Make Extra Baked Potatoes on Purpose Because…

7 Ways to Use Baked Potatoes

What’s better than a baked potato? A baked potato with butter. Obviously.

But also, I have found that leftover baked potatoes can be a great meal-brain-time saver. This is why I typically bake twice (at least) as many baked potatoes as we will need for one meal.

First, let us be reminded of my favorite way to bake potatoes – particularly in the summertime – but also pretty much all the time because it’s just so easy:

I typically have my boys scrub enough potatoes to completely fill the crock pot since I know having the leftovers will give me another easy meal later in the week.

What do I make with leftover baked potatoes?

1. Homemade Frozen Hashbrowns or Hashbrown Patties

We shred baked potatoes into hashbrowns for the freezer. Oh how I love pulling these out for a fast side dish. If I take the time to freeze them into hashbrown patties, they are an extra special treat.

2. Fried Potatoes

Leftover baked potatoes make the best fried potatoes. We love to chop them up into a skillet with butter and sea salt. They cook up quickly since they have already been baked, and they have incredible flavor!

3. Potato and Egg Scramble

A favorite breakfast around here includes leftover baked potatoes fried in butter, then scrambled up with eggs.

4. Baked Potato and Bacon Casserole

This can be made and frozen, which makes an easy meal even easier. Grab the recipe here.

5. Potato Veggie Skillet

Leftover baked potatoes, cut up and fried in butter with veggies like onions and sweet peppers (and mushrooms and broccoli and spinach and asparagus) is incredible.

 6. Baked Potato Soup

If I have leftover baked potatoes, I can make my Potato Soup recipe super quickly. The baked potatoes give the soup a great flavor!

7. Taco Potato Skillet

This makes a super fast meal! Simply brown meat, add taco seasoning, then add chopped leftover baked potatoes – cooking until it is heated through. Top with shredded cheese. Serve with veggies. My family loves this meal. I love it because I can make it in about 15 minutes with little effort.

    We love Loaded Baked Potato Salad! Dice the baked potatoes then stir in shredded cheddar cheese, diced onion, diced crispy bacon, sour cream, freshly ground black pepper – what ever you like on a baked potato- then chill. It goes great with barbecue or hamburgers.

    When I worked at Quincy’s years and years ago, the potato salad was made from the leftover baked potatoes. No waste and the customers loved it.

    We just had leftover baked potatoes last night with leftover baked beans and chopped cooked bacon on top. Very good!! We also like to put chili, cheese, and sour cream.

    I usually use Laura’s crock-pot method for days when I will be gone until dinner. When I get home we pull out the toppings (we like salsa, sour cream, and cheese) and serve dinner. It really is quick and easy!

    This is the only way I bake potatoes now – so easy. I’m trying your taco potato skillet tonight – sounds yummy and quick for a Wednesday night. That loaded baked potato salad sounds good too Debbie ????

    Unfortunately, they cause my arthiritis to flair up, so I have severly limited our consumption, but boy do I miss my fried ‘taters and onions. Luckily for my boys, they get fries and mashed ‘taters at their grandmothers’ regularly.

    Thanks for this! My husband has been wanting potatoes lately. So I put a bunch in the crockpot this morning. We’ll have taco potatoes for dinner with a salad.

    It makes a lot, but it also freezes well.

    Mmmmm…so many good ideas. Which one do I try first? I’m such a fan of Italian food that I’m also imagining an Italian potato skillet with ground turkey sausage, Italian seasonings, some veggies, and then top it off with mozzarella and Parmesan cheese. This is all making me really hungry since I haven’t had lunch yet.

    Ok YOU are a genius!!! Why oh why did I never think of this? I have actually been avoiding buying potatoes for a while, not because of ‘health/diet’ issues but because I can NEVER seem to use them up before they go bad for our family of four. Even a 5 pound bag goes bad before we eat them all. But not anymore!! I am going to do this!!!
    We have stopped eating breakfast out now that we are raising chickens and my husband has purchased some hashbrown patties from the store…no telling what they are full of. But now I can make them and keep those in the freezer instead. Oh I can’t wait!!
