Make Water Kefir (with a giveaway!)

Water Kefir is something I’ve been wanting to make for a couple of years now, I just needed to get a little more comfortable with “culturing” first. I feel like I’ve about mastered buttermilk, yogurt and milk kefir now…so I decided to try my hand at water kefir.

Here’s why I’ve been excited to try Water Kefir:

  • It’s super good for your digestion.
  • You can make different flavors and varieties.
  • It can take the place of soda (pop) as a healthy alternative!

Yeah, that’s probably the real reason I wanted to try Water Kefir. I gave up all forms of soda six years ago and I would love to drink something fizzy like this that’s GOOD for me. I’ve also been excited to make this as a fun and healthy drink for my family.

I received water kefir grains from Cultures for Health a couple of weeks ago and got started on the process. It’s not one bit difficult to make water kefir, you just have to baby your kefir grains for a little while until you get used to the process. I’m brand new at this, so I’m still getting used to it!

Here are my re-hydrated kefir grains all ready to go!

This is my experiment with making “grape soda”. It’s so-so. I’ve gotta keep playing and improving!
Mine’s not as bubbly as I would like it to be yet. But I’ll get there, because I’m all about the fizz. :)

I wanted to be sure these were recipes that could be used by everyone at anytime, so that none of us have to turn somersaults to find “special gluten free” ingredients many of us have never heard of. 

This way, even if you aren’t used to cooking gluten free foods exclusively, if you are hosting someone or feeding someone who requires a gluten free diet, you’ve got some great recipes that you know will be safe for them to eat! I love the idea of making hospitality toward our friends or family with this food sensitivity a simple possibility!

You CAN Do This Sourdough Thing! (Review and Giveaway from GNOWFGLINS)

A couple of years ago, I wrote an entire series on making Sourdough Starter, walked you through the day-to-day process, took pictures of my little sourdough bubbles and helped you get off to a great start on your sourdough!

I wasn’t sure whether to giggle or get weepy when I saw that section. I think I kind of did both. Yes, I did the weepy-giggle thing. It was cute.

A Natural Deodorant that WORKS! (Giveaway from Pure Miessence)

Apparently this is my week to talk about personal topics. First yeast infections, now deodorant. Well now, you’ve got to love a good discussion about armpits. :)

But, like always, I must give my honest opinion about products that are sent to me to review. So I was a little bit worried. What if this deodorant didn’t work for me?

  1. Instead of figuring out how to nicely write a negative review…I get to write a positive review! I don’t even have to try hard.
  2. Hoorah…it’s a natural deodorant that WORKS! Do you know how exciting it is that I have found a natural deodorant that works?!?!!?

You may recall what I’ve written in previous posts about the deodorant I use. I learned long ago that antiperspirant and aluminum were to be avoided when choosing a deodorant, so I’ve been using the deodorant that Tropical Traditions offered. While the deodorant from Tropical Traditions works okay, it only really worked for me for part of the day. By the end of the day, I would often need to wash and re-apply. I thought that was just the best I could find in the world of natural deodorants. But there were definitely times I would feel a little self-conscious.

Gratituesday: Weekend to Remember (+ a Giveaway!!)

I’ve been so excited to share with you about our weekend!!! Matt and I were blessed to have a getaway at the Weekend to Remember marriage conference – I cannot recommend this conference highly enough!

We haven’t had a weekend away, just the two of us, since the year two-thousand-and-I-have-no-idea. Yes, it’s been a while. We love being with our kids. Still, having time for just to two of us, time to really focus on our relationship and being the most we can be for God…it was wonderful. 

The Weekend to Remember is an incredible ministry of Family Life (maybe you’ve heard of them?). These people are serious about saving marriages, blessing marriages, building strong marriages, preserving God’s design for marriage! 

There were over 500 people at the conference this weekend. To see that many people dedicated to making their marriages strong…it was so encouraging. I got teary-eyed seeing one couple at the end of the conference. The last session was over. It was time to pack up and go home. And this couple.  They were hugging with a renewed joyand love for one another. Right there with hundreds of other people walking by. You could tell that this couple forgot anyone else existed in the world. They were in each other’s arms and they were at peace. It was beautiful and a blessing to see. (I’m teary-eyed again just thinking about it.)

I loved how the Weekend to Remember speakers and materials are so down to earth and real. They had Matt and I talking about all kinds of things that were good and helpful. Ooh, that was my favorite part of the weekend. Spending time talking and talking and talking to Matt about everything that is important in this life. Hours and hours of talking. When do you ever get that as a couple?

I’m so thankful we had this opportunity. If you have a chance to attend a Weekend to Remember conference…do it! You won’t regret it! Couples have found healing for their marriage relationship…it can be life changing!

Make Your Own Cultured Buttermilk, Yogurt and Kefir (a Giveaway!)

I love how much money it saves and how easy it is to make your own cultured dairy products! It really is as simple as putting the live culture into the milk and walking away. (Well, you do want to put the lid on first.)  Here are my posts which explain how to make buttermilk, how to make yogurt and how to make kefir. You can do this!!

Once you’ve made a batch of any or all of the above, all you have to do to make subsequent batches is to pour the tail end of the previous batch into your fresh milk and start the process all over again. It’s easy, it saves money and it is oh so healthy! These cultured dairy products are so good for your digestion. Mmm, and yummy too!

Help for Eczema! (a Giveaway from MadeOn Skin Care Products)

Healthier Coconut Cream Pie (and a Tropical Traditions Baking Supplies giveaway!)

