Gratituesday: Dirty Fingernails

I know, I know… 

You’re thinking, “Really Laura. Can’t you think of ANYTHING that you’re thankful for this week? You had to fall back on your dirty fingernails?”

(Hey, it was either that…or my smelly trash can…) (Just kidding.) (My trash can is never smelly…)  ;)

Okay, really…

I’m REALLY thankful for my dirty fingernails this week!

Know why?! Because that means that I FINALLY got to go out and work in my garden!!

It seems like any time I had free to work…it was raining. And anytime it was nice and sunny…I was busy with other things.

So finally, this weekend I got to go play in my beautiful soil…and dream about the fresh peas and lettuce and spinach….and all the other yummy things we’ll be eating soon. 

And that night…I noticed how dirty my fingernails were…and I thought, “Well, here we go!”

This is the season when my lovely manicured hands look like a farmer. (Um, that was a joke… I had to go look up how to spell manicure…. I don’t even know how to spell it…much less give myself one.)  :)

So right along with all the perks (like dirty fingernails) that come along with gardening…I’m loving all of the fresh air and sunshine…and even the hard work that my garden provides. Ah yes…and the promise of fresh vegetables!

I am so grateful for these dirty fingernails.

Whole Wheat Hamburger Buns

 In the past few years as our family is working to learn more about eating healthier…I’ve tried to come up with a healthy, homemade whole wheat hamburger bun. 

I think I have finally figured out how to make a good bun.

(I must say…blogging about my buns feels a little….strange. But  just in case you’ve had trouble with your buns…I thought this was worth sharing.)  

Many burger bun attempts failed…as usually they were too bready…or too heavy. And we all know that NOBODY wants their buns to be too heavy…

So last week…I tried again and tweaked one of my other recipes and turned out a great batch of buns! Here’s how I did it:

Homemade Whole Wheat Hamburger Buns 

5 cups  (+) whole wheat flour
1 1/2 cups warm water
2 pkgs regular or active dry yeast (4 1/2 t.)
2 T. honey
1/4 cup water
1/2 cup milk
2 T. butter
2 t. sea salt

In a large mixing bowl, stir together 3 cups of whole wheat flour and 1 1/2 cups warm water. Set aside to let rest for 30 minutes. In the meantime, mix together 1/4 cup water, yeast and honey. Allow this to sit for at least 10 minutes to activate the yeast.

Melt butter, milk and salt in a small saucepan on the stove. Do not allow the mixture to get above 120 degrees.

Pour yeast mixture and milk mixture into flour mixture. Add remaining two cups of flour (more if needed). 

Knead for about 10 minutes until dough begins to look “shiny”. Put dough back into the bowl, cover and let rise for at least an hour…or until it has doubled.

Pull dough onto a clean countertop and knead for a couple of minutes to get any air bubbles out. Roll dough on a lightly floured surface until about 1/2 inch thick. 

Cut circles from the dough with a large drinking glass or wide mouth jar. Place circles on in a well buttered baking dish about an inch apart. 

Allow to rise for about 30 minutes. Bake for 20-25 minutes in a 350 degree oven. Makes about 18 buns.

Now….I really hope you like these as much as we do!! 

But really…do be careful when you share this recipe and talk with others about them. Because…

“Don’t you just LOVE Laura’s buns?!” might just not sound quite right… ;)

Contentment

When we first moved into our home six years ago…I LOVED it! I was so excited to have this great big huge 100 year old house…with six bedrooms and a huge yard and old ornate windows and a newly re-done kitchen.

The fact that this house was old didn’t bother me…old houses have lots of character. And, the previous owners completely remodeled many of the rooms and re-did the hardwood floors throughout the house…beautiful!

I still love my house…which has become our home. 

But, sometimes…I don’t love it as much as I used to love it…

Funny thing about old houses. They have lots of quirks. And this house has a long list.

I won’t tell you our plumbing issues…but, well…we have some.

Those beautiful, ornate windows? Really drafty.

Some of the cracks and crevices throughout the house have dirt in them from the dust storms of the 1930’s. And I guess they always will.

Many of the walls are plaster…ever taken old wallpaper off of plaster?!

And you know our huge yard that I was once so excited to have? Now I want it to be bigger…and to have a nice fence around it…

And the whole house and the huge yard…I want it to be a few miles out in the country so that we can have some chickens for the boys to take care of…and so that we can plant an orchard…and so that my garden can be bigger…

So…this is where my mind goes occasionally. 

Instead of looking around me at the beautiful home that I have…and simply being content.

And not only being content…but realizing that I have a lot more than most.

Because there are people in other countries…and people in this country who would be happy to simply have a bed. 

