Menu Plan for the Week

I am often asked what I feed my boys for snacks. I’ve got a whole list in the works that I’ll share with you later in the week. Here is a picture of the Crispy Cheese Crackers I made for them to snack on last night. I doubled the recipe, so we actually have some left for snacking on today!

We are blessed to have extra family in town for a few days this week. We’ll have a few get-togethers here at our house. Cousins are everywhere!

Here’s our menu plan for this week:

Sunday, May 22
Oatmeal, pears
Lasagna, tossed salad, honey whole wheat bread, butterscotch bars
Grilled cheese sandwiches, raw veggies with homemade ranch dip

Monday, May 23
Simple soaked pancakes, blueberries
Picnic with cousins, strawberry-orange smoothies
Nacho bar with all the fixings, watermelon, fresh pineapple

Tuesday, May 24
Coconut flour muffins, applesauce
Taco corn fritters, strawberry peach slushie, baby carrots
BBQ beef, creamy coleslaw, baked beans, homemade rolls (I’m going to experiment with the roll recipe in the Sourdough A to Z eBook)

Wednesday, May 25
Scrambled egg sandwiches, creamy orange cooler
Tuna with crispy cheese crackers, fruit salad
Chicken fried steak strips, mashed potatoes, gravy, peas

Thursday, May 26
Fried eggs on toast, oranges
Popcorn chicken, ranch potato wedges, steamed carrots
Italian pasta bake, tossed salad, green beans

Friday, May 27
Breakfast burritos, bananas
Sloppy cornbread muffins,  fruit-kefir smoothies
Teriyaki chicken and veggies

Saturday, May 28
Breakfast cake, applesauce
Leftovers
Beefy enchilada bake, tossed salad, fruit plate

    Just wondering how long on average do you cook each day? I know you make breakfast the night before a lot of times, you cook and freeze stuff to reheat later…..but if you had to make an average guess – how much time do you spend in the kitchen on a day???

      Good question. I’ve never kept track really. Every day is quite different because like you mentioned, sometimes I cook for HOURS so that I can freeze food for convenience another day. I’d say an average day would be a total of an hour and a half or two hours in the kitchen. That’s just a guess.

        Wow, you make it look so much harder than that! lol. It seems like you
        would spend at least an hour a meal in the kitchen, and most meals it seems like
        2-3 hours! I don’t think I am an efficient cook! My oldest is out of school now.
        He was in Kindergarten. But now that he is home for summer and this fall
        I am gonna homeschool anyways, I need to get use to “making” 3 meals a day.
        I am not looking forward to it!

    Just a question for you do you shop weekly for your menus or monthly? I know you buy in bulk do you see what you have and plan your menus around that or buy for the menus?
    I am trying to get organized on meal planning I did try the once a month mom site last week and made 20 meals ,but some our family wasn’t too crazy about. Next time I will use my own recipes with her concept.

    One more question for you in your breakfast cake recipe it calls for cultured buttermilk what is the difference if I use the buttermilk I get from making butter from raw milk? I love your website it gives me great ideas!

    I just made your Butterscotch Bars! They are amazing!!!…Will this work with alternative flours? I’d like to try it Gluten Free…I may have to make some more of these…tonight!…

      I’ve never tried it GF, but I would imagine you could sub barley flour or maybe a combo of millet/rice/buckwheat? Something like that?
