Add Spinach to Cake (It Tastes AMAZING!!!)

It’s true. I add spinach to cake now. We will get greens into these kids, will we not?!

Look at this and tell me that you see spinach:

Right? And neither did he:

Now, he is a 3-year-old. Therefore, he also eats the occasional dirt or piece of tortilla that has been stuck under his car seat since last Christmas. So can he really be trusted?

Look at that face. If he can’t be trusted, who can? Though he is not to be trusted with choosing an outfit. It was snowing the day he was determined to wear these swim trunks. Why? Because they had sharks on them, which perfectly matched the sharks on his shirt. Obviously.

So about adding spinach to cake. I got the idea from Justus’ fiance.

She can absolutely be trusted. With food, with picking outfits, and of course, with picking a husband. She’s a keeper.

One day in my kitchen she saw me making these smoothies (yes, she already knows we’re weird and she still wants to marry into the Coppinger family). She was like: “Hey, did you know you can add spinach to a cake mix? I saw it on a reel!”

Fascinated, and seeing as I am in a desperate way to get as many nourishing foods into my kids as possible, I decided to pick up a cake mix the next time I was at the store. (<— Read that sentence again. Weirdest thing I’ve ever typed. Hahahahaha. Who even am I anymore?)

Yes, I picked up a cake mix. To help us eat greens. Yo. Betty Crocker gets salad into the children. We love her.

There’s the blender filled with spinach, oil, and water. If that doesn’t look like a delicious cake waiting to happen, I don’t know what does.

Then, in went eggs and cake mix.

It’s a cake mix? It’s a smoothie? No one actually knows what this is.

In fact, Malachi (our 17-year-old) watched in horror as he saw me blend this up and then pour it into a cake pan. “Mom, what are you doing??!!”

Poor kid. He knows his mom is tired. He really thought I’d lost my mind (some more). He thought I was pouring smoothie into a pan and putting it into the oven.

So then I told him what I was actually doing and he was disgusted that he’d seen the entire thing transpire. Not knowing there was spinach in the cake would have been much better, thought he. But alas, the damage had been done. He’d seen the spinach get blended into the cake. He left for soccer practice full of skepticism.

Would you look at that? It’s just a chocolate cake. Full of spinach that no one can see. Bah.

I frosted it, you know, just to add more sugar to our nourishing cake. What in the world. I then took a blurry picture.

Let’s take another look at that first taste-tester, shall we?

Can you see a slight green tint within the chocolate? No, you cannot. Only because you know it’s there do you think that you see greenish-brown.

Below you can read about how you can also put greens into your cake. We have all lost our minds. I guess we don’t care if our kids eat the sugar as long as they are also eating salad??

Ingredients
  • 1 chocolate cake mix
  • 1¼ cups water
  • ⅓ cup olive oil
  • 3 eggs
  • 3-4 cups fresh spinach
Instructions
  1. Blend everything up in a high power blender.
  2. Pour the batter into a 9x13 inch baking pan.
  3. Bake in a 350 degree oven for 35 minutes or until a toothpick inserted in the middle comes out clean.
  4. Allow cake to cool before frosting.

Will this be a way I frequently get greens into my children?

I don’t think that it will. But then again, I’m kind of on a roll with thinking of new ways to add veggie nourishment to our food. Wonder what else I can add spinach to?

He loved this cake and couldn’t get over it. “It’s so good! How is it this good?!” said we, between bites of cake.

I bet he’ll never be skeptical again when I put green stuff into a cake pan.

Listen, we all loved this cake. We decided that spinach makes it extra moist. I dare you to try it. :)

Simple Spinach Tuna Melts – Don’t Knock it Until You’ve Tried It

Now that we’ve realized how easy it is to add spinach to our meals, I think we’re working it onto our table at least once each day. The day these Spinach Tuna Melts were invented, Matt was the guy in charge of figuring out lunch.

