so ya know, when you’re making Zucchini Bread on a Sunday morning for guests,
and you realize that you don’t have time to bake said Zucchini Bread,
you can nix the bread idea, turn your oven up to 400°,
put your batter into muffin tins and bake for 20 minutes.
This tip works on Monday through Saturday too, I’m pretty sure.
Thanksgiving is going to look a little bit different for our family this year. Matt has to work all day, which means that we won’t be traveling to see family Thursday. It’ll just be the boys and me for much of the day…so instead of making a big turkey dinner, I think we’ve decided to make homemade pizza and other fun snacks, put up our Christmas tree and play games. Now that I’m over my initial disappointment, I’m actually looking forward to a fun day with the boys. Matt’s off on Saturday, so we’ll have a big meal and some great family time then…can’t wait!
Tonight, we’re feeding dinner to the YC Ladies Basketball Team. I LOVE doing this. They came over yesterday for Sloppy Joes…tonight it’ll be Chicken Noodle Soup. Since putting together the Gluten Free and Good For You ebook with my friend Kim, I have become so much more aware of how I cook. So let me just say…GLUTEN ALERT! Between making eight loaves of bread, a triple batch of noodles and four pie crusts…there’s more than just a little bit of flour flying in my kitchen. Wanna see what a triple batch of homemade noodles looks like?
Why yes I did cut some of them up and down and some of them back and forth
and some of them diagonally. It’s how I keep life interesting.
You always knew I was a wild one.

I think your Thanksgiving sounds really pleasant…minus the whole husband having to work thing. Bummer! I love spending time with family but the idea of having a low key day sounds like it will be lots of fun! Hope you all have a Happy Thanksgiving!

So I could not wait the whole 6 months to check your blog – I am still in India and we will not have Thanksgiving the traditional way either. My husband will be away and the kids have school – so I was feeling rather down about it. But I thought up a fun idea that has picked up my spirits- the boys and I will have a Charlie Brown Thanksgiving – watch the video, eat toast, popcorn, icecream and pretzels (we may have to skip the jelly beans as I have not seen them here :-). We are vegetarian and this is a vegetarian state – so that works fine for us (minus the low nutrition value of course :-)

curious…why do you end up feeding the york bball team?
Laura says
Mainly we feed the York College teams because we love it. :) During soccer season we feed the soccer teams a few times since they come to town before the cafeteria opens. It helps the soccer budget a ton if they just reimburse us for grocery costs instead of paying to eat out all week. Then, during the school year, we feed the team a time or two just because we love them and want to give them a home cooked meal.
We fed the bball teams most recently because they had to stay around during the Tgiving holiday and again, the cafeteria was closed. Several people at church signed up to take a turn feeding them.
I know it sounds crazy, but we just love feeding them! It’s such a great way to create good relationships with the college students!
