My Current Favorite Cheat Meal – and How I Make it Healthier

I have a new favorite cheat meal, and I don’t even feel bad about it.

It was about this time last year that I wrote my Beyond the Free Range Chicken post. In that post, I expressed that while I still love and desire to feed my family as healthy as possible, I’ve learned that it is more important to focus my time and energy outside the kitchen loving people. What’s more important?

  • Raw milk and organic produce? OR
  • Loving God and loving our neighbors?

I’m going to go with The Greatest Commandment.

Learning to Love

Little did I know what God was doing in our lives as He was teaching us to take hold of His commands and the promises of joy that came with them! He’s helping us learn to love better, to see people, and to share the hope He constantly provides. Meanwhile, He moved a 4-year old Bonus Boy into our house. He’s the son of one of the “neighbors we were loving on.” The 4-year old turned 5, and after a few months, it was decided that our family would adopt him.

The busy lives we had been living became much, much busier – but no matter because God has been in every part, perfectly providing everything we need. He’s been showing us during all of this how to let go of what isn’t important for His Kingdom and to fix our eyes more firmly on what He has to offer.

I could share thousands of words about all we are learning. But today, regarding food? Here’s a biggie I’ve learned: Who cares if you sometimes need to eat a less-than-perfect meal if the tradeoff is having more time to share Jesus’ love with others? Pray over the food, throw out the mixed greens or easy veggie to go with it, and trust that God is still providing His best for you.

This leads me to share my current favorite cheat meal. Don’t get too excited. It’s not even something to pass out over.

My Current Favorite Cheat Meal

It’s homemade-ish pizza.

Sure, I can make homemade pizza crust. Here’s the recipe for the days you have time. It’s fabulous. I recommend it. But you know what else I recommend for the days you don’t have time (because you’ve been sharing God’s love with people)?

Pre-made Pizza Crust. Organic…or not. Whole grain…or not. God is bigger, my friends. It’s just a pizza crust. This should not make us lose sleep. God’s purposes for our lives are bigger than the occasional serving of white flour.

I now regularly buy pre-made pizza crusts to keep in my freezer. About once every week, between foster care meetings and court dates and diapers and bottles and therapy appointments, I ask my big boys pull some out and top them as they please. This is our lunch or our dinner and it is so easy!

How do I make it healthier?

First, I don’t stress over it. A peaceful heart is great for one’s health. Second, we pull out mixed greens and eat salad with it. Often fresh fruit too. Again – SO EASY. It’s also fun and tasty, an added bonus.

And there you have it: My favorite cheat meal.

In the tug of war for all that demands our attention, loving people should win every time!

Use Chicken or Beef Broth Instead of Water

Today let’s talk about using Chicken or Beef Broth instead of water when cooking!

Around these parts, I am a little bit famous for making all the people drink water.

  • Not feeling well? Go drink water.
  • Feeling run down? Go drink water.
  • Cramping up? Go drink water.
  • Can’t lose weight? Go drink water.
  • Don’t feel like doing an Algebra lesson? Go drink water. (And then go do your Algebra.)
  • Feeling bored or unmotivated? Go drink water.
  • Haven’t had any water yet today? For the love, go drink water.

Little sips, here and there, all day long. Go drink the water.

I preach this to my family, to all the college students in and out of my house, to all the dear ones I’m reaching out to in our community, to everyone who has a complaint. It’s a simple start to anything that needs fixing.

I say it so often that people tease me about it when something happens – like when my shoe comes untied at a soccer game. “Well, Laura. It looks like you need to drink some water.” Touche.

Drinking water is necessary and vital and crucial (my thesaurus and I could go on and on). Our health depends on it.

But do you know what is even better than water? Bone Broth. Indeed.

Bone broth is made with water, but also with vegetables and sea salt. Vitamins and minerals AND water? Yes. And also gelatin from the bones, which is awesome for our skin, teeth, bones, digestive system, and more.

Use Broth Instead of Water

I say all of this to encourage us – if possible – to use broth instead of water while we are cooking meals for our families.