We almost always have several cans of tuna on hand, our freezer held plenty of cheese, and I think it goes without saying that we had spinach in the fridge. Here’s what Matt came up with:

Simple Spinach Tuna Melts

These were awesome.  I lost track of how many he had to make, as these are one or two bite tuna melts – and I’m not sure if you’ve seen our boys eat lately, but let’s just say they eat a lot of bites at each meal. We went through a lot of spinach, and not one boy complained that there was no bread involved in this meal.

This meal is perfect for days you’re limited on time to cook, days you don’t have meat thawed, and days you want extra nourishment in the form of spinach. (Every day is the day you want extra nourishment in the form of spinach. Join the spinach-eating bandwagon.)

How to Make Spinach Tuna MeltsYum

Open and drain a can of tuna. Use a fork to separate the tuna pieces, then place about a tablespoon on each leaf of spinach. Top with about a teaspoon of shredded cheddar cheese. Place prepared spinach/tuna/cheese on a baking sheet and broil in the oven for 1-2 minutes until the cheese is melted.

One 5-ounce can of tuna makes 6-8 Spinach Tuna Melts. If feeding teenage boys, open many cans of tuna and be prepared to make many pans of tuna melts.

So there you go! A super easy meal you can make that packs a big nutritional punch.

Add Spinach for Extra (Inexpensive) Nourishment

Have you heard the news? Spinach is the new chocolate. It’s showing up in everything. People can’t get enough. It’s highly addicting. Spinach makes people sooooo happy.

I just made all that up.  Chocolate will always be chocolate, and spinach will…not. But at our house, the “can’t get enough spinach” statement is very true. I’ve been adding spinach to everything. (Actually, I haven’t been adding it to my coffee. I do draw the line there.)  It’s almost become a joke. The boys sit down to eat and say, “So did you add spinach to this, too?”

The good news is:  They are eating it. ALL of it. And they aren’t complaining. Even the pickiest one. Why aren’t they complaining? Because you can add spinach to many, many recipes and it will not change the flavor. It will only add nutrients. And…it might turn the food green, but whatever. I’m not trying to hide the spinach. I’m just trying to add goodness to our food in every way possible.

While I continue to learn more about eating well, the biggest lesson I’ve learned is this:  Healthy eating is not just about what you eliminate from your diet. It’s about making sure you’re filling your body with as many good nutrients as possible so that it can thrive. I’ve also learned never to overfill my blender, which is an equally important lesson, though not so much about nourishment as it is about the regret of finding crusty peach milkshake on the ceiling three days after the episode. But about adding nutritional value to our food…

Spinach has 19 amazing nutrients. Nineteen!!!! Vitamin K, vitamin A, manganese, folate, magnesium, iron, copper, vitamin B2, vitamin B6, vitamin E, calcium, potassium, and vitamin C, fiber, phosphorus, vitamin B1, zinc, protein, and choline – all in a spinach leaf.  Impressive.

Add Spinach for Extra Inexpensive Nourishment

The best news of all? Adding spinach to your recipes is a very inexpensive way to eat healthier. I paid $6 last week for a pound of spinach. That sounds like a lot of money until you recognize that spinach is very light weight and one pound of spinach is enough to stuff my pillow. I add spinach to meal after meal after meal. Just think of it. For about 75¢ per meal, I can add 19 fantastic nutrients to my dish.

How to add spinach to your food:

I find that simply tearing up handfuls of raw spinach with my hands and throwing it into the cooking pot works great. My cousin said that she dumps a package of raw spinach into her food processor, adds just enough water to help it spin, then purees it. Then, she freezes the pureed spinach in ice cube trays, throwing a frozen spinach cube into recipes. Brilliant!

What I’ve added spinach to successfully:

  • Scrambled Eggs
  • Salads (obviously)
  • Smoothies
  • Alfredo Sauce with Pasta
  • Beefy Vegetable Soup
  • Cheeseburger Soup
  • Chicken Noodle Soup
  • Chicken Patty Sandwiches
  • Chicken Salad (I didn’t stir it in, just ate it with the chicken salad)
  • Easy Noodle Stir Fry
  • Lasagna
  • Pizza Boats
  • Pizza Soup
  • Potato Soup
  • Salmon Patties
  • On top of Homemade Pizza
  • Cheesy Cauliflower Cakes
  • Runza/Bierock Filling

