My 10 Favorite Real Food Pre-Packaged Convenience Foods

Can food be pre-packaged, convenient, tasty, and healthy – all at the same time? Why yes, as a matter of fact it can. Is it possible to fill your shopping cart with foods that are nourishing, delicious, and guilt free? Why yes, as a matter of fact it is. And finally, does anyone know where I might have put my favorite pen? Eh, that’s okay. I figured it was worth a shot to ask.

There are many healthy foods that take little to no time to prepare. Today as I was putting lunch on the table and asking the boys to pull out strawberries, carrots, peppers, and pickles from the fridge to go with our meal, I was once again struck by how easy it is to put healthy foods on the table.

Stop believing the myth that eating healthy food is difficult and time consuming! And seriously, if you come across my missing pen, would you please let me know?

10 Real Food Pre-Packaged Convenience Foods

There are dozens of foods you can buy that are full of nutrition, just because they were born that way. You might need to take the time to peel it, wash it, or slice it – but have you ever timed yourself opening a box of cookies, then working like mad to get the plastic pouch inside to tear open? In the meantime, you really should have just sliced a cucumber.

Here are 10 great ideas for real food pre-packaged convenience:

1. Mini Sweet Peppers

Oh my goodness, have you tried these? They are deliciously sweet, perfectly crunchy, and wonderful all by themselves or in a salad. We take these on the road trips, munch on them for snacks, add them to our lunch plates, and argue about which color tastes the sweetest. I can’t get enough of these.

2. Fresh Berries

Without a doubt, you can not compete with fresh berries picked and eaten right out of the garden. But during the times those are not available, we look for the best deals on strawberries, blueberries, blackberries, and raspberries at the store. Wash ’em and eat ’em. It doesn’t get any easier than pulling out berries for a snack or a side dish with a meal.

3. Grape or Cherry Tomatoes

Again, these are best fresh out of the garden. But since ours won’t be ready for another month or two, buying these pre-packaged works great for us.

 4. Baby Carrots

There is some controversy over buying packaged baby carrots because of the information many have heard about baby carrots being soaked in chlorine before being packaged. Read this info and do with it what you wish. As for me, sometimes buying a package of baby carrots is a huge help in my effort to provide my family with extra veggies during a meal.

5. Mixed Greens

Think making salad is too time consuming? Oh for Pete’s sake. Just buy a container of mixed greens and throw it on the table. It’s pre-washed and ready to eat. We go through a couple packs of these each week.

6. Pickles

Open a jar, put it on the table, your work here is done.

 7. Cheese Sticks

These can be a little pricey compared to buying a hunk of cheese and slicing it yourself. But when we’re talking about pre-packaged convenience foods, this one is a winner. Cheese is great for an on-the-go protein snack. Yay cheese.

8. Larabars

Yes, you can made these homemade. I’ve done it myself many times. But sometimes my family needs something to stuff in a pocket to eat in between soccer games. I watch for great sales and coupons through Amazon or Vitacost, and buy these by the case. They contain fruit and nuts only – a great healthy snack.

9. Fruit Leather

Again, I make this homemade sometimes too. But for a fun treat, I like getting pre-packaged fruit leather when I find it on sale.

10. Raisins

Buy them by the bag or in individual serving sized boxes. This pre-packaged convenience food is awesome for snacking. And really, aren’t those tiny little boxes just the cutest?

What else? Oh, I could list tons. Peanuts, cashews, almonds, bananas, apples, grapes, oranges – think of all the pre-packaged real foods there are to pick from! Never again can we ever claim that healthy eating is difficult. And never again should anyone carry my favorite pen out of my office, put it down, and forget about it.

Twas a Bad Week for Matt and Feet

It all began on Monday when I made burritos.

After lunch, there were a couple of burritos left over, which the boys grabbed to snack on in the afternoon. In the evening before we left for soccer games, Malachi carried his burrito plate back into the kitchen (from wherever in the house he had taken it?!) announcing, “Don’t anybody eat the rest of my burrito. I had my bare feet on it.”

Um. Okay. Feeling it was better not to know, I didn’t ask details as to how his feet made their way to his burrito. And besides, in this household, nothing much surprises me anymore.

In our haste, we left the half eaten burrito on the plate on the countertop and ran out the door to play some soccer. After we got home that night, we warmed up our dinner, ate, washed dishes, and got ready for bed. An empty plate sat on the countertop, so I called the boys in to see who it belonged to so that he could rinse it and put it into the dishwasher. Malachi quickly recognized it to be his plate from earlier. The problem was, it was empty. What had happened to the burrito?