  • Cook rice in broth instead of water.
  • Cook pasta in broth instead of water.
  • Cook potatoes in broth instead of water.
  • Steam vegetables in broth instead of water.
  • Drink broth instead of water. (And then go do your Algebra.)

Not only will we enjoy many more nutrients when using broth instead of water, but we will also be enjoying an incredible boost in flavor. Rice cooked in broth is incredible! Veggies steamed in broth are many notches above.

Make the broth. Or buy the broth. (I do both. I buy broth to have on hand in a pinch so I can use it often. I make broth as much as possible so I can be ensured of maximum nutrition and flavor!)

  • Where to buy a case of broth to have on hand. (Truly, there is nothing better than homemade broth. But I do order these cases from Amazon. I also like to pick some up when I have a chance to shop at Aldi.)

Confession: Lately I’ve been making pot after pot of Beef Broth instead of Chicken Broth. Why? Because it’s much faster BECAUSE THERE ARE NO CHICKENS TO BONE!!! Taking meat off chickens is not my favorite job. You already know this about me. So instead, I almost always make broth with Beef Soup Bones. Then the meat falls off the bones and my job is done. Amen, hallelujah.

Merry Christmas from the Coppinger 7!

Wait – 7?? Yep. God took us from six to seven this year. We can’t believe it either.

Here we are, on Asa’s Senior Night for just before his final home soccer game for York College.

The adoption won’t be final until sometime in the new year, but we’re well on our way. You can expect precious pictures of our Bonus Boy on adoption day in a few months.

What have I learned this year? I’ve learned that I should never make plans. Be kind of organized and maybe have a casserole in the freezer. But don’t make plans. GOD MAKES PLANS. Then He prepares us, equips us, and provides for us as He carries out His perfect plans.

We weren’t even looking to provide foster care, much less adopt. Indeed, I had all kinds of other plans for our lives in the next few years…but fostering? Adopting? Not even a blip on my radar.

Trusting God, though? Listening? Obeying and walking in the path He paves? That’s where we’ve been focused. We’ve been asking God to show us what it really means to love our neighbor…

As our hearts had opened to people in our community who needed support through special struggles, we became friends with Bonus Boy’s birth mom. When we discovered one night last spring that the little guy needed a temporary place to live, we prayed. God told us yes, so Bonus Boy moved in within just a few hours of our finding out about the need. This huge life change happened exactly that fast – with less than a day’s notice. But God knew all along.

Fostering turned into the need for adoption. And now here we are. We’re learning about God’s faithfulness and love in ways we never knew. This is the best gift of all.

I pray that as you celebrate Christmas and look back on 2018, you are filled with JOY as you see all the ways God stretched, molded, challenged, grew, and loved you this year. As the year ends, we hope to be more like Jesus than we were at the beginning.

How to Have a Homeschool High School Graduation

Here we are again. It’s time to plan another homeschool high school graduation!

First item on the agenda? Cry a few tears.

This is the second time we’ve launched a great kid from our home. While I’ve already graduated one kid and have experienced so much delight that comes with having an adult child, I still reserve the right to cry again this time. These are tears of joy and gratitude, you can be sure. When I think of all God has done to bring us to this place and to grow our sons into men, the tears come. Why hold back? Tears are a gift.

Many people ask me, “How do you do a homeschool high school graduation?” No caps and gowns, no valedictorian address, no walk across the stage. What does a homeschool high school graduation look like, anyway?

My answer: Your homeschool high school graduation can be whatever you want it to be! Each child and family is different. One of the perks of homeschooling is choosing to educate your kids in whatever ways work best for your family. The same is true for graduation!

Today I’ll share what we’ve chosen to do for our sons as we celebrate the end of their high school career.

