Coconut Flour Cheddar Drop Biscuits

At a recent youth event, my friend Lisa mentioned something about her Coconut Flour Cheese Biscuits. I immediately dropped my plate and fork, leaped over the couch to the other side of the room and tackled her onto the floor, begging her to please share her recipe.

Of course you know I’m kidding.

Her name is really Louanne.

Okay no, I’m kidding again.

Her name really is Lisa and when she mentioned her Coconut Flour Cheese Biscuits I didn’t actually drop anything or leap over anything or tackle her. I’m not that crazy.

Yes, kidding again. You all know I’m crazy.

But still, she was nice enough to give me her recipe without all the drama. The drama is what I felt inside when I heard that she had a new great coconut flour recipe to offer.

So here, without any shoulder shaking, leg grabbing or tearful pleading is my friend Lisa’s awesome recipe:

Coconut Flour Cheddar Drop BiscuitsYum

¼ cup coconut oil or butter, melted
1/3 cup sifted coconut flour
4 eggs
¼ teaspoon salt
¼ teaspoon onion powder
¼ teaspoon baking powder
½ cup sharp cheddar cheese, shredded

Blend together eggs, coconut oil or butter, salt, and onion powder. Combine coconut flour with baking powder and whisk into batter until there are no lumps. Fold in cheese. Drop batter by the spoonful onto a greased cookie sheet. Bake at 400 degrees for 15 minutes. For a cheesier biscuit increase cheese to ¾ cup.

This recipe makes about 10 biscuits.

Why I Love Coconut Flour (but not sky diving)

Between playing with my sourdough starter, making lots of fizzy bubbles with my water kefir and experimenting with all the cool things you can make with coconut flour, I’ve been incredibly adventurous in the kitchen lately. Who needs bungee jumping or sky diving when you can get adventurous with bubbles and coconut flour? Oh, I’m so wild and crazy – just try and keep up with me.

(Hey, did you fall asleep already? Wake up. The post just started. I’m not that boring. Really, I’m adventurous. Just wait until you hear about the mayonnaise experiments I’m gonna write about next week.)

It’s one of my newest loves, coconut flour. Coconut flour is the fiber taken from the coconut meat after coconut oil is extracted from the coconut. How cool are these people to use the whole coconut! It’s hearty, it tastes incredible and it’s full of many nutrients that our bodies need. Since I tend to almost always bake with whole wheat flour – baking with coconut flour offers our family a nice variety and change of pace. Change is good. Our bodies like and need variety.

Coconut flour is also gluten free. Gluten free or not, I encourage you to try coconut flour as a new source of nutrition!

Why Coconut Flour is Good for You

  • It is a great source for natural fiber.
  • It is high in protein.
  • It is low in carbohydrates (not that all carbs are bad, but many of us tend to get too many of carbs – or empty carbs – in many of our baked goods).
  • It has a natural sweetness, which means you don’t need as much sweetener in recipes that include coconut flour.

The complaint I hear most often about Coconut Flour is that it is expensive. Yup. I can’t deny that. The stuff isn’t cheap. However, the more I use coconut flour, the more I realize that while it costs quite a bit more than wheat flour, you use quite a bit less coconut flour in most recipes. So maybe the cost isn’t so bad after all?

For instance, I typically use 3 cups of whole wheat flour to make 24 muffins for my family’s breakfast (I told you we eat a lot of muffins!). However, when I make muffins using coconut flour, I use only 1 cup to make the same 24 muffins. I find that I don’t go through the coconut flour very fast because ultimately, it just doesn’t take as much per recipe.

Coconut Flour is a dry flour – it usually requires a lot of eggs to create a recipe using coconut flour. Well how ’bout that? Now we’ve just added tons more protein because we’ve added more eggs. Have you tried these Basic Coconut Flour Muffins or Coconut Flour Banana Muffins yet? Wow, they’re good – and full of protein and great nutrition because of the coconut flour and eggs.

Where to Buy Coconut Flour

I buy my Coconut Flour either at Tropical Traditions, Azure Standard or through Amazon, depending on who has the best price at the time. Tropical Traditions often runs their Coconut Flour with a Buy One Get One Free sale. I never pay full price – I wait for the sale! I also watch Amazon to see if they have any specials going on. If they have Azukar Coconut Flour in stock, that is by far the best price I’ve ever seen!

I store my Coconut Flour in the freezer and just pull it out as I need it. I’m having fun learning how best to use it and since we love these Coconut Flour Muffins so much, I’m having fun experimenting with other recipes using the same idea. There’s a full page of coconut flour recipes over at Tropical Traditions that I’ve been looking over. Today, I tried their Gluten Free Coconut Flour Chocolate Cake.

If I didn’t know this cake was gluten free and made with coconut flour, I wouldn’t have known this cake was gluten free and made with coconut flour. Make sense? My kids didn’t know, so they didn’t know – and they liked it. Make sense? Mmm-hmmm. That means the cake was really good – and nobody knew it wasn’t “normal” but that it was packed with protein and nutrition.

Yep, much healthier than sky diving, these adventures of mine. You should get wild and crazy with me and make bubbles and coconut flour cake. Buckle your seat belt. It’s a wild ride.

Coconut Flour Banana Muffins

I’ve been having so much fun playing with this Gluten Free/Dairy Free Muffin recipe! We’re on the home stretch of the Gluten Free Experiment we’ve been conducting at our house (more on that soon), but I guarantee you we’ll continue to make these muffins and all the fun variations I’m coming up with whether we’re gluten free or not. What a healthy little muffin (that just so happens to taste like cake).

