1 cup cornmeal
1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon salt
2 Tablespoon honey
¼ cup melted butter
1 cup buttermilk
Stir together dry ingredients. Add eggs, honey, butter and buttermilk. Stir until just mixed. Spoon batter into 12 muffin baking cups. Bake at 400 degrees for 20 minutes.
For Cornbread, spread batter into a buttered 9×9 inch baking pan. Bake at 400 degrees for 20 minutes.
Made your cornbread recipe tonight. It was excellent and the honey really worked. I am so used to making sweet cornbread with sugar and am glad I now have a healthy version that my family loved.

No, to soak corn meal, you use lime water and I haven’t learned about this yet. I don’t imagine it would be hard, but I just haven’t taken the time to learn.

FYI, grinding popcorn works really well for cornmeal, too. I have a Whispermill (now marketed as Wondermill) and field corn is a no-no, but the popcorn works great and gives a great flavor to the finished product.

I usually don’t try to soak the wheat in this one. The main reason is that there is a special way to soak corn meal in lime water and I’ve not figured that one out yet! :)
Where would i get corn to grind? and what kind of corn is good to use?
I use organic whole corn that I get from my health food co-op, Azure Standard.
Can I substitute milk for buttermilk and applesauce for butter?
Yes on the milk for buttermilk, but I’m not sure on the applesauce for butter. I would imagine it should work, just might taste different than a normal cornbread would taste.
I made these for the first time tonight. My family NEVER eats a whole pan of cornbread. Never. Until tonight. I just about fell over when they went crazy over this cornbread! We are trying to replace white sugar and veg/canola oils and I’m trying to introduce more wheat flour where I can get away with it – so this was right up my alley. And so, so very good :)
Mmmm, can’t wait to try this with our black-eyed pea soup tomorrow night! I usually use a cast-iron skillet to bake my cornbread in. Will this recipe will work well in cast-iron?

For anyone who wants soaked corn meal you could buy masa. Its already treated with the lime water. Quaker makes it.
I ground popcorn in my Nutrimill so I could make your cornmuffins/bread. They were good but gritty tasting and not as sweet as we are use too. My hubby had me sift remaining flour before putting in the freezer. Did I do something wrong? I had top knob on fine and the bottom halfway b/n th middle and the coarse side(about 3/4). What can I do when I grind next time to be finer and still not ruin my brand new Nutrimill and as for recipe be a tad sweeter, add more honey or add a little regular sugar? Thank’s
Yes…my first time grinding popcorn for cornmeal and second time wheat. Yeah!
I usually use whole corn instead of popcorn, so I’m not sure about grinding it. But, with my Nutrimill, my whole corn grinds into a fine powder, like flour. Don’t worry – you won’t ruin your new mill! I’d say go ahead and turn the knob all the way to the finest setting and see what you think. And yes, add a little more honey next time! :)
I have milled popcorn in my Nutrimill for the last 2 yrs and in
my Whisper Mill for about 10 yrs before that. I have always gotten
a fine flour, maybe a little courser than white wheat. BUT, no one
can beat the taste (except maybe from whole corn like Laura uses).
A couple years ago, I made corn bread (2 different kinds) for a men’s
dinner at church – there a few others there also – mine were the ONLY
ones gone at the end =0)

Great recipe! I just used ground organic cornmeal from our local health food store. I also fried up a pound of breakfast sausage and grated some sharp cheddar and folded those into the finished batter. I used 1/2 melted butter and 1/2 melted coconut oil. I then baked them and served them with warm maple syrup…YUM! Thanks for the great recipe, Laura!

Laura, do you happen to know where to purchase (online) GMO free ground corn meal.? I don’t have a mill and our family loves corn bread!
I should add that I have only found GMO free mixes, not the corn meal itself. I’d like to make my own if possible!

For people who were wondering about soaking this, using sprouted flours is another way to go for reducing anti nutrients. I get my sprouted cornmeal from To Your Health. They have a website and you can order online. They also have organic sprouted whole corn for grinding.

I am finally purchasing a electric grain mill i think i am going to go with the Nutrimill. I am going to purchase cornwith my next Azure order but i guess in confused at what to buy popcorn, whole corn, white corn? Also i think that not grinding my own is why sometimes i have to alter yours recipes, in excited to not have to bandit turn I out as good as yours looks.

thankful to have found this recipe! When I want any kind of muffin, bar, brownie, or snack…. the ONLY site I look to now is yours (that and your book). I used to be discouraged by trying to use whole wheat flour in recipes (there are a lot of bad recipes out there). Thanks to you, we have healthy options all the time now! (fyi if anyone has a bulk food amish store near them…like we do…. they usually have nongmo corn meal. :)

Thanks for this recipe, my preschoolers are polishing off a muffin apiece and I just finished mine. Lovely! As a bonus I used your awesome reader tip to freeze batter forward, so I have six in the freezer now for quick muffins straight out of the oven (with no freezer burn!) for when #3 arrives next month. BTW I grew up hearing cornbread with sweetener called ‘Yankee cornbread’ (vs. the unsweetened Southern kind) so I’ve affectionately nicknamed this your Yankee corn muffins recipe.
Turned out great! I did whole wheat pastry flour from the store. Did 1 c milk with 1 t lemon juice and 1 t vinegar. Thanks!!