How Our Family Does Homeschool High School Graduation

  1. We invite grandparents, aunts, uncles, and cousins to join us for a weekend in our home. We’d invite every single person we know and love, but only so many people fit in our living room. The big reception comes later (see #10).
  2. Saturday at noon we enjoy a nice meal in our home with our guests, the menu of which is chosen by the graduate.
  3. After we eat our graduate’s special meal, we pull chairs into the living room for our time of celebration.
  4. In true Coppinger fashion, we share a fun video that our boys have put together on behalf of the graduate. :)
  5. Each person then shares a special word of encouragement and offers a blessing to the graduate. There are not many dry eyes during this special time. Family members who live too far to join us for this send emails that we read at this time so that their words can be heard too. Did I mention that there are tears?
  6. Matt and I are the last to share our words of love and blessing to our graduate. I can’t talk and cry at the same time, so I write mine out and make Matt read it while I boo-hoo beside him. What can I say?
  7. We all gather around our graduate and say a prayer of blessing over him.
  8. Matt and I present him with a diploma that we’ve printed and framed.
  9. We all share a special dessert that has been chosen by the graduate.
  10. Sunday afternoon we have a big graduation reception at our church fellowship hall in which extended family and friends have been invited to come celebrate.

It is a full weekend of joy, you can be sure! I learned last time around that I must be very organized in order to pull off such a big weekend full of company, food, and a big reception. Thankfully, when family is here to visit, many pitch in to help as needed. I try to keep food as simple as possible, but still, with many to feed and a party to execute, even the simplest of plans takes hard work.

My Latest Grocery Purchases – and Check Out Azure Standard’s New Program!

It’s been a while since I took pictures of my groceries to show you. You’ve missed it, I’m sure. You’ve most definitely been wondering, “How much butter has Laura been buying these days? Is Laura still eating plenty of greens? What is Laura’s current favorite vegetable?”

Right? You’ll all been asking yourselves these questions.

Well, I didn’t get a picture of it, but I recently bought 20 pounds of butter. See, my local friends know me well enough to text me when they’re at the store and come across a good deal on butter. I got the text, I went to the store, and I got 20 pounds of butter. The check-out lady asked me what I was up to. I told her it was just another routine day in the life of me. No big deal.

My current favorite of all vegetables are the amazing miniature sweet peppers that typically come in a 1-pound package. Do you know the ones of which I speak? I like cutting them up and eating them in salads. I like eating them as if they were candy. They are my fav.

And yes. I’m still eating plenty of greens.

So now lets see some pictures, shall we? Lately I’ve had to drive to Lincoln weekly to visit my natural doctor. (Fun times. But we ARE getting to the bottom of these migraines.) The best perk to going weekly (besides knowing that I’m getting somewhere on my health journey) is that I get to go to Fresh Thyme Market while I’m in the city. I love that store so much! I walk the aisles and take advantages of the sales. Here’s what I got last week:

I kind of blew it on my recent Azure Standard order. How, you ask? Well, I ordered a few items and checked out with the intent to go back and order a few more of my Azure favorites before the cut-off date. Then I forgot. Oh well. At least I got the frozen veggies I always need, I got a very wonderful and large block of raw cheddar cheese, and I got my very fun Azure Advantage Discovery Box. Those boxes have been the coolest! This month it contained a lovely assortment of high quality dried fruit. (Edited: No longer available)

Some quick notes about Azure Standard, in case you aren’t familiar:

Azure is a food co-op that has been fantastic to me during the past 10 years that I’ve taken advantage of what they offer. I order online, then once a month, a truck delivers my order along with everyone else’s from my area. We meet in a parking lot, grab our boxes, then take them home and gush over the goodness.

Self Employed? What Our Family Does for Health Insurance

This post is exactly like the Taco Salad post. Exactly like it.

What I mean is, I’ve had dozens of requests that I share this info and it’s only taken about six years for me to get around to it. (Just like it took me six years to share the taco salad recipe. You see how that makes the posts exactly the same?)  I have nothing to say for myself about this issue. Perhaps there’s a home remedy for this??

