How to Cook Beans in the Crock Pot

Cooking beans is crazy easy. It’s remembering to soak them the night before that is the hard part.

My morning brain and my night brain are two completely different beasts. My morning brain is like, “Wooooo yeah! We gonna cook all day and do school work with the kids (let’s do art today!) and organize ourselves completely and make all the phone calls and make 20 quarts of applesauce and finish the laundry and write two blog posts! Let’s do this!”

As the days wears on, I knock out about three of my twenty lofty goals (because my time and energy always run out before my to-do list ends –  and also because I hate making phone calls). After a full day of thinking hard and working hard and loving hard, my night brain is like, “I’m not speaking to you right now.”

This is why it is hard to soak beans.

The irony is that I never forget to grind coffee beans at night to put into my coffee pot for easy coffee making the next morning. Obviously, I have my priorities. Perhaps my two bean worlds could collide and I could let my coffee beans trigger a reminder about my pintos? It only makes sense.

On the rare occasion I do remember to soak beans, I feel so accomplished when I get into bed at night. Forget all the other stuff I did for 15 hours all day long. I totally put my beans in a pot with water! I am so very amazing!

Once the beans have been soaked, we can put them into a crock pot to cook all day for our dinner that night.

1. At night before bed, put about 4 cups of any variety of beans into a pot with 6-8 cups of water.

2. Splash in a little vinegar. It’s supposed to help with the toots. I offer no guarantees.

3. Let the beans soak overnight.

4. Strain and rinse them in the morning. Put them into a crock pot and cover them with fresh water.

5. Add a couple of chopped onions to the post for flavor. This is optional but yummy and recommended.

6. Cover and cook the beans on low for 8-10 hours or until they are tender.

Make Healthy Choices Easy For Your Family

I’ve told you how much my kids love corndogs. And how I still love Dortitos. And how, if given the choice, my kids would choose the candy over the good stuff.

Oh look. My family is normal! (Normal is relative. Thank you for your support.)

This is why I have to be strategic when putting food on the table for meals and snacks. Yep, sometimes I offer chips. So be it. But in an effort to fill us all with as much nourishment as possible – as easily as possible – these are the tricks I’ve discovered through the years.

I’m not about to become a short-order chef. But when I know I’ll be serving a fruit or veggie one of my kids doesn’t love, I’ll always serve another one or two he does love. Then I don’t have to fight a battle that doesn’t even make sense. After all, even I don’t love every single veggie on the planet (sorry jicima, I tried). 

Serve the Healthy Choices on a Plate

This one may sound silly, but the truth is that the easier I make the food to grab and eat, the more my family will eat. Last week I got out jars and bowls filled with little bits of fruit and raw veggie leftovers from the past couple days’ meals. Had I put them on the table as-is – which would have meant that my kids would have had to reach farther across the table and down into jars to access the food – I know without a doubt that they wouldn’t have eaten as many fruits and veggies. Instead, I dumped everything out of the jars and made a big platter of the fruits and veggies for the table. The munching started even before I was ready to call everyone in for the Potato Soup meal. Bingo. My plan worked.

Assign a Number

Often when there is a plate of healthy grab-and-eat foods, I’ll tell my kids, “You each need to eat at least 8 foods from the plate.” Then Malachi says, “What if we eat 10, is that okay?” Smarty pants. Again, some of the foods on the plate aren’t my kids’ favorites, so they don’t even have to touch those and it doesn’t matter as long as they eat at least 8 (or sure, 10).

Healthy and Delicious Should Happen At the Same Time

What I love about healthy food is that it is so yummy and flavorful – naturally. But if a fruit is not in season, it’s not going to taste as good – so choose accordingly for the best chance at your family loving the food choices. Also, be sure your family doesn’t equate the word “healthy” with “dry, boring, and flavorless.” As for me and my household, we will avoid rice cakes at all cost and instead make delicious and flavorful dishes and snacks with herbs and spices, milk, cheese, meats, fruits, veggies, real butter, sea salt, and coconut oil. Real food is what deliciousness is made of.