“Dad,” Malachi hollered, “Did you eat the burrito on my plate?” Matt replied, “Yep, I saw it sitting there and figured it was free game.” The boys and I cringed and giggled at the same time. Apparently we’d all forgotten that Dad hadn’t been in the house at the time of the foot on the burrito announcement. Living in a house full of boys, Matt wasn’t really phased by what he had done. After all, what’s a little toe jam on a tortilla, right? Leave it to Matt to be a good sport. And really. What was he going to do? The foot-flavored burrito had already been swallowed.

The next day, Matt woke up alive and well, despite having ingested his son’s foot funk the night before. He proceeded with his day as usual, doing work on some rental properties and mowing lawns. His afternoon ended with a job trimming hedges for someone, then picking up firewood. Ready to head home, he stepped through some debris to make his way back to his truck.

Nasty paragraph alert: 

As he stepped onto what he thought to be a pile of leaves, his foot came down hard directly onto a hidden piece of wood with two nails sticking up. The nails went through his shoe and into his foot. In serious pain, he worked to pull out the offending wood and nails. (This is the part of the story where I have to stop, breathe, and fan my face.)

Somehow, he drove himself home. Through the window in my office, I saw him hopping on his good foot and knew immediately something was wrong. After all, hopping on one foot is not usually how Matt comes home from working on a project. Usually he skips or trots.  (That was me trying to divert attention away from the pain of the situation. Did it work?)

I met Matt at the door, learned what had happened, helped him get cleaned up, and tried not to pass out. Blood, I can handle. Seeing my husband in pain and looking at nail holes in his foot just about did me in.

A call to the ER, salt water soaks, herbal poultices, clay, wrapping, propping – these wounds are keeping us busy. The pain seems to be a tiny bit less intense by now, thankfully, especially if he keeps his foot propped up on pillows. We went to the clinic to have it checked out today, and it seems that we’re on the right track for proper healing.

At first he was like, “You’re actually going to unwrap it and show it to everyone?”
Um, no. I’m pretty sure my readers don’t want to see the actual bottom of the foot.
He was kind enough to smile for the camera.

Our boys are amazing help, taking on much of what Matt would be doing today if he could be up and around. We are so proud of them and thankful for them.

As for me? I recognize my limits, so I’ve decided to drop kick the rest of my plans to do more freezer cooking this week. I figured you all could carry on the challenge without me, right? I’m thankful I at least got half-way through the challenge. And I’m incredibly grateful for all the food that is in the freezer right now from past challenges. Without it, I would have been struggling to put food on the table today. As it was, I simply pulled out some food I’d already made, warmed it up, and threw it on the table.

Pray for us, if you will. This could be so much worse, and we’re very thankful that it really is such a minor injury. But prayers for healing for Matt and extra strength for me as I pick up slack is appreciated.

I would say that Matt is tough as nails, but that just doesn’t seem as fitting in this situation. He is a tough one though. We’ll have him back on both feet in no time.

As for the burritos, I’m pretty sure Matt will ask a few more questions before finishing off leftovers on one of the kids’ plates in the future. :)

Quick and Easy Crepes

Welcome to a typical crepe conversation with my children:

Boy: What’s for breakfast?
Mom: Crepes.
Boy:  Is that it?
Mom:  Isn’t that enough?
Boy:  I’m gonna still be hungry.
Mom:  What’s new?
Boy:  Can’t we have something else too? I just don’t get full on grapes.

Every time.  You’d think I’d recognize the difficulty by now in hearing the difference between the words grape and crepe, but they rhyme and confuse the children. Then they confuse the mother. And then the entire conversation is confusing.

Crepes.  They are very different than grapes. They are easy, filling, and very tasty. My recipe has three simple, whole food ingredients. Crepes make a great breakfast, lunch, snack, or light dinner. We love crepes! (And grapes. But as I said before, we’re talking about crepes, not grapes. Okedokee.)

Ingredients
  • 6 eggs
  • 3 Tablespoons heavy whipping cream
  • 100% fruit jelly
Instructions
  1. In a bowl, whisk together the eggs and cream until well combined.
  2. Pour about ¼ cup of mixture into a well greased, hot skillet.
  3. I find that medium/high heat works best.
  4. Cook the crepe until it begins to bubble and thicken, then flip it to cook the reverse side until lightly browned.
  5. Remove from heat.
  6. Spread a little jelly on one flat side of the crepe, roll it up, and serve.
  7. Repeat process until all crepes have been cooked.
  8. Makes about 10 small crepes.

