The Chocolate Fix

Matt and I were right in the middle of writing love letters to each other. We were at The Art of Marriage conference last weekend, sitting quietly in a room by ourselves, doing our assigned project. I was writing my heart-felt thoughts to him, reliving on paper about the time we met and about the qualities he had that attracted me to him. It was beautiful. I was teary eyed and feeling nostalgic.

And that’s when it hit me.

I’d forgotten to put the sucanat in the Chocolate Chocolate Chip Muffins I had baked for the kids to wake up to that morning. 

Why? Why does my brain work this way? We will probably never know. But somewhere in between writing “I love what a great daddy you are to our boys” and “Thank you for showing your love to me in so many ways” my brain shifted all the way back home and I began thinking about what the boys might be doing and if they were okay and if they’d found the muffins I’d made for them for breakfast. 

And somewhere within those few seconds of thinking about muffins, I thought through the steps I’d taken and recognized that I had not gotten out the jar of sucanat (sugar), opened it or measured it out. The muffins were made of flour, cocoa, baking powder, salt, milk, eggs and coconut oil…no sucanat. I’d thrown in a few chocolate chips, which may have added a little bit of sweetness, but probably not enough.

I didn’t mean to gasp, right there while we were writing our love letters. I didn’t mean to take Matt away from his “You’re so beautiful, I’m so glad God put you in my life” phrases. But I couldn’t help it. 

Our sweet silence was shattered as I blurted, “I forgot to put sucanat in the muffins for the boys!”

There was obviously nothing we could do about the muffins during that moment, so we had a little chuckle together about how quickly the boys might have realized that the muffins weren’t at all sweet and what else they’d found to eat. Then we carried on with our letter writing.

At home later we found exactly what we had expected:  Four muffins with one bite taken out of each of them and all of the rest of the muffins still on the tray.

So the next question of course was, “What should we do with all of these muffins?” We just didn’t have the heart to throw them away. Surely they could be salvaged somehow.

Matt was the one who had the brilliant idea. He’s always the brilliant one (and I may or may not have told him that in his love letter). He suggested that we make my yummy hot fudge sauce recipe to drizzle over the top of the muffins to add some sweetness.

Perfect.  I made some hot fudge, whipped some cream, and we had one of the most delicious breakfast treats ever.

It was a perfect chocolate fix, making us all hope that I will forget the sucanat in these muffins again sometime. :)

Oh, and by the way…all that love letter stuff I put in this post for you to read? All those phrases were cheesy ones that I just made up off the top of my head. What? You really think I’d tell you what we wrote in our love letters to each other? Yeah, I don’t think so. :)

Gratituesday: Mother-Daughter Banquet

Last weekend, our congregation held a special Mother-Daughter Banquet. And why, you might ask, is the mother of four boys writing about this event? :)

When this banquet was announced a few weeks ago, I nodded in approval and then didn’t give it another thought. I knew the mothers and daughters would have a lovely time together while I stayed home and had a rockin’ good time with all my menfolk. There would be Star Wars music involved at “my party” and there would be dirty socks and there would be burping contests. I love my life, I love being the mother of all boys and I love all that comes with it…even if it is a little uh…burpy sometimes. Not being included in a Mother-Daughter Banquet didn’t upset me in the least…I am so grateful for the life God’s chosen for me.

But my friend Rose had a different plan for me for that evening. It would appear that several of the gals were talking about how they could get me to this Mother-Daughter Banquet. They paired me up with a young-married college friend whose mother doesn’t live around here. We both needed an excuse to be there, they said. Why didn’t we come together?

And so we did. I picked up my adorable and fun friend Sarah and together, we headed to the Mother-Daughter Banquet.

It was a beautiful evening. There were over 140 ladies there:  Mothers, Grandmothers, Aunts, Daughters, Nieces, Sisters, Friends. I loved having the chance to spend time with Sarah and with all the other gals in attendance. The littlest girls there were wonderful to watch, as they came in all dolled up in their prettiest dresses…all twirling around.

Sarah blessed me with a beautiful pink wrist corsage to wear for the evening. Everything about the evening was so…girl. So feminine. Such a celebration of womanhood and sisterhood.

I love my church family. I love that they cared enough to work out a way for me to join them for the Mother-Daughter evening. You know, one of these days…one of those little girls in the pretty, twirly dresses might grow up and catch the eye of one of my sons and become my daughter. What a lovely thought.

Time for a Vanilla Shake

Are you in the middle of making a batch of homemade vanilla extract? If so…might I remind you to get your jar down out of the dark cupboard where it is hiding and give it a shake? 

I always seem to forget to shake my vanilla during the months it is extracting. My husband reminded me this week that it is time for a “Vanilla Shake”. I thought maybe he was going to take me out for ice cream…but nope. It was really just time to get down our jars of “vanilla in the making” and boogy down. 