Serve the Favorites – the Healthier Way

We all love pizza, tacos, hamburgers, fries, and did I mention corndogs? Sometimes we splurge on the not-so-good-for-you variety. Mostly though, it is less expensive and tastier to make all of these favorites with our own wholesome ingredients. Have you ever made homemade fries? On my stars. And corndogs? Gratituesday: Why I Will Always Have Coffee in My Fridge

Remember that one time my oldest son graduated from high school and moved all the way to the other side of town to the college dorm? 

I am one spoiled mama, that’s what I am. While Asa is super busy (16 mostly upper-level credit hours plus work study) and super involved (soccer, choir, club, and everything else fun he can squeeze in) and is barely getting any sleep – every once in a while we do get to see his face. I love those moments. 

We get to see Asa at church most Sundays. We go to his home soccer games and the away games that are close-by. He comes home to do laundry every week or so. I feed him whenever a meal at home can be worked into his schedule. Sometimes he referees one of his brother’s soccer games. See? I am super spoiled. I know many moms who said goodbye in August and won’t see their son or daughter again until Thanksgiving or beyond. I’m blessed to see my boy here and there. 

We’re adjusting to life with just three boys at home. We’ve re-vamped the chore list and shuffled around beds in the boys’ bedroom and even figured out how to play games and watch movies without Asa being here. <— that part was so weird and hard at first. “We can’t watch that because not everyone is here!” had to be replaced with a sniff from Mom and an “I guess we’ll watch that without Asa.” Who knew that would be a tough adjustment? (It’s a “We love our family time” thing. That’s when we miss him most. That and when it’s his turn to take out the trash.)  ;)

Do you remember what it’s like to be a college student? We all stayed up way too late most nights and still got up for early morning classes. Somehow we survived. Now that I’m 42, my body is like, “It’s almost 9:45 and I might pass out if I don’t go to bed soon.” But 9:45 pm is still mid-afternoon for college students. That’s the time they have meetings, write papers, and hang out with friends. Night life in the dorm begins at midnight. But still there are 8:00 am classes. This is what motivates a college kid to begin drinking coffee, am I right?

So guess who likes coffee now? 

It happened like this: 

Asa’s girl, Brittany — Yes, Asa has a girl. Has had for over a year. I’ve respected her/their privacy by not going on and on about her here, but then I asked and she said it was okay so there you go — Anyway…Brittany has liked coffee shop coffee for quite some time. Asa teased her about it until the morning after the twelfth night in a row he hadn’t gotten enough sleep. That’s when he said, “I sure could go for some coffee” and she fell out of her chair. (See, this is why people shouldn’t give me permission to write about them on my blog.) 

She didn’t fall. She just hopped up and ran to our local coffee shop.

Long story short(ish) – now they both love fru-fru coffee but aren’t enjoying paying high prices or drinking oodles of sugar. They have loved my Frappes when I’ve served them, so recently when they were here, I said, “Anytime you want coffee, text me. My coffee will cost you nothing and it’s not full of sugar (plus then I’ll get to see you both which will make my day so please want coffee often and text me daily).”

I will stop here and tell you the specifics of my favorite way to make a delicious Frappe, because everyone needs to know this.

How To Make an Amazing (Much Healthier) Frappe

1. Grind some of the best coffee beans in the world. (I discovered these beans from Guatamala and I can’t stop loving how good the coffee is.)

2. Brew coffee as normal or make some via the cold brew method. By default, I usually brew coffee to drink in the morning, then cool and refrigerate leftovers to use in Frappes.

3. Make coffee ice cubes. 

4. Make Chocolate Frappe as directed here. Or this: Put cold coffee, a few coffee ice cubes, some cream, and a few squeezes of this amazing stevia sweetened chocolate syrup into a blender. (Note, that stuff is not cheap, but is still much less expensive and absolutely healthier than coffee shop coffee, so I grab some when I have Amazon or Vitacost credit.)