I usually double or triple this recipe to fill my family. Yes, sometimes we actually go through 18 eggs in one sitting. And sometimes we also eat grapes. But not usually at the same time as crepes. Although I should totally do that sometime – just to throw everyone off. Hmmm….

Gratituesday: Brother Teaching Brother

You know how your two year old can “help” you by bringing you diapers for the baby, putting away a few toys, and stirring a plastic spoon around in some soapy water as a way to “wash dishes?” Some of those little fella jobs are really just “here let me keep you busy so that I can keep you from painting the cat with plaster of Paris” right? But it also teaches responsibility and a servant heart. So moms of toddlers and preschoolers:  Keep teaching your kids to work and serve and help!!!

As tough as it is to let your little ones help you, especially knowing that you could do it forty times faster by yourself, I’m here to tell you that it is so very worth your extra effort! Even when our oldest was 7, I could tell a huge difference in his ability to really help ease my work load. Now that I’ve got kids 9, 12, 14, and 16? Well, I haven’t scrubbed a toilet in years. We put these kids to work, and it’s a huge benefit to our household.

My favorite thing from today is this:  Not only were my kids working hard, they were teaching each other. Asa (16) has been our expert guacamole whipper-upper for several years. I asked him to make some to go with our lunch today. Then I asked him to pull Elias (12) in with him and teach him how to make it. It was awesome. They did the work from start to finish, and now, thanks to Asa, Elias also knows how to make this great dip.

We devoured this Spicy Avocado Dip with our burritos today. So good!

This afternoon, the boys pulled out our Risk game. I loved hearing Asa and Justus (14) teach our younger boys to play. Even Malachi (9) was figuring it out.

Teaching your kids new skills is great. Letting older kids teach younger kids? Even better.  I’m thankful for hearing my olders teach my youngers today. The conversation was sweet, the arguments were few, and we all got to eat awesome guac. Happy day. :)

Meatless Freezer Cooking: Bean and Cheese Burritos and Meatless Spaghetti Pie

One big mess, four awesome meals. It was a great morning!

Since we’re finished with our official school year, I got a couple boys involved in today’s freezer cooking. Elias (12) learned to make Meatless Spaghetti Pie (recipe in {Healthy} Make-Ahead Meals and Snacks eBook). He chose to use shell-shaped pasta, because when you’re the cook, you earn the privilege of picking from penne, spiral, shell, elbow….

Am I the only one who thinks picking the pasta shape is a fun activity? Maybe I just don’t get out enough.  Well, anyway, Elias picked shell noodles and did a great job putting together the Meatless Spaghetti Pies.

In the meantime, I made a triple batch of Whole Wheat Tortillas for Bean and Cheese Burritos. I then put together 23 burritos. Because we eat so much at our house, these burritos will only last us two meals. But, I now have 11 burritos in the freezer to pull out sometime in the next few weeks for an easy meal!

I can roll tortillas faster than my skillet can cook tortillas,
so I just start laying them out all over the counter while they wait for their turn to be cooked.

Hey, would you like to hear an obvious discovery I made this morning? When you’re making meatless meals, you don’t have to worry about thawing out meat before you cook. Sometimes my brilliance shocks you, doesn’t it?  Not only is this meatless thing a money saver, it’s also a time saver. But I still love my beef.

After the mess was cleaned up, we ended up with 23 burritos and 2 spaghetti pies. If I add plenty of sides to those pies, I can make it work to serve one tonight and freeze one for another day.

Art Supplies, Science Experiment Books – So Many Ideas to Keep the Kid’s Summer Fun and Productive

Preparing For a Great Summer With Your FamilyIf I let them, my younger boys would whittle away the hours and have little to show for it. They’d dink around, goof off, waste time, and then get bored and pick on each other. My boys are fun and creative, but they still need some sort of structure during their summer days.

This week is our first official week of summer break. June and July will be quite full with church camps, family reunions, swimming, and time with cousins. The month of May is typically our time to play catch up and do some creative learning that we don’t always have time for during our August-April school year. So right now? We’re filling our boys’ days with fun productivity.