It’s “pie time” right? Otherwise known as “the holidays”. I know we typically think about pumpkin pie (er, squash pie) right now, but Tropical Traditions just sent me a fabulous big box of baking supplies and I decided that a Coconut Cream Pie was in order. And just you wait until you finish reading about this recipe because you’ll have a chance to win an even bigger box of baking supplies! I couldn’t be happier for you! I received from Tropical Traditions:  Organic Coconut Flour, Organic Palm Shortening and a big bucket of Organic Shredded Coconut. See, told ya I just had to make a Coconut Cream Pie.

With my Organic Coconut Flour, I could have made a gluten free pie crust, which is so cool. I opted to use this Whole Wheat Pie Crust recipe instead, using the awesome Organic Palm Shortening. I’ve said it before and I’ll say it again..I LOVE TROPICAL TRADITIONS PALM SHORTENING. Among other things, it makes wonderful, delicious, healthy, flaky pie crusts!

So, to make a Coconut Cream Pie, you need a pie crust. Bake it and let it cool. 

For the filling, I used my Creamy Vanilla Pudding recipe and  threw in some shredded coconut.

Coconut Cream Pie FillingYum

2 1/2 cups milk
3 egg yolks (save your egg whites in a separate bowl for the meringue!) (yes, that’s “muh-rang”, not mar-in-goo”)
1/2 cup real maple syrup (grade B is best for you) or honey
4 T. arrowroot powder
1/4 teaspoon sea salt
1/2 cup shredded coconut
1 Tablespoon butter
1 teaspoon vanilla

In a medium saucepan, whisk together milk, egg yolks, maple syrup, arrowroot powder, salt and shredded coconut. Cook over medium heat, stirring constantly with a whisk until pudding begins to thicken. Remove immediately from the heat, and continue to stir until pudding is creamy. Add butter and vanilla and continue to stir until mixed. Pour this mixture into your baked and cooled pie crust.

You saved your egg whites, right? Whip ’em up good with beaters.

You can stop whipping when they look like this:

Add about one Tablespoon of real maple syrup to the beaten egg whites, beat them just a little bit more, then spread the meringue onto the pie. Sprinkle a little bit more shredded coconut over the meringue.

Put the pie into a 350° oven for about 10 minutes or until the tips of the meringue are slightly browned. Watch it carefully so that it doesn’t over-brown!

I’ve been reading your newest book, Friendship for Grown-ups. I’ve really enjoyed how you’ve opened up and shared your story and your struggles with being real and honest about your feelings and needs with your friends.

Why do you think women are so afraid to be real and open and vulnerable with other women about their struggles and sins?

Lisa:

We feel like we’re supposed to be perfect like Jesus. We act like everything is fine because we think it’s the right thing to do. We feel like we’re letting God down if we admit failure. But when we do this, we miss out on connection and grace. Are we trying to earn salvation through works, or are we accepting that we are sinners who need grace?

I thoroughly enjoyed reading Lisa Whelchel’s latest book, Friendship for Grown-ups! I anticipated that it would be a book to encourage moms to maintain great friendships as we raise our kids. While reading this book, I felt like Lisa became my friend, even as she taught me what godly friendship should be about. A Recipe, A Giveaway, and Oh Yeah – A Menu Plan

Welcome to my very long post. I’m not sure if this is called multitasking…or if it’s called the best way to overwhelm your audience. Maybe it’s simply called Laura is trying to play catch-up. Yes, apparently I’m trying to kill three birds with one…post.

The Menu Plan:

Sunday, July 11
Oatmeal, pears
Cheddar ranch burgers, corn on the cob (while we watch the World Cup finals!)
Bean and rice bowls, fresh pineapple

Monday, July 12
Whole wheat waffles
Grilled cheese sandwiches, tomato soup, carrot sticks
Venison roast, potatoes, carrots, gravy

Tuesday, July 13
Scrambled eggs, oranges
Homemade pizza, grapes
Crunchy ranch chicken, stir fried rice and veggies

Wednesday, July 14
French toast, blueberries
Tuna on tomatoes, crispy cheese crackers, fruit kefir smoothies
Chicken fried steak strips, mashed potatoes, gravy, green beans

Thursday, July 15
Mini apple pies, cheese
Corn dogs, watermelon
Egg/turkey sausage/hashbrown casserole, orange muffins

Friday, July 16
Peanut butter honey toast, applesauce
Popcorn chicken, green beans
Sloppy cornbread, strawberry-peach slushies, peas

Saturday, July 17
Funnel cakes
Leftovers
Tacos

The Recipe

Back when I threw out the question about grills, Christy left a comment about how she makes Apple Crisp on the grill. I asked her for the recipe…and she kindly sent it to me. Doesn’t this sound SO good?

Apple Crisp on the Grill

In a bowl, mix together the apples, cinnamon and flour. Coat well, and add apple juice and sugar/or honey. Mix in with apples and fold in until mixture is combined. Place in an old metal bread pan or two disposable pie plates.

5-6 apples diced w/skins on (Adds color and extra vitamins)
2 T Sugar or honey
2 T. Apple juice
1 t . cinnamon
2T. whole wheat or AP flour

Topping:
1/4 c. whole wheat flour
1/4 c. rolled oats
1/4 c. butter (cold is good)
3 T . Brown Sugar
1 t. cinnamon

Mix topping ingredients together, and crumble evenly to the top of the apples! Wrap tightly in foil.

Christy says, “I put the crisp on the BBQ on low, at the same time as I I put on my potatoes, followed by the vegetables, then the burgers! When our main course is ready I turn off the heat, and let the crisp finish, and let the juices get nice and thick. The smell is amazing and brings a touch of fall to the air” :)