And so we did.

How I Grocery Shop

Remember how I told you about how I grocery shop when I shared our 2011 Grocery Budget? I don’t usually buy much at grocery stores; I buy in bulk from co-ops; I purchase from local farmers. Some months I hardly buy anything, some months I buy a lot. This month, February, would be an example of me buying a LOT…and you get to witness it here today! Everything just sort of hit all at once this month, but that’s okay. There is money in our grocery budget. I just wait to spend it until I need it!

Here are a few pictures and some details about my grocery purchases this month. Some of this will last us one month. Some of this will last six months. Some of this will last for a year. Some of this will be gone before you read this post. ;)

Here is our Azure Standard food co-op order for this month:

This month’s order was a pricey one because I ordered a case of butter. See that box up there with two pounds of butter on top? There are 28 more pounds in that box. It’s a hefty investment all at once, but we go through a lot of butter and it’s nice just to have it in the freezer for when we need it. I can avoid going to the store as often this way, plus, this butter is much higher quality!

What else did I buy from Azure Standard? Well…10 pounds of oranges, three packages of frozen broccoli, 2 big bags of frozen peas, five pounds of peanuts (to make peanut butter!), a case of raw white cheddar cheese, a bottle of red wine vinegar, 10 pounds of Yukon Gold potatoes, 20 pounds of Fuji apples, a little bag of avocados, 25 pounds of whole corn (to grind into cornmeal), 6 half-gallon jars for milk and other food storage…and three jars of Hain Safflower Mayo. Yep, that would tell you that I haven’t attempted the Homemade Mayonnaise part of the Heavenly Homemakers Recipe Challenge yet. Hey, a girl can’t do everything at once. :)

My co-op order total (with delivery fee included) was $254.00…quite a bit more than I normally spend on an Azure Standard order.  It was the butter.  The cost of butter is rising I’ve noticed. My case of 30 pounds was $108. Ouch.  And yet, I’m paying for high quality butter, and this will last us a while. By “a while”, I mean that I really have no idea how long it will last us. Three months maybe? Maybe not that long. Depends on how much baking I’ll need to do.

Beyond our large Azure Standard order, we also got our year’s supply of wheat last week. Remember how last year I ordered 500 pounds of wheat? It has lasted 12 months and I still have some left over, so this time I held back and only ordered 300 pounds. :)  Total cost for my year’s supply of wheat which will make all of our bread, tortillas, muffins, quick breads, cookies, brownies, cakes, pie crusts, pancakes, waffles, and everything else that needs flour: $144.00. That’s only $12/month for ALL of our high quality, organic, whole grain flour!! Have I proven to you yet that investing in a grain mill WILL save you money? :)

In addition to all of this, I was almost out of chickens and hamburger meat, so I ordered 60 pounds of ground beef and 6 whole chickens from the local farmers we love and trust. That was a hefty (yet reasonable) price tag too:  $362.00. This meat will last us for a few months, depending on the amount of company we feed and how many times I’m in the mood for sloppy joes. :)

 

If you did the math on that, you would have found that I have spent $760 on bulk groceries (so far) this month. This isn’t including what we’ve spent on milk and eggs, or what we will spend on bananas and a few other little things that we do get at the grocery store.

Sound like a lot?! :)  Maybe. But this is how grocery shopping and spending works for us. We buy food when we need it, we don’t buy food when we don’t. We are blessed to have three freezers and plenty of pantry storage for bulk purchases. I am amazed at how much money we save by buying our food this way.

And can I tell you my little secret? I love having a wide variety of all of our staples on hand at all times. Rarely am I out of any basic ingredient, which means that at just about any time, I can cook up any recipe I have a hankering to cook up. This makes meal planning so much easier for me and helps me run my kitchen so much more efficiently.

How to Lose Weight in a Healthy Way – Podcast #8

If you’re looking to lose a few pounds and would like to hear my ideas about how I feel you can best lose weight while eating a whole foods diet, here you go: Twelve minutes of podcast in which I share my ramblings thoughts on this subject. I discuss questions like…can you eat a high fat diet and still lose weight or maintain a healthy weight? What do I recommend cutting out of your diet if you want to lose weight? 

I’d say, hey…grab a brownie and sit down while you listen to this podcast…but that may sort of contradict a thing or two that I share this time. So…how about a walk on the treadmill while you crank up the volume on this one? You’ll get twelve minutes of exercise while you listen…what do ya say?

It’s Not About You

Matt and I were privileged to attend a weekend marriage seminar last weekend put on by FamilyLife.com. It was their video version, called The Art of Marriage. I’m so thankful our church hosted the event.

Marriage truly is an art, isn’t it? When we allow our Creator to sculpt our marriage, it is so beautiful.

One of the biggest lessons we heard over the weekend was not something new to us. And yet, it’s always good to be reminded about one of the key tools for making your marriage run smoothly.