You might remember the list I posted a few weeks ago, sharing some fun ideas we plan to use to keep our boys busy:

  • Play card and board games
  • Create more music and videos
  • Play games outside
  • Learn more card tricks
  • Learn more cooking/kitchen skills
  • Get together with friends and cousins
  • Help Dad with home improvement projects
  • Read books (maybe offer a summer reading challenge?)
  • Clean out bedroom, boxing up toys they no longer play with
  • Work through a science experiment book
  • Clean out the basement (who knows what treasures will be discovered!)
  • Learn to make homemade ice cream
  • Swim often and improve water skills (while getting Vitamin D – woot!)

In addition, here are some practical lessons we’re teaching the boys this month:

  • Household chores they haven’t learned yet. Summer break is a great time to focus on teaching cleaning skills like mopping, washing windows, or anything we haven’t taken the time to show them how to do. The boys are, of course, thrilled to learn these skills. :)
  • Outdoor games. The boys received a badminton set for Christmas and can now finally set it up and use it.
  • Music lessons. A couple of my boys have shown interest in learning to play the guitar. I’m going to look into this more seriously this summer.
  • Art. I just found this Darice 80-Piece Deluxe Art Set for just $18.21, and I snatched it up. My boys really do enjoy learning to create art – I just need to take time to sit down with them and work on it.

Regarding the science experiment books in the list above, when I mentioned this idea to my boys, they got pretty excited. Now to just find a book that will teach them and be fun. I found the TIME For Kids Big Book of Science Experiments: A step-by-step guide and thought it looked great. Anyone else have good suggestions for this?

Menu Plan for the Week

Excited as I am for the Meatless Meals Freezer Cooking Challenge, I’ve not done one thing to prepare for it. We’ve been at soccer games all weekend long with not an extra moment to spare in the kitchen. In fact, I’m barely scraping meals together. Sunday lunch today was none other than tuna salad on tortillas (with mixed greens stuffed in), eaten in the five minutes we had between church and a soccer game. Shin guards and cleats were flying, let me tell you.

My goal is to (sleep and) hit the challenge hard on Monday morning, then just do a little at a time throughout the week. Since the plan is to cook for this week’s meals along with making extra for the freezer, you’ll see many of the challenge meals sprinkled throughout my menu plan.

The Plan ~ Getting Ready for Freezer Cooking, Week Four – Meatless Meals

I love meat.  My body doesn’t function well when I go too long (you know, like an entire day and a half) without eating animal protein. Beyond that, sometimes, fish or chicken just isn’t enough. There are days my body needs beef and ain’t nothin’ else gonna cut it. I think this has something to do with my tendency to become anemic and the iron red meat provides. I truly do not feel well when I’m not eating enough beef, and on the contrary, I feel very, very well and much more energetic when I am eating plenty of cow.

Therefore, when some of you suggested that we do a freezer challenge that consisted entirely of meatless meals, I was like, “What? Why would we do that? Don’t you know that meatless meals don’t have any meat in them?”

Then, I (had a hamburger) and realized that these lovely ladies who made the meatless suggestion were actually brilliant. Meatless meals are a huge money saver, and good gravy – it’s not like I need meat at every meal. I just need it at least once every day. Meatless meals rock.  Let’s make some for the freezer, shall we?

We’ve taken a couple weeks off from freezer cooking challenges, and I don’t know about you, but I’m excited to hit it again. We’ve slowly been working our way through the {beef, chicken, and breakfast} meals I put into the freezer during the March/April challenges. The meatless freezer meal ideas I came up with are going to go together quickly and make for some super easy lunches on busy days during the next few weeks.

Here’s what is so great about the freezer cooking I plan to do:  I’ll be making a double batch of each recipe. That way, I can serve one portion of it to my family the very day I make it. Then, I’ll freeze the other portion to pull out another day. Work once, eat twice – it’s my favorite way to get ahead!

The Grocery List

  • 32 ounces whole grain spaghetti noodles
  • 5 cups whole grain pasta – any shape
  • 1/2 cup butter
  • 4 eggs
  • 4 cups (32 ounces) ricotta cheese
  • 1 cup (16 ounces) parmesan cheese
  • 8 cups (64 ounces) spaghetti sauce
  • 4 cups shredded mozzarella cheese
  • 6 1/2 cups shredded cheddar cheese
  • 6 cups whole milk
  • 6 cups cooked black or pinto beans (or a combination of both)
  • 2 cups (16 ounces) salsa
  • 16-20 whole wheat tortillas (we like homemade tortillas)
  • 10 cups whole wheat flour
  • 9 teaspoons yeast
  • 3-4 cups pizza sauce (depending on how saucy you want your calzones)
  • veggies, olives, and other fillings for calzones
  • sea salt and pepper
