10 Healthy and Easy Peach Recipes

If only the peaches on our tree would ripen a few at a time so that we could enjoy this juicy candy for weeks at a time. But instead, they seem to be ready all at once. Therefore, over the past few days, our family could all be seen with peach juice running down our chins as we enjoyed the most tasty peaches of the year!

Matt brought in this big bowl full, plus two more boxes. See the little bite marks taken out of some of the peaches? Dear Squirrels, You are very naughty. Over the weekend, we made two of our favorite peach recipes:  Peach Syrup and Peach Crisp. We ate peach syrup on pancakes, then froze the rest for another treat another day. The peach crisps also went into the freezer for a quick dessert when we have company.

Why We Are Buying a Freezer Alarm

It was our fifth day to feed the YC ladies soccer team. Everything had gone as perfectly as it could possibly go when feeding 30+ people dinner night after night.

I had planned Italian chicken, baked potatoes, and some veggies – and by 1:00 in the afternoon, we had the chicken in one big roaster oven and a bunch of potatoes in the other. So as to avoid heating up our house, we put both roasters outside, plugged into an outlet right by our storage room.

The storage room holds our freezers. Two freezers. Two big, full of meat, full of vegetables and fruit, full of all the food I had recently prepared ahead for busy days freezers. You can probably see where this story is going.

Around 3:00, I went and checked on the chicken and potatoes to see how they were coming along. As it turned out, they weren’t coming along at all. The roasters had both stopped working. Raw potatoes anyone?

We’ve had trouble with those outlets before, so without thinking about any other option, I blamed the issue on the outlets and had Asa help me get those heavy roasters full of food into the kitchen so that our house would be a pleasant 400° by the time a bunch of already sweaty soccer girls came for dinner. Hey, at least the food would be ready. I was so thankful I had discovered that the plug wasn’t working in time to crank up the roasters and get the food cooked.

One would think that I would have considered that a fuse had been blown. But what can I say? I had been feeding lots of people lots of food for lots of days. All I was thinking about was successfully getting through that night’s meal.

From 3:10 on, all roasters, potatoes, and chickens cooperated just fine. Dinner went great, and I breathed a sigh of relief.

Fast-forward to the next morning. I decided that I would treat my family to bacon. This rarely happens, and I knew the aroma would help everyone get out of bed cheerfully.

We shall always be grateful for this random bacon desire. It was as I went into the storage room to grab said bacon from the freezer that I noticed the light didn’t turn on. Burned out bulb? Maybe. I tried the light on the other side of the room. Nope, that didn’t work either.

And then a big ball of panic hit me in the gut. Not only were the lights not working, but the freezers were not humming. “Hum, freezers, hum!” I screamed to the silent white boxes. I opened the freezers. Nothing but icy cold silence.

This was not a pleasant way to begin my day.

I ran to the basement, looked for the offending fuse, found it, switched it, and prayed for humming freezers. Back upstairs and into the storage room – the lights went on and the beautiful chorus of freezer music greeted me.

All was saved – the freezers had kept our food frozen solid all night long. But I tell you what – this freezer alarm is looking mighty good.

Relief. Gratitude. Bacon.

I Can Now Accomodate Picky Muffin Eaters

Some like their eggs fried. Some prefer them scrambled. I am not a short-order chef. So if anyone in my family wants his eggs fixed differently than the way I have prepared them for today’s breakfast, he is welcome to go get eggs from the fridge and prepare them himself.

But what about meal options that are not so quick to make – like muffins? Well, now that we have all discovered this awesome “freeze your muffin batter” trick, it is easy to make muffins to please the masses. Or at least try to please the masses. Why is it that food they love one day they do not want to touch the next day? Oh, let’s not even go there.

Anyway, last night in preparation for this morning’s breakfast, I got out my muffin pan and filled it with ten Peanut Butter Chocolate Chip Muffin batter balls, and two Chocolate Chocolate Chip Muffin batter balls from the freezer. One of my kids really does not like peanut butter. In the past when I’ve made the peanut butter muffins, I would search the fridge for a leftover something-or-other for my non-peanut butter kid. But now? Everyone can have their muffins and eat them too.