Health Insurance for our Self-Employed Family

Our family has qualified as “self-employed” for almost all of our 25 years. Even when my husband worked as an employed minister for churches, we carried our own insurance. So trust me when I say we’ve shopped around for the best type of health insurance to pay for out of our own pocket. We’ve experienced all the good, bad, and ugly. We’ve nearly gone broke in the past from paying monthly premiums, and we haven’t had a co-pay option since 1998.

Lest you think I’m complaining, let me tell you where we’ve landed after all these years of trying to figure out the best way to carry health insurance for our family:

We are so super happy that we get to make the decision for ourselves!

Taking care of our own health insurance means we aren’t stuck with what we don’t need or want, paying money we don’t want to pay. We hear from too many people about how much money comes out of their paycheck to go toward health insurance. We hear many a complaint about poor coverage. Instead of dealing with these frustrations, we get to choose where we want to put our money! We’re thankful for this.

We’ve always chosen a high deductible plan so that we pay less per month and instead put our money toward real food and natural/homeopathic/chiropractic care. But with regular insurance companies, even with a high deductible, our monthly premium payment kept going up and up and up. It was horrible, actually.

The worst of it for us was that we really only kept this insurance for major illnesses or catastrophes. As I’ve shared before, our family doesn’t head to the doctor for every sniffle, and in fact, the only time we’ve taken any of us to a regular doctor in the past 11 years is for stitches.

So it was becoming more and more painful to pay hundreds of dollars each month for what felt like nothing. (Not that we wanted anything major to happen, of course. “Let’s get majorly sick so we can get our money’s worth out of our insurance!” said no one ever.)

How we save thousands on health insurance every year

We looked into alternative options for health insurance

I’d heard some of my friends talk about Christian Healthcare Ministries, so at the point our regular insurance premium doubled (again!) I decided to see if their price might be better.

Oh my stars and dollar signs.

Their price was shockingly lower. You guys – our family of six pays $235/month for insurance. The price does NOT go up year after year. I still can’t even believe how good this is. Annnnnd, instead of our money going to who knows where, our monthly payment goes to another Christian family to help them pay their medical bills. It almost makes me want to pay a higher premium. (Except not.)

Now granted, we pay such a low monthly fee because we chose a $5,000 deductible (which is the same deductible we had on the super expensive insurance). We chose the “bronze” level of coverage, which doesn’t cover anything beyond the big stuff because that’s what works best for our needs (since we rarely, if ever, go to a regular doctor).

We’ve saved thousands through the years – putting the money we would have been paying for insurance into savings so we have deductible money if we need it. And here’s the best part:

Instead of paying huge money every month for insurance that covered nothing but catastrophes, we can put money into our natural doctors, chiropractors, and home remedies instead. All that, and we still save money.

I’m not an affiliate for Christian Healthcare Ministries; I don’t get a kick-back for telling you about them. (Actually, I do see that they give incentives for telling your friends. I haven’t yet learned how that works. Hmmm….) I’m just answering people’s questions I get so often about what we do for insurance since we’re self-employed. Just like knowing about home remedies, I believe people should know they have options for health insurance too!

Because they aren’t technically an “insurance company” (though they still meet the government requirements to be considered such) things work a little differently than you might be used to with Blue Cross or whatnot. As a matter of fact, Christian Healthcare Ministries claims, “We are not health insurance. We are a ministry.” I love this! While their system works differently, it’s not complicated and every need and issue we’ve had has been worked out beautifully; every phone call pleasant.

So there you go. Christian Healthcare Ministries. That’s how we handle our health insurance as self-employed family. I can’t believe it took me so many years to finally write this post.

My Grocery Store Dilemma and Our New Pet (Yes. Really.)

I’m not sure how you think about grocery shopping but here are the three main things I focus on:

  1. Price
  2. Nutrition
  3. Time

But not in that order.

Except for sometimes.

See, all of those are important to me when planning a menu and grocery shopping. We eat a ton of food at our house now, so cost is definitely a biggie to watch so that I can put the best possible food on the table without going over our already enormous grocery budget.

