Menu Plan for the Week

We just arrived home after a weekend trip to Kansas City where our two oldest boys participated in LTC (Leadership Training for Christ). It was SUCH a full weekend, and the boys did great in all their events. We were also blessed to be able to spend two nights and enjoy Easter with our friends in KC. I’ll tell you more about it on Gratituesday! 

Here’s our menu for the week:

Monday, April 13
Whole wheat waffles, milk
Salmon patties, baked beans, strawberry-peach slushies
Shepherd’s pie, tossed salad

Tuesday, April 14
Scrambled eggs, toast, oranges
Sloppy joes, ranch potato wedges, hard boiled eggs, apples
Chicken veggie stir fry, homemade milkshakes

Wednesday, April 15
Breakfast cake
Homemade pizza, fruit salad, banana cake (friends coming for lunch!)
Lamb roast, carrots, potatoes, gravy

Thursday, April 16
Peanut butter honey toast, bananas
Tuna salad on toast, fruit-kefir smoothies
Popcorn chicken, angeled eggs, carrot sticks

Friday, April 17
Homemade whole wheat donuts
Creamy mac and cheese, peas
Taco potatoes, fruit salad

Saturday, April 18
Applesauce bread, clementines
Nachos, pears
Grilled chicken, italian pasta salad, green beans

Look for the new High Five Recipe:  Crispy Cheese Crackers this week! Also, be watching for a great giveaway (product valued at $149!!!).

    It’s definitely spring at our house! :-) It was already 74* (and climbing) when we went to school – at 0730 in the morning!

    Ranch potato wedges sound interesting; I’ll have to check those out.

    We had an awesome Easter too! Some friends from out of town stopped by just in time to eat with us. It was wonderful to get to visit and see my Goddaughter. My husband said this was the best Easter he’s ever had, I had to second that! It is just amazing what a little menu planning can to to accommodate the extra guests. I had menu planned to have leftovers tomorrow, but I am happy to change those plans to be able to have our friends with us today.

    Don’t know where I happened across your blog, but wanted to tell you I’ve been popping in and out for about a week, then saw you went to LTC. We went to the one in Dallas this weekend.

    I am really enjoying your blog — especially all the healthy eating recipes and ideas (I may have to try those bagels!)

    Just stumbled upon your blog and have been visiting around. Your menu tickled me when I saw you’ll be serving “Angeled Eggs”. That’s what I’ve been calling my eggs all weekend. Love it!

    Your menus look great! The banana cake, homemade pizza, and ranch potato wedges sound especially delicious. You should check out springpad’s weekly meal planner – it’s a great way to organize all of your menus and recipes, I think you’d really like it!

    Mmm, spring is out in full-force here and I love it!

    I’ve seen your menus for a few Mondays now, and I wanted to ask you – do you “cook” for lunches, or are they things you’ve frozen, or are they easy versions of recipes (for example, the mac ‘n cheese)? I have a toddler and am finding that I need to plan for lunches now that he’s older and needing a fuller meal. I can get away with snacking/leftovers for myself, but that often doesn’t work for him, and I can imagine as we have more children, planning lunches will be more of a necessity!

    I always appreciate your menu and recipes. You have a great talent, it seems, for coming up with recipes. Do you have any great recipes for egg/peanut free treats, breakfast bread/cake, cookies, etc. (especially eggs)? Two of my four children are extremely allergic and we are tiring of the same old things I have. You seem so good at coming up with recipes I thought I would check to see if you had any available.