5. Blend until frothy and serve.

Starbucks is jealous of how delicious this is. Asa, Brittany, Matt, Justus, and Elias all love this drink. I’m still in the “plain coffee with cream” camp because it is so delicious as-is. It is so much fun to drink coffee with my people! (Malachi will come around, and for now will stick with hot chocolate.) 

The above combination of ingredients also tastes delicious as a hot drink (minus the ice cubes, I hope that was obvious). This is why I grabbed to-go coffee cups with lids because it is getting chilly outside and cold frappes for the college students probably won’t cut it much longer.

So there you go. I will always have coffee on hand so that I’m ready to say “Yep!” whenever I get a “Can we come get coffee?” text. For the record, I will also always have food to warm up (do not ever question this), fresh fruit, boxes of kleenex, an assortment of natural remedies, and if ever there is a request that I cannot immediately fulfill, I will put it on my Walmart list because I can’t even help it.

Cold Weather Equals Dry Hands? I Don’t Think So.

Last week I sat in the sunshine in a tank top. This week I got out all my winter clothes and put on four mis-matched layers to go freeze through two soccer games. This is fall in Nebraska.

Easy Raspberry Pancake and Waffle Syrup Recipe – Two Ingredients!

Easy Raspberry Pancake and Waffle Syrup

I just priced it. An 8.5 ounce bottle of Raspberry Syrup costs $6.99. But neener-neener, I just made some for pennies.

Now granted, I got the raspberries for free – although we did pick them ourselves – and time is money, so there’s that. We got fresh air, sunshine, time with friends, and a bit of a workout while picking (swatting bugs) – so I’m going to go with priceless on this endeavor.

Friends, let us not ever pay seven bucks for a tiny bottle of sugary syrup. Let us, instead, save oodles of money by making our own. Let us keep the ingredients healthy. Let us drizzle this good stuff all over our pancakes and waffles, and even top it with homemade whipped cream. Then let us rejoice together at the amazing deliciousness of this treat.

Easy Raspberry Pancake and Waffle Syrup - Only Two Ingredients!

Check out what I finally, finalllllly set up for you here! I seriously should have done this five years ago, but by default it fell low on my to-do list. Therefore, I skipped some housecleaning this weekend and got this done. Seeing as cleaning isn’t my fav, this to-do list swap was perfectly okay with me.

Ingredients
  • 3 cups fresh or frozen raspberries
  • 2 Tablespoons sucanat
Instructions
  1. In a saucepan, stir raspberries and sucanat over medium heat for about 10 minutes, stirring occasionally until the berries are tender and the ingredients have formed a syrup.
  2. Serve warm over pancakes or waffles.

Hope you are enjoying fall weather, fall food, and fall um…what else? What do you love about fall? I’d have to say it’s all pretty fun except for the way fall soccer season makes our shoe closet smell absolutely terrifying. Ask me how I felt when I realized that all of the York College cheerleaders came into my living room and walked right by the open – OPEN – closet door before I realized that one of my boys had left it that way. Messy closet aside, I just hated that they had to be put through the torture of breathing in the green cloud. No one died, and we are grateful.

One of my boys said that he feels it’s best to leave the closet door open so that it can air out. This is a great idea except for how that creates 3,000 square feet of stink throughout our entire house (notice the double meaning on the word feet there). SHUT THE CLOSET DOOR already. Or maybe burn the shoes.

Cute Clothes and Encouragement. Hey, Moms! This is For You!!

You know those days when you’ve been up-and-at-em for hours – but you still haven’t made it back to your room to actually get dressed? And then how on that very day someone drops by and gets to see you in your jammies? And then later that same morning someone else stops by and you’re still in your jammies, but by then you’re like, Whatever. At least I brushed my teeth.

