Salted Caramel Apple Crisp

You know how I talk about my Apple Crisp recipe being so healthy you can eat it for breakfast? This particular version tips the scale from could be breakfast to definitely dessert. This is because of the fantastic caramel sauce drizzled all over the lightly sugared apple crisp, which makes this treat become very sugary and of course, more delicious than ever.

Let us pause right here to smack me in the forehead. How dare I tell you on Monday to cut back on sugar, then post a sugary recipe on Wednesday? I have no explanation or excuse. It’s fall, I have lots of apples, I took this recipe idea to our church fall festival and everyone loved it, this idea is a very easy one to execute, um, um… <— that was me, not giving explanation or excuses. I’m stumbling all over myself here.

Well, do cut back on sugar. But if you have apples, need to make a fantastic dessert to share with others, and want something easy to make, here is a recipe for you. And if you are being a good girl (or boy) and cutting back on sugar like that one lady once encouraged (I have such a sheepish look on my face right now) – just take a couple nibbles of this and hand the rest over to…. See. I can not even finish writing this.

Here’s a naughty recipe for you. I am so, so sorry for posting this.

This dessert is super easy, especially if you happen to already have Caramel Sauce made. When I made this last week, I had a jar of caramel sauce in the fridge, so I just warmed it up and drizzled it over the top of my fruit crisp. Easy and awesome!

Ingredients
  • Crisp:
  • 5 cups sliced apples
  • 2 Tablespoons sucanat or brown sugar
  • 1 teaspoon ground cinammon
  • Crumb Topping:
  • ½ cup rolled oats
  • 2 Tablespoons sucanat or brown sugar
  • ¼ cup melted butter
  • Caramel Drizzle
  • ½ cup sucanat or brown sugar
  • 2 Tablespoons butter
  • 2 Tablespoons cream (heavy whipping cream)
  • ¼ teaspoon vanilla extract
Instructions
  1. Stir the fruit together with the sucanat and cinnamon. Place mixture in a small baking dish (8×8 inch).
  2. To make the crumb topping, mix together oats, sucanat, and melted butter. Sprinkle crumb topping over fruit mixture. Bake in a 375° for 30-35 minutes or until fruit is tender and topping is golden brown.
  3. To make the caramel drizzle, place sucanat, butter, and cream in a small saucepan. Stir over medium heat until butter is melted and ingredients are well combined. Remove from heat. Stir in vanilla. Drizzle hot caramel sauce over baked Apple Crisp. Sprinkle with sea salt. Serve warm.

Gratituesday: Apple Time

At church yesterday, a dear friend stopped me to say, “Laura, if you want apples, I’ve got a tree full. Come help yourself!” And so, as soon as we got through the majority of our school work today, three boys and I headed out with bags and boxes. Below, you will see a big apple tree…and three sets of legs.

We didn’t have much time, but the four of us picked fast and furious. Within a half hour, we had 2 big fruit boxes and 5 paper grocery sacks filled!

You can guess what I’ll be doing the rest of this week. Applesauce, apple pie filling, apple crisp – oh yeah. Our house will be smelling good. Our Victorio will be getting a workout. Our cinnamon supply will dwindle.

What a blessing to be supplied with so many apples. Having the chance to pick them with my boys on a bright sunny day was glorious!

It is a fact that Homemade Apple Crisp and Homemade Caramel Sauce are a great combination.

A Recipe, A Giveaway, and Oh Yeah – A Menu Plan

Welcome to my very long post. I’m not sure if this is called multitasking…or if it’s called the best way to overwhelm your audience. Maybe it’s simply called Laura is trying to play catch-up. Yes, apparently I’m trying to kill three birds with one…post.

The Menu Plan:

Sunday, July 11
Oatmeal, pears
Cheddar ranch burgers, corn on the cob (while we watch the World Cup finals!)
Bean and rice bowls, fresh pineapple

Monday, July 12
Whole wheat waffles
Grilled cheese sandwiches, tomato soup, carrot sticks
Venison roast, potatoes, carrots, gravy

Tuesday, July 13
Scrambled eggs, oranges
Homemade pizza, grapes
Crunchy ranch chicken, stir fried rice and veggies

Wednesday, July 14
French toast, blueberries
Tuna on tomatoes, crispy cheese crackers, fruit kefir smoothies
Chicken fried steak strips, mashed potatoes, gravy, green beans

Thursday, July 15
Mini apple pies, cheese
Corn dogs, watermelon
Egg/turkey sausage/hashbrown casserole, orange muffins

Friday, July 16
Peanut butter honey toast, applesauce
Popcorn chicken, green beans
Sloppy cornbread, strawberry-peach slushies, peas

The Recipe

Back when I threw out the question about grills, Christy left a comment about how she makes Apple Crisp on the grill. I asked her for the recipe…and she kindly sent it to me. Doesn’t this sound SO good?

Apple Crisp on the Grill

In a bowl, mix together the apples, cinnamon and flour. Coat well, and add apple juice and sugar/or honey. Mix in with apples and fold in until mixture is combined. Place in an old metal bread pan or two disposable pie plates.

5-6 apples diced w/skins on (Adds color and extra vitamins)
2 T Sugar or honey
2 T. Apple juice
1 t . cinnamon
2T. whole wheat or AP flour

Topping:
1/4 c. whole wheat flour
1/4 c. rolled oats
1/4 c. butter (cold is good)
3 T . Brown Sugar
1 t. cinnamon

Mix topping ingredients together, and crumble evenly to the top of the apples! Wrap tightly in foil.

Christy says, “I put the crisp on the BBQ on low, at the same time as I I put on my potatoes, followed by the vegetables, then the burgers! When our main course is ready I turn off the heat, and let the crisp finish, and let the juices get nice and thick. The smell is amazing and brings a touch of fall to the air” :)