And I have two extras.

And a lot of extra other stuff too. 

So I will work to be content. 

Because when I look around at what I really have…how could I NOT be?

Keep your lives free from the love of money and be content with what you have, because God has said,  “Never will I leave you; never will I forsake you.” So we say with confidence, “The Lord is my helper; I will not be afraid. What can man do to me?” Hebrews 13:5-6

Menu Plan This Week

Well…we’re starting off the week with three sick kids…so we’ll see how the menu plan goes! I just got back from the store with LOTS and LOTS of fruits and veggies…so while the kids aren’t eating much else (which proves that they’re sick!)…at least they’ll munch on some fruit.

I’ve also got a big chicken thawing so that I can make a rich broth for the sickies. (I’ll try to take pictures and show you how I make a very nutritious broth in the next few days!) 

Having said all that…if everyone begins to feel better…this is what we’ll be eating this week! (I’ve begun to hear a couple of sibling arguments…so things must be looking…up…)  :)

Chicken enchiladas, tossed salad

Thursday, April 24
Crepes with jelly, cottage cheese
Homemade pizza rolls, carrot sticks, green smoothies
Tuna casserole, peas

Friday, April 25
French toast
Baked potatoes, fruit smoothies
Homemade pizza

Saturday, April 26
Breakfast cookies, bananas
Bean dip with chips
Meatloaf, scalloped potatoes and carrots

You KNOW the Kids are Sick When…

The house is quiet for hours and hours…in the daytime…

And when they get up they pitifully ask, “Do we HAVE to go to the party today?”

And when they could care less about food. (Yesterday I had this stuff on a plate after dinner. What was that again?  Oh yeah…leftovers. I remember when we used to have those before…)

Yeah…they’re sick. Three out of four of them.

It was the weirdest thing yesterday…

We got home from the soccer field…and Elias could barely make it into the house. He practically crawled up the steps and then just laid down in the entry way right by the dirty shoes and mud. And stayed there. (Until I could move him over to a little bed in the living room.)

He then promptly fell asleep. 

Then Asa laid down on the couch….and fell asleep.

And…when I went to go find Justus a few minutes later…HE was just laying down on a couch upstairs…doing nothing. And he stayed there for a long time.

Malachi was the only chipper on in the house…and he quietly hung out with me and was Mama’s little helper.

By last night…all of them had to be carried to bed…and they all had fevers.

Justus always gets a little delirious when he has a fever…so he started asking weird questions that didn’t make sense..

And Asa (in his feverish state) was trying to answer them…

(It was sad…and a little funny to listen to…)

Thankfully they all fell asleep early in the evening…and slept well all night.

But my house is still quiet this morning and no one really wants anything to eat. (I hardly know what to do with myself when I can’t be feeding people!)

It’s strange to be home on a Sunday. And…I miss my healthy, active, loud, eat-everthing-in-sight boys. 

(Remind me of this in a few days when I can’t hear myself type…)

Learn About Laura One Story at a Time: The Day of the Fire

It’s been a few weeks since I’ve taken the time to embarass myself in front of you. (I should work on being more motivated.)

Thought you might like to hear about the time I burned down an entire barn. (I mentioned it so long ago. I was hoping you’d forget, but I’m pretty sure you didn’t.)

(I’d like to.)

I was a senior in high school. So, somewhere in between getting my senior pictures taken, filling out scholarship applications, and having a really bad case of “senioritis”…I also burned down the barn on our family farm.

Lest you think I was a 17 year old playing with matches, I need to let you know that because we lived in the country, we were allowed to burn our own trash. Quite opposite of enjoying matches, I was always afraid of the little sticks. My mom never could get me to light a candle for her in the house and I certainly never wanted to burn the trash.

But finally one Saturday, she took me out to the trash barrel with her and showed me (again) how to light a match and catch the trash on fire. I guess she figured it was one of those skills I really should learn before leaving home in a few months. So like all good daughters, I watched carefully and learned how to light a piece of a garbage on fire.

Fastforward to the following Saturday. We were cleaning house like we always did on Saturdays, but Mom started to not feel well so she went to go lay down.

I decided to keep cleaning and surprise her with a clean house when she got up. And then I decided that I really wanted to surprise her with what a brave girl I was by burning the trash all by myself. (Sounds like I was five, but really, really the burning the trash thing really freaked me out.)

So out I went with the bags of trash and the matches, working up my courage all the way to the barrel. I got the match going on the second try, which I felt so good about. The trash was now burning and Mom would be so proud.