But I don’t want to compromise on nourishment just for the sake of keeping the cost down. And then there’s the time factor. Time to prepare the food and time to shop for the food. I find my schedule is so full now that I don’t have as much time as I used to for comparing prices, clipping coupons, price-matching, etc. I still do all of these as much as I can, but it sure does take time!

You know what else? I’m finding that price-matching has almost ruined me for buying produce full price. So guess what has started happening? Sometimes I don’t buy enough produce. Me. The one who preaches to everyone about eating lots of fruits and veggies eighteen times a day.

All of this blabbing to say – yesterday when I was grocery shopping, my “eat nourishing foods” won out over my “keep the cost low” arguments in my head. There are actual conversations going on in spite of me up there in my head. They go on and on (“whoa that’s expensive” vs. “dude, you need broccoli”); meanwhile I’m walking up and down the grocery store aisles thinking of our Christmas menu and making a mental note to reply to an urgent email when I get home and also I am wondering if I can make it home or if I should pee at the store before I leave.

No one. No one wants to be inside my head.

Seeing as my “eat nourishing foods” voice won out over my “keep the cost low” voice, today I decided to price-match the few produce items that were a great deal, and then buy a bunch more fruits and vegetables whether they were on sale or not. I did draw the line at strawberries. They were $5/pound and looked like they would taste like red Styrofoam. No thanks.

I got four bags of Halo’s for a super low price match (plus I had a coupon!). I got three pineapple for just $1.29 each because of price-matching. That’s where my savings ended. I’m over it though. My countertop looked so happy with all the fresh produce that my “eat nourishing foods” voice gave my “keep the cost low” voice a haughty little smack down. My “keep the cost low” voice gave a little shrug, but not before reminding the “eat nourishing foods” voice that ultimately she would be keeping our doctor bills lower so she wasn’t the ultimate loser here, thankyouverymuch.

So now would you like to hear about our new pet? (I know. It’s hard to keep up here. Voices in my head, produce on my counter, goldfish in my living room. Welcome to my world.)

I did not ask for a fish. Of course, I didn’t ask for a cat either. I never wanted any pets. But now there’s Wiggams, the cat, who has won us over with her catness – so much so that sometimes we take play-by-play pictures of her catly activities. For instance:

Malachi went out to feed her one morning, but dropped the bag. (I write fascinating stories to keep you on the edge of your seat.)

So now. About the fish. It happened like this:

Last Thursday, Matt needed to go to basketball practice with Justus and Elias. I had Bunco with the ladies. This left Malachi, our 10-year old, without plans and all alone for several hours. I texted Asa (our college-age son) to see if perhaps Malachi could hang out with him on campus for the night. Asa said sure, except that he had a Christmas party to attend. No problem. Malachi would just go with him to the party. As a matter of fact, it was decided that Malachi would be Asa’s white elephant gift.

Therefore, while other college students were wrapping up odds and ends of candy and ugly sweaters for a gift exchange, Asa put a bow on the head of his 10-year old brother. Malachi was thrilled.

He was, as expected, a huge hit at the party! Everyone loved him and fought over him like all nice college students do during a gift exchange. Later that night, I got home from Bunco and let Asa know that I was available whenever the party was over. An hour later, he texted back that Brittany would be running Malachi home. I eagerly welcomed them when they arrived. But wait. What was this?

Brittany breezed into the house with Malachi and sat a small fish tank on my kitchen counter. “Merry Christmas!” said she. Um. Thank you?

Well, my friends. Meet Finley. (name brilliantly chosen by Justus)

Apparently Asa wasn’t the only college kid to take a living gift to the white elephant party. White elephant; gold fish. It all makes sense I guess.

So now we have a cat…and a fish. (But not in the same location.) This pet accumulation thing has got to stop.

We began our fish care adventure by putting too much food in his tank and completely polluting his water. I take all the blame. I am, after all, used to feeding teenagers in bulk quantities. We quickly learned how to most efficiently change water in a fish tank without killing a fish. Later that day, Malachi eagerly reported that “Finnley is pooping!!” So we all got to watch. Whatever did we do with our time before we started having pets?