Yeah, that happened to me this morning. It actually happens often around here. I know the whole “get dressed down to the shoes when you first get up in the morning” advice works well for many and would help me avoid meeting people at the door in my fleece polka-dot pants – but that method simply doesn’t work for me. I roll out of bed early and seek quiet time in my chair with God right away (necessary so that I won’t commit murder later in the day or otherwise think that the success of my day is up to me alone). Then I make breakfast. Then we start school. Then I work out. I really don’t want to get dressed for the day until after I’ve had my workout.

For some reason I thought maybe you needed to know all of this.

Anyway, the two people who stopped by today both happen to be dear friends who think I’m adorable in my pj’s, and by that I mean that they love me no matter how silly I look. So now let’s talk about clothes and how hard moms work (because this segue it just makes sense).

Fun and Encouragement For You!

I feel no guilt about jammie pants at 10:30am, and if I wanted, most days could be yoga pant days or the like because we school from home and I work from home. Clothing is optional (well not that kind of optional – oh, you know what I mean). But I’ve noticed a big difference in yoga pants days vs. cute jeans days – in my mood, in my productivity, in how I interact with my husband – everything. I like dressing in actual clothes (after my morning routine, workout, blah blah blah). Cute clothes are fun. 

Ladies – I’m not going to go completely “do this because you’re worth it” on you. But I am going to suggest that there is a lot to be said about taking care of ourselves in all kinds of ways. Eat well, drink water, exercise, spend time with Jesus, and most days – try to put on a cute outfit.

Cute is relative. Your cute is your cute – so you rock that cute outfit, girlfriend! Be comfy (oh my goodness, be comfy), but go for the cuteness. It can be a game changer in your day!

40+ Pumpkin, Apple, & Cinnamon Recipes! {How I’m Stock-Piling for Fall}

I’ll give you one guess as to my favorite thing about fall.

Yep! Food, food, food, food, food. Different seasons bring on different foods, as do different special events and holidays. This should, by the way, make us super appreciate how blessed we are to have such variety and bounty. I can’t even imagine what it’s like to eat the same two or three foods day after day, all year long, because those are my only meager options. We are spoiled by our vast food choices and we often still complain. If you ever hear me say, “Oh I’m so overwhelmed because I have so many apples and tomatoes that I need to put up” just shake me.

(This perspective seeking heart-check is brought to you by yours truly – after I spent an evening at our local mission with a homeless single mama and her 3 year old twins and 2 year old. It reminded me that I have soooo much! Also, my boys and I are reading Louis Zamperini, who, among other things, was lost at sea for 28 days then a tortured prisoner of war for a year and a half – so I vow to never complain again. Also, there’s Gladis. I have absolutely nothing to complain about. But if/when I slip up and do it anyway – call me out on it. I’m serious.)

So back to fall food and all the happiness that comes with it. My kitchen is spilling over with amazing foods and it makes me so excited. I love summer like you wouldn’t believe, so fall with its cinnamon deliciousness certainly softens the blow of “brace yourself, winter is coming!” (Not that I’m going to complain. Do I or do I not have closets full of blankets and sweaters? I do.)

Right now, I am in fall food stock-piling mode. We’ve been picking raspberries as much as we can. Apples are everywhere. It’s pumpkin time. I guess I’m finding myself shifting in thought as to what foods I want to keep on hand for fall, winter, and holiday cooking. Here are my top priorities:

Tomato Soup

Our favorite Tomato Soup recipe is easy and super good. When we run out of my homemade soup, I’ll buy a case of Pacific Organic Tomato Soup because I really love having it on hand for casseroles or simply to warm up to eat with grilled cheese sandwiches. So yum!

Pumpkin Puree

This is how I easily cook whole pumpkins to have inexpensive pumpkin puree on hand. Sometimes I buy a case of Organic Pumpkin Puree through Amazon when the price is right. See list below of our favorite pumpkin recipes!