Coconut flour is high in fiber, high in protein, making it a wonderful addition to your diet. I find coconut flour at Tropical Traditions or Amazon. I’m so in love with this stuff that I might just write a post all about it someday soon.

I don’t recommend substituting whole wheat flour in this recipe. Coconut flour and wheat flour are not created equal. If you want a Whole Wheat Banana Muffin recipe, check out this one! We love it!

Coconut Flour Banana MuffinsYum

1/2 cup Coconut Flour
1/4 teaspoon salt
1/2 teaspoon baking powder
6 eggs
4 Tablespoons Coconut Oil, melted
1/4 cup honey
2-3 ripe, mashed bananas
1/2 cup nuts (optional)

Mix all ingredients together, then pour batter into a well greased (or paper lined) muffin pan. Bake at 350 for 15-25 minutes. Makes 12 muffins.

I never put nuts in muffins because 5 out of 6 of us don’t care for them in our baked goods. How ’bout you? Are you a nutty kind of person? Gluten Free – Dairy Free Muffins

I think this is the recipe I’m most excited about from all my gluten free recipe experimenting last week!!! Cher left this recipe in the comments section in my Gluten Free Experiment post and since I had all the ingredients on hand, I gave them a try. (Cher, I’d like to give you a BIG hug!!!)

Upon first glance, it seems that there would be too much liquid in these, making for a really runny batter. But nope…it’s just right. I mixed them up, baked them, then held my breath:  Would my kids like them? They smelled good…they looked good…but would they taste good?

Oh. My. Muffin.

EVERY boy in my house scarfed these up…my pickiest son exclaiming, “Mom! These taste like CAKE!”

It’s only been a week, but I think I’ve made three batches of these already. We all love them.

Gluten Free – Dairy Free MuffinsYum

Gluten Free - Dairy Free Muffins

Ingredients
  • 6 eggs
  • 4 Tablespoons Coconut Oil
  • ½ cup honey
  • ¼ teaspoon salt
  • ½ cup Coconut Flour
  • ½ teaspoon baking powder
  • Add-In Ideas:
  • ¼ cup chocolate chips
  • ½ cup fresh berries
  • ¼ cup chopped, dried fruit
Instructions
  1. Mix all ingredients together, throw in an add-in if you'd like, then pour batter into a well greased muffin pan.
  2. Bake at 350 for 15-17 min.

By themselves, these muffins are awesome…but with chocolate chips. Oh my!

With both Coconut Oil and Coconut Flour in these, you would think they would have an overpowering coconut flavor. You can taste a bit of coconuty-goodness, but it’s not strong. Read this post explaining about the differences in coconut oils – try expeller pressed coconut oil if you don’t like the taste of coconut!

So where can you get Coconut Flour? I usually get mine from Tropical Traditions, but just saw this great pack of Coconut Flour at Amazon and decided to snatch it up. I think we’ll be making a lot of these muffins in the future…whether we remain gluten free or not. What an EXCELLENT little healthy muffin!!!

Healthier Coconut Cream Pie (and a Tropical Traditions Baking Supplies giveaway!)

It’s “pie time” right? Otherwise known as “the holidays”. I know we typically think about pumpkin pie (er, squash pie) right now, but Tropical Traditions just sent me a fabulous big box of baking supplies and I decided that a Coconut Cream Pie was in order. And just you wait until you finish reading about this recipe because you’ll have a chance to win an even bigger box of baking supplies! I couldn’t be happier for you! I received from Tropical Traditions:  Organic Coconut Flour, Organic Palm Shortening and a big bucket of Organic Shredded Coconut. See, told ya I just had to make a Coconut Cream Pie.

With my Organic Coconut Flour, I could have made a gluten free pie crust, which is so cool. I opted to use this Whole Wheat Pie Crust recipe instead, using the awesome Organic Palm Shortening. I’ve said it before and I’ll say it again..I LOVE TROPICAL TRADITIONS PALM SHORTENING. Among other things, it makes wonderful, delicious, healthy, flaky pie crusts!

So, to make a Coconut Cream Pie, you need a pie crust. Bake it and let it cool. 

For the filling, I used my Creamy Vanilla Pudding recipe and  threw in some shredded coconut.

Coconut Cream Pie FillingYum

2 1/2 cups milk
3 egg yolks (save your egg whites in a separate bowl for the meringue!) (yes, that’s “muh-rang”, not mar-in-goo”)
1/2 cup real maple syrup (grade B is best for you) or honey
4 T. arrowroot powder
1/4 teaspoon sea salt
1/2 cup shredded coconut
1 Tablespoon butter
1 teaspoon vanilla

In a medium saucepan, whisk together milk, egg yolks, maple syrup, arrowroot powder, salt and shredded coconut. Cook over medium heat, stirring constantly with a whisk until pudding begins to thicken. Remove immediately from the heat, and continue to stir until pudding is creamy. Add butter and vanilla and continue to stir until mixed. Pour this mixture into your baked and cooled pie crust.

You saved your egg whites, right? Whip ’em up good with beaters.

You can stop whipping when they look like this:

Add about one Tablespoon of real maple syrup to the beaten egg whites, beat them just a little bit more, then spread the meringue onto the pie. Sprinkle a little bit more shredded coconut over the meringue.

Put the pie into a 350° oven for about 10 minutes or until the tips of the meringue are slightly browned. Watch it carefully so that it doesn’t over-brown!