What I haven’t tried yet, but you better believe it’s on my list:

  • Baked Three Cheese Chicken Pasta
  • Barbecue Beef and Cheese Hot Pockets
  • Beef Stew
  • Calzones
  • Cheddar Ranch Burgers
  • Chili

How Our Menu Plan Helps During Busy Days – Wednesday On the Run

Our Wednesdays tend to be busy since we have Home School P.E. Class in the morning, and then Bible Class in the evening. Today, I had a 2:00 appointment as well, so I feel like I was only home to cook and eat today. (As I’m typing this, I hear Matt in the kitchen rinsing the dinner dishes. I love how he’s always willing to pitch in.)

Our Wednesday menu plan was:

Wednesday, January 30
Chocolate chocolate chip muffins, applesauce
Meat and cheese burritos, fruit
Alfredo sauce with pasta, tossed salad

Having a plan in place is so helpful for days we are on the go! I had our muffins started last night, so all I had to do this morning was finish mixing them up, put them into the oven, and let them bake while I got ready to go and got the boys up. Along with Chocolate Chocolate Chip Muffins, I also made a batch of Coconut Flour Muffins, per Malachi’s request. It was easy to do, and it was very nice to have the variety of choices this morning. I always need to make a double batch of muffins to fill us anyway, so having a single batch of two different kinds worked out great.

I had some leftover Caramel Apple Dip in the fridge, so I sliced up apples to go with it, and poured everyone a glass of milk. It had snowed a couple inches during the night, so Matt (who has a snow-removal business) had gotten up bright and early (or should I say dark and early) to get to work moving snow. We were nice enough to save him a few muffins to eat when he got home.

When we got home from P.E. the kids were “starving”. I pulled Meat and Cheese Burritos out the freezer (which I had made last week), and put them into the oven. The kids got a big drink of water, then worked on school assignments while they waited for lunch. I think one or two of them may have swiped a leftover breakfast muffin to hold them over too. :)

While the burritos baked, I made smoothies. Admittedly, frozen fruit on a snowy day didn’t sound like the best idea. But smoothies are a great way to get lots of nutrients. And I thought the kids would find them to be refreshing after running so much during P.E. Sneaking spinach into smoothies is so easy – you can’t even tell it’s in there!

Why yes, we did shiver while we ate them. It was oh-so worth it though. Yum!

I got a later start on dinner than I meant to, so I was a little rushed to get us fed before we headed to church tonight. I get frustrated with myself when I do that. What? Like I expect myself to pull this off perfectly all the time? It’s hard to remember to give myself grace. And it’s also hard to give the kids grace when we have ten minutes to eat and they aren’t hurrying like I’m asking them to. Grr. Chill out, Mom. 

And now, back to the happy post in which I share about how I fed my family lovely food today… {blush}

I steamed broccoli and carrots together to go with our Pasta Alfredo and Salad. (And by salad, I really just mean “torn lettuce leaves” because that’s all we had time for!)

Oh, and we were out of Ranch Dressing so I had to mix that up real quickly too. Shew! At least I had a jar of mix already put together so that all I had to do was scoop some out and shake it with the other ingredients.

I do believe tomorrow should be a slower day. Without a doubt, having a menu plan saved me today! (Having ranch dressing already made would have saved me even more, but whatever.)  :)

So, how was your day?  Hope you got to chew your food at dinner tonight. I think I may have just swallowed mine whole. I don’t recommend that. :)

My Exciting Grocery Posts for the Week: Such a Yummy Snack

My freezer (not the ugly one, the other one) still holds quite a few packages of frozen strawberries from last years picking. Yesterday, we made glasses of Strawberry-Peach Slushies, which are full of a very special (and maybe secret) ingredient that you can’t even taste but offer lots of good vitamins! I had ordered the freeze dried variety of this ingredient from Shelf Reliance, making it super easy and inexpensive to add it to these slushies!

What a great way to get extra nutrition into our kids (and ourselves). And since it was only in the 40’s yesterday at our house, it was also a great way to turn our lips blue. Spring really is coming to Nebraska, right?