Of course. This is a fall must-have. I buy a one-pound package from Azure Standard. I also love the Cinnamon Sticks from Olive Nation.

Apple Pie Filling

I almost always have great sources each fall for free or inexpensive apples. One of my favorite ways to preserve apples is to prepare pie filling then freeze it. If I have time or a full freezer, I will instead can the apple pie filling. I can then easily dump the prepared filling into a Whole Wheat Pie Crust or easier yet – make Apple Crisp.

Applesauce

Having plenty of applesauce on hand is awesome for so many reasons. It’s a great side dish or snack, and it’s also great to bake with. If you haven’t tried Applesauce Bread, well, it’s fall. You need to make Applesauce Bread.

My favorite (and easiest) way to make applesauce is with a Victorio. That tool makes my work so much less work-ish!

It’s soup time, so having veggie loaded broth prepped and in my freezer is so helpful. Must reads: How to Make Beef Broth and How to Make Chicken Broth.

5 {Easy!} Real Food Breakfast Plates for About $1.00 Each

Here’s what we’re going to do. We’re going to put together five different real food breakfast plans that are super simple and cost about $1.00 per plate. We’re going to save money, save time, and eat well…all at the same time.

Confession time – my family of teenage boys eats BIG. Three of my boys cannot eat these foods for $1.00 because they eat such a freakishly large amount of food in one sitting. I do all I can to keep our costs down, but their plate quantities are something else. So just know that when I say $1.00 per plate – we’re talking about normal people plates. Not active, growing, hungry all the time, teenager people plates. (Not that my boys aren’t normal. But just, you know.)

Other Disclaimers: Your costs and my costs are not going to match up exactly. Fruit prices fluctuate, so I recommend price-matching (if it is an option for you), ordering from Bountiful Baskets or Azure Standard (if it an option for you), and buying in season and on sale.

5 Real Food Breakfast Plates for About $1.00

1. Fried or Scrambled Eggs, Whole Grain Toast with Butter, Fruit

I love that this meal can be prepared and put on the table in such a short time – and that is so packed with nourishment from protein to vitamins to minerals.

2. Oatmeal with Fruit and Nuts

Make this inexpensive meal easier than ever by making ahead Instant Oatmeal Packets or Frozen Oatmeal Cups. Add any fruit you have, whether fresh, frozen, or freeze-dried.

3. Muffins, Eggs, Fruit Smoothies

Make muffin batter ahead as described here, then bake in the morning. So easy! Scramble or fry some eggs. Throw frozen fruits into the blender for a smoothie. Voila! Our favorite smoothie recipe is: Pineapple Mango Smoothie. It is so delicious! We also love Green Machine Milkshakes and Creamy Orange Coolers.

4. Homemade Grape Nuts Cereal, Fruit

This is super easy to make ahead of time, and the cereal is very filling! Throw berries into your cereal bowl or eat fresh fruit on the side. Need some protein to finish this off? How about a hard boiled egg? Perfection.

5. Ham and Egg Breakfast Bowls, Fruit

My family can’t get enough of these, and you can make them according to your veggie preferences. These can be made ahead and re-heated in the morning if you like. They are great for a grab and go breakfast!

The Only Thing I Know About Parenting

What do you do when your kids disobey? When they are picky eaters? When they aren’t sleeping well? When they are defiant? When they aren’t getting along with one another? When their attitudes are ugly? When they make poor decisions? When they talk back? When they don’t talk enough? When they ask hard questions?

You know what I thought when I was a kid? I thought my parents knew all the answers. They were the grown-ups. Grown-ups knew all of everything.

Now that I have been a parent for 18 years and have had to answer too many hard questions while raising four uniquely amazing individuals, I know the truth. I won’t speak for every parent, but here’s what I know about myself: I’m winging it here. I mostly don’t know what I’m doing. There are too many decisions and too many difficult questions. My answer all too often is a solid I…don’t…know.