The long and short of it (and Laura’s paraphrased and blunt version) of the lesson is this:  Get over yourself already.

We shouldn’t get married to please ourselves. We should get married to serve the person we love the most.  Ultimately, getting married means that you’ve chosen to become a loving servant to your spouse forever. And if children come along, you’re signing up to serve them forever too. Yep, years and years of serving others. Sounds tough…but it doesn’t have to be. It’s all about letting go of yourself and choosing to serve cheerfully.

I thought it interesting that one counselor pointed out that we all say these vows to our spouse on our wedding day:  “I promise to love, honor and cherish you until death do us part.” But what our hearts often mean is, “I want YOU to love, honor and cherish ME forever.” (And then we also expect our spouse to be able to read our mind so that they know exactly how they should perfectly love, honor and cherish us…but that’s another article for another day.)

No…when you got married, you promised to take care of and nurture your spouse. No matter what. Even when it isn’t easy. Even when you’re tired. Even when you’re grumpy. Even when you don’t feel like it.

See, because your marriage isn’t ultimately about YOU. 

If Jesus would have made his time on earth about HIMSELF, I’m very sure He never would have died for me and He certainly wouldn’t have healed all those sick, needy people that kept following Him everywhere. Why in the world would he? He may not have been in the mood…He may not have felt like it that day…He may have just needed some “me time”. But no…He chose to serve. He chose to love unconditionally. He chose to die. He chose to live for others, which praise God, includes you and me!

If you’re sitting there thinking, “Wow, she’s right. My spouse really needs to read this so he’ll/she’ll stop living for him/herself and serve me better” –  Stop it. Consider yourself bonked on the forehead. :)

It could be that your spouse is selfish (I wouldn’t be surprised since you and I are both quite selfish in nature). Your needs may not all be met. You may be wanting more out of your marriage.

But your healthier, more wonderfully sculpted marriage begins with your choice to be a loving servant.

As soon as you stop living for yourself and really start focusing on meeting the needs of your spouse, your marriage will become more joyful. Your spouse may then become more of a loving servant to you as well.

Homemade Teriyaki Sauce (No MSG or HFCS!)

Ever noticed how tough it is to find dressings and sauces that don’t have MSG (Monosodium Glutamate) and HFCS (High Fructose Corn Syrup)? MSG, by the way, is a flavor enhancer that is made up of a bunch of chemicals I can’t pronounce and a bunch of scary stuff I don’t want to know about. You can read all the big words here.

I’ve been so excited each time I figure out how to make a new homemade salad dressing or condiment (see the whole list of healthier condiment recipes on our site)! Making your own condiments is not only much healthier, it’s often quite a bit cheaper too. And, lo and behold, these items are easy to make.

Shall we now all take a moment and enjoy a collective sigh of wonderment? Yes indeed recipes that are healthy, cheap and easy. All at the same time.

The beauty of homemade condiments too is how delicious and flavorful they are…all by themselves. We do not need to add MSG and HFCS or BGNJ to make our food taste good. (I made that last one up just for kicks and it was very fun.)

Well, apparently that was my little “rant” for the day. Try homemade condiments. They taste so good and pure.

And now for the Homemade Teriyaki Sauce recipe!

Teriyaki SauceYum

Homemade Teriyaki Sauce (No MSG or HFCS!)

Ingredients
  • ¼ cup tamari soy sauce
  • 1 cup water
  • 1-2 teaspoons freshly grated ginger or dry ground ginger (more or less to taste)
  • 2 Tablespoons honey
  • 1 minced garlic clove
  • 2 Tablespoons organic cornstarch
  • ¼ cup cold water
Instructions
  1. Combine 1 cup water, soy sauce, honey, garlic and ginger in a saucepan and bring to a boil, stirring constantly.
  2. Dissolve cornstarch in ¼ cup cold water and add to sauce.
  3. Stir constantly and allow the sauce to thicken.
  4. If the sauce is too thick, add a little bit of water or soy sauce to thin.

(I use Organic Tamari Soy Sauce from OliveNation which is gluten and MSG free!) We LOVE this Teriyaki Sauce on chicken wings.

Gratituesday: Is This Really February?

I beg your pardon, but I’m going to talk about the weather today. I’m not sure what it’s like where you live, but here in Nebraska, it is unseasonably warm. 

Normally, a “nice” day in February would be say…upper 30’s. Today, it was in the 50’s! It’s been beautiful for several days in a row, and it looks like our “heat wave” is going to last for several more days.

I sat for a while in the sun today, soaking it all in and praising God for this fantastic treat in the middle of what is usually a long winter. Matt and the boys did some outside work, played outside, walked to a nearby park and shot some hoops. 

What a lovely, warm blessing in the middle of February. 

Only God can create blessings like this one!