Perhaps I should stop here and tell you that I was so concerned about the fact that I would be suprising Mom with a clean house and by the fact that I had actually burned the trash myself that I didn’t consider the fact that the wind was blowing pretty hard. Oops.

I don’t know why I chose to look outside later – probably to look out proudly at my burning trash. But look outside I did. I noticed that some of the trash had blown out of the barrel way over to the grass in front of the barn. I thought, “Hmm. That can’t be good.”

So I went out there to stamp out the “bit of fire” I had seen from the window.

(Okay…I’m starting to have stress at this point of telling the story. It’s okay, Laura. Just relax. It was years and years ago, and no one got hurt. It’s okay.)

I went out to stamp out the fire – but really – it wasn’t very stamp out-able. There were quite a few pieces of trash and the grass in front of the barn was tall and dry – and it was pretty windy. (How did I not notice the wind before?)

I decided that I’d better go wake up Mom. (This was not quite the way I had planned to surprise her.)

She was realllly groggy, so she was quite disoriented when I was trying to tell her about the trash burning by the barn. But she went out there with me and we dragged our little garden hose over to the burning patches of burning grass. The hose produced a little trickle that barely even got our hands wet. (I’m PRETTY sure we looked ridiculous holding that dinky hose with a tiny bit of water dripping out!! We laughed about that later. Much later.)

Then we noticed that the fire was spreading to inside the barn. I was kind of feeling somewhere in the middle of being freaked out and being in denial that the barn was now on fire. I mean – THIS could not be happening!

We went in and called the “fire department” which in Tiny Town USA, meant a bunch of volunteer farmers. When the first guys got there, they saw that the fire was now bigger than they could handle so they started calling all the other fire departments in all the surrounding communities.

They sent Mom and me back into the house while they worked. At this point, they decided that there was nothing they could do to save the barn so they just started to spray down all of the other buildings on our farm so that the heat from the flames wouldn’t catch them on fire too. I was in the house crying and watching the huge barn I had played in all my life be engulfed in flames. The fire was now HUGE…because that was one huge barn. And, while we actually didn’t use the barn much anymore – it was full of old, dry hay. Lots of old, dry hay. The fire was huge.

My dad, in the meantime, had been on a tractor a few miles away. He saw the smoke growing larger and larger in the direction of our house. He finally got nervous enough to get into his pick-up and come on home. The closer he got, the more afraid he got because the fire really looked like it was coming from our place. He knew Mom and I were home, and he was afraid that it was our house on fire.

So while I was freaking out and crying and panicking about what my Daddy would say when he saw that I had burned down our barn, he was just so thankful when he pulled into the yard that it was just the barn and that we were safe.

Well, I guess there’s nothing much more to tell. The barn and all the hay smoldered for about two weeks, which was a really fun and long reminder of what had happened. I called my brother, who was away at college, to tell him what had happened. The way I was crying and carrying on trying to tell him the story, he was worried that someone had died or something – so when I finally got it out that the barn had burned down – he was also relieved that it was just the barn.

And then it just gave him one more thing to tease me about… :)

So there you go.

What I’d like to know is – have YOU done anything like that will top that one? Please tell me I’m not the only one with outrageous memories and stories to tell.

Blueberry Coffee Cake: Breakfast…or Dessert?!

I have a question.

I don’t like coffee, and I didn’t make coffee to drink with this cake, so can this still be called a coffeecake?

Hm, well anyway…

Blueberry Coffee CakeYum

3 cups fresh or frozen blueberries
½ cup water
½ cup sucanat
3 Tablespoon cornstarch or arrowroot powder
3 cups whole wheat flour
1 teaspoon baking powder
½ teaspoon baking soda
1 cup sucanat
¾ cup melted butter
2 eggs
1 cup buttermilk
1 teaspoon vanilla

In a medium saucepan, cook blueberries and water together until boiling. Turn down the heat, cover and simmer for about five minutes. Stir together rapadura and arrowroot powder in a bowl. Slowly pour rapadura mixture into the blueberries, stirring while you pour. It should very quickly become bubbly and thick. Remove from heat. Set aside.

In a mixing bowl, combine flour, baking powder, baking soda and rapadura. Make a “well” in the center and pour in melted butter, eggs, buttermilk and vanilla. Stir well.

Pour half of the cake batter into a 9 x 13” baking dish. Spread blueberry mixture over the batter. Drop remaining batter by spoonfuls on top of the blueberry mixture.

Bake in a 350° oven for 40-45 minutes.

More Fun Than Shopping

Can I just tell ya how much I love hand-me-downs? And how much my boys love hand-me-downs?

We get them from lots of people who have such nice clothes, so it has been such a blessing.