I felt this when each of my kids were babies, when they were toddlers, when they were preschoolers, when they were elementary age, in middle school, turning teenager, becoming more independent, and now I’m excited to begin learning what it means to be a mom of a kid adult in college. Throw into the mix that what works for one does not necessarily work for the others because of that blessed thing we call individuality. This leads me to share what I do know about parenting – the only thing I know.

God has to do this for me. Not with me. For me. Thinking that God is merely by my side on my parenting journey leads me to believe the lie that I must be more than I was created to be. Instead, I can confidently embrace the fullness of who He is as sovereign Lord of my children. God, be for my sons all that I cannot. Protect them, lead them, teach them. They are yours. I trust you.

I am very willing to be God’s tool in this process because these babes are my very heart beat. My love for them is fierce, which matches my insatiable desire to see them grow humbly into Christlike servants, leaders, spouses, and parents.

As with everything else I do in life, as I walk this parenting road, my confidence cannot be in my self. When I find myself at a loss with how to wisely and consistently parent my sons, wondering where I am and how in the world I got here, this is when I know that I am exactly where I am supposed to be.

It is this place that I recognize that God has a plan for each of my children and He will carry it out. This is where I remember that my job is to love them, care for them, and train them – but not save them or attempt to be God to them. This is when I realize that I am to point my children to the One who saves – to the God who has good works prepared in advance for them – to the Savior who already won the victory for them.

I parent best when I’m on my knees. I say the right words when I’m letting the Spirit speak. I love my children fully when I embrace the Truth of the One who loved us first.

When we ask for wisdom, He provides. When we surrender, He reigns. When we let God, He is.

That is what I know.

Last week was a fun food (and cat) week at our house. That means that we’re eating like kings (and queen) this week. Check out these raspberries we got to pick (for free, oh my goodness, thank you friends with oodles of raspberries):

That had to have been $30 worth of berries if we were to have bought them at the store, and these are by far superior quality! There are more where those came from, so we’ll be heading back to pick again this week. We’ve been eating them to our heart’s content, but look what I made with the last few of this batch:

It took five minutes of brainless work to make that goodness for our Quick Mix Pancakes this morning.

In other (free and plentiful) fruit news, our neighbor has been sharing fresh peaches with us. Man, this time of year is delicious. We’re freezing most of these and making a lot of Peach Milkshakes.

Tomatoes are doing great for us, though not really great enough to make sauce and can it this year. We’re just enjoying them with our salads and as side dishes.

Those are my Easy {Low} Sugar Cookies you see there. They have nothing to do with the tomatoes except that they made it into the same picture. That is also a juicy steak on the plate with the tomatoes. This fall, we’re gonna grill until we can’t grill no more (aka when it gets too cold to stand at the grill).

I finally got another Bountiful Basket order last week. I’ve been unavailable during every delivery day for several weeks, so it was awesome to be a part of it again. I loaded our kitchen table with fruits and veggies! (And also some Whole Wheat Bread for our soccer trip sandwich convenience.)

This plate was too pretty to ignore, so I snapped a shot before I handed it to Matt. (He’s used to it.) That is Creamy Salsa Enchilada Casserole from Lesson 2 of the Let’s Do This! eCourse, in case you were wondering. Of course I made two casseroles that day so we could eat one and freeze another.

We just got a load of apples delivered to us from “the Apple Man” also known as “the Honey Man” also known as “our friend with the orchard and honey bees.” It is always a joy when he and his wife show up on our porch. I help disperse the apples to friends, and we all make loads of Homemade Applesauce.

Oh hey look – it’s Wiggams (and Malachi). They like each other just a little bit. I am so happy to share that I saw Wiggams doing her job of pouncing and eating in our back yard last week. I was both grossed out and proud, but mostly proud (and pretty grossed out). Yay, Wiggams! This is why we kept you. Plus, we can’t help but love you. Who knew?
