Menu Plan for the Week

I’m not sure why I don’t make these Apricot Breakfast Bars more often.
This time, I added a few mini chocolate chips just for fun!

Matt joined Asa at camp last week, leaving just three boys and me at home. After two weeks of having our family scattered here and there – we’re all six back together again this week. YAY!

Here’s our menu plan for the week:

Sunday, July 17
Apricot breakfast bars, bananas
Beef roast, carrots, potatoes, gravy
Salmon patties, corn on the cob, watermelon

Monday, July 18
Homemade poptarts, cantaloupe
Alfredo sauce with pasta, steamed broccoli and carrots
Italian roast wraps, raw veggies with ranch dip, watermelon

Tuesday, July 19
Creamy orange cooler, toast
Bean and cheese burritos, applesauce
Beef stroganoff, tossed salad, green beans

Wednesday, July 20
Scrambled eggs, hashbrowns, oranges
Tuna salad on crackers, honeydew melon, sliced tomatoes
Cheeseburger macaroni, green beans, sliced tomatoes

Thursday, July 21
Crepes with jelly, applesauce
Black bean salsa with organic corn chips, grapes
Cheeseburger zucchini boats, carrots

Friday, July 22
Pancake and sausage muffins, blueberries
Sloppy joes, peas
Grilled chicken, corn on the cob, green beans

Saturday, July 23
Pineapple-orange slushies, toast
Crustless quiches, fruit salad
Leftovers

    Sloppy joes is on our list as well. We got to cut our menu out next week because we are going home next week! My husband is active duty military so we don’t live around them and he has two weeks off!

    Hey Laura, your menu looks yummy!
    Couple questions regarding some of your foods/recipes. I saw that you say “frozen” beef for your Italian roast wraps…. why frozen? As opposed to fresh.
    Also, the salmon patties look yummy! But you said there are bones in them and I have 3 little ones (1, 3, and 5) so I don’t trust them with the bones but want to try this. Is is easy to find the bones and take them out? Also, can I bake these instead of pan fry? And when you do pan fry, what oil do you pan fry them in? I have canola here but I don’t pan fry very often.

      You can use a fresh roast – I just always have frozen roasts and that particular recipe works great to just throw a frozen roast in to cook. SO EASY!! If you use a fresh roast, you’ll want to cut the cook time down an hour or two.

      You can pick out most of the bones from a can of salmon – I sometimes try to get the biggest ones out. Once they’re cooked, I’ve never come across a bone – they kind of dissolve into the meat while being cooked. But yeah, try to pick out some of the bigger ones…it does make it easier.

      I have never tried to bake them, but I would imagine it would work. I use palm shortening or coconut oil when I pan fry.

      i just wanted to concur with laura on the bones in the salmon. I always pick out my back bones (the big round ones) and leave the others. The only time i’ve come across a bone is if i miss a back bone, and those add a little bit of crunch but i don’t think they’d be a problems with the littles. i have fed them to mine when they were that age.

    I have been making the Apricot Breakfast Bars a couple of times a week and my family LOVES them. I am to lazy to cut up the apricots most of the time so I use raisins or dried cranberries instead. YUMMY!~

    Thanks for sharing the Apricot Breakfast Bars recipe. I hadn’t seen this one before and plan to try it. That seems like a fair amount of butter, but maybe spread over that number of bars it isn’t so bad.

    Salmon Patties! Awesome. I had no idea what to do w/ the 2 cans of salmon I purchased a few weeks ago. Looks like we’ll be having that for lunch next Saturday. Thanks again for yet another great menu idea!

    can they be made with regular flour instead of wheat?

      Yes, you can use white flour instead of wheat. It should work fine.