Ever since the first nice day this spring…the boys have been begging me to get out their summer clothes. (They forget that we live in a state that has 50 degree mood swings during March and April.)

But finally, this week…I made the trip up to the attic to bring down “THE BOXES”.

I’m tellin’ ya, you would have thought it was Christmas. 

I’m sitting down on the floor trying to…you know…ORGANIZE the clothes into piles of what will fit who this year….

And the boys are all so excited that they’re grabbing shirts and shorts and exclaiming over all of them and asking, “Does THIS one fit me?! Can this one be MINE?!” (even though they wore it three years ago and it was too small then…)

Several (loud and exciting) hours later…we have our “new” clothes put into our drawers and our sweaters and turtlenecks back into the rubbermaids for next winter…when we get to do it all again.

What a blessing that their drawers will hardly close because they are so full…and we haven’t had to buy one piece of clothing.

Your Hair Is Like A Flock Of Goats…

I think Song of Solomon is a beautiful book of the Bible. Very beautiful. I really, truly love the book.

But I do get a little tickled at the compliments that the “Lover” gives to his “Beloved”…

“Your eyes behind your veil are doves.” (Okay, that one isn’t so bad.)

“Your hair is like a flock of goats descending from Mount Gilead.” (maa-a-a-a)

“Your teeth are like a flock of sheep just shorn, coming up from the washing.” (and you must have one proud dentist…)

I’m sure “Beloved” was thrilled with her “Lover’s” kind words.

And of course she showers upon him some very similar thoughts…calling her lover an apple tree and a young stag…

So I was reminded of these things yesterday when the little girl I babysit for (who is two years old) was sitting down talking to Malachi (who is three years old). 

(As an aside, Malachi still adds extra “r” to many of his words…so book=burk…look=lerk…foot=furt…)  (You needed to be reminded of that…it makes my story better…)

There was lots of stinkin’ cute chatter going on between the two of them….and some of it even made sense. The two were talking and giggling and were certainly enjoying themselves.

And then…Malachi stops in mid-sentence….leans over close to Emma’s face and says, 

“Oh Emma! Your eyes lerk like OLIVES!”

Emma wasn’t quite sure what to do with that one…and….I’m not quite sure either….

But I’m pretty sure he’ll need to improve upon his pick-up lines when he’s old enough to “court” a lady….

Thirteen Silly-ish Things Grown-Ups Say…

As my ten year old was getting out of the car to go deliver a “Meal on Wheels” to someone…I automatically said, “Be careful not to spill it!” 

And then I realized, “What? Like he’s going to try to spill it?”

Why do I say stuff like that?

I’m pretty sure I can’t help it. I often say phrases that really aren’t helping anything…but it makes me feel better to have said them. (I guess.)

So here are thirteen things that we (all probably) say that are well….silly-ish. :)

1.  “Be careful!” 
(Because if I don’t say those words as they are departing from my presence…they’re SURE to trip and fall on their way out of the kitchen.)

2. “How did you sleep?”
(I ask my kids this question every morning…and they always say, “Fine.” I’m pretty sure they don’t remember how they slept because they were….well…asleep.)

3. “Have fun!” (You know…just in case they were thinking of NOT having fun…)

4.  “Drive safely.” (My kids aren’t old enough to drive yet, but this is especially funny when said to my great aunt and uncle as they climb into their Buick to drive across town…. even though I’m pretty sure they aren’t planning on stopping off at a vacant parking lot to spin a few donuts along the way.)

5. “Be careful not to make a mess”  (Like saying that will help prevent any messes from being made? If only.)

6. “Why did you do that?” (“Well Mother, it was because I wanted to upset you and because I was really hoping to get into trouble.”)

7.  “Stop talking with your mouth full.”  (I usually don’t take the time to swallow my bite of broccoli before saying this.)

8. “Aw, did you hurt yourself?” (“Or is that blood dripping down your leg from something else?”)

 9. “Are your hands clean?” (My kids usually think that their hands ARE clean…therefore, they always answer, “yes”….because after all…didn’t they just have a bath last Tuesday?)

10. “How many times have I told you to stop doing that?” (Now, do I want them to give me an actual figure…or do I just want them to stop doing it?)

11.  “Do you want me to STOP this car?” (“Well, do you mean at the next McDonald’s PlayPlace…or for something else?”)

12.  “Are you ready for some dessert?” (Are they ready?  I’m pretty sure they were born ready.) 

13. “Be quiet…and tell me what is wrong.” (Okay now…should they be quiet? Or should they tell me what’s wrong? Can’t do both at the same time. Tough one.)

Having made the list…I’m not sure I’ll be able to stop myself from automatically saying these things. 

But I’ll try.