Into the Dishwasher Go the Potatoes

Tonight’s soccer team dinner includes a baked potato (or two) for everyone. When cooking for a large crowd, I always wash my potatoes in the dishwasher. Never heard of that idea before? Read more about it here. It’s a huge time saver.

And while we’re on the subject of potatoes, I should let you know that after I wash them in the dishwasher, I’ll throw them into a crock pot to cook. (Or in this case, a huge roaster oven.)  Love how easy it is to feed baked potatoes to a crowd!

Baked Potatoes in the Crock Pot – a perfect, ready made lunch

Baked potatoes are the best!

The making baked potatoes in the crock pot idea is rocking my world almost as much as the freezing muffin batter idea. I love it when delicious, simple, and healthy all come together in the same sentence (and on our plates).

Now that we’ve started school, I really need easy lunches that don’t take long to prepare. (Which is funny to say, because it’s not like on non-school days I look for meals that are difficult and time consuming. Easy, real food cooking is the way I roll.)  The food I’ve made and put into my freezer has helped a ton. I also decided to try throwing potatoes into the crock pot on “hi” instead of “low” one day so they’d be done by lunchtime. It worked perfectly.

Then, I rewarmed some leftover roast and gravy, thinking that would taste great on the potatoes. (It did.)  We have garden fresh green beans, plus we’ve been picking loads of tomatoes and peppers. This lunch went together so easily, was very filling, and super nourishing!

It was also so pretty that I had to take a picture.

The point of this story: Crock pot baked potatoes are going to be a regular lunch around here. And the other point of this story (or rather, a reminder and encouragement):  It is very easy to add fruits and vegetables to a meal to add lots of extra nutrients. We are blessed to have access to such variety. Don’t hold back on fruits and veggies!

I Should Become a Victorio Salesman

I think I might just do it.

I love the Victorio Food Strainer so much that I may just go into business. I’ll pack a bunch of apples and tomatoes into my kids’ wagon, then I’ll go door to door, demonstrating to everyone I meet how wonderful the Victorio is for making applesauce and tomato sauce. I’ll show everyone how easy it is to set up, how much time it saves in making these great sauces, and how lovely the finished product is. Once they see it, they will hug me and thank me for sharing this invaluable kitchen tool. Then they will excitedly begin chopping some apples so that they too can easily make applesauce in their brand new Victorio.

It will be beautiful. Can’t you just picture it?

Sure, some will be skeptical. They will say to me, “Thanks anyway, but I already know how to make applesauce. It’s easy. You just have to core the apples, cook them, then run them through a blender.” And then I will tell them that as easy as that is, using the Victorio makes the process even easier and saves even more time! And I will add some exclamation marks to the end of my sentence because of how much time this will save them. !!!!!!!

Yes, it just might be my new career. But first, I’ve got to finish using my Victorio in my own kitchen to make my own tomato sauce and apple sauce…

Muffin Paper Liners or No?

As I have been talking a lot about making muffins this week, many are curious about what paper liners I use, or if I skip these and just grease my muffin tins.

I almost always use paper liners. Why?

  • For easy clean up.  I find that it’s worth spending a little on paper liners to save me much time in the long run scrubbing muffin tins.
  • To protect my food.  My muffin pans are either aluminum or Teflon, and I don’t love either of those touching our food.

What paper liners to I use?

Sometimes I buy cute ones from the store, just because it’s fun. Usually though, I use If You Care brand paper liners that I buy in bulk from Amazon or Vitacost.

Now that we know we can freeze muffin batter to make muffin baking even easier, let’s talk about how we can make them even more tasty! Today I am going to teach you how to make muffins moist and fluffy!

I love baking with whole wheat flour, but sometimes find that my muffins are a little heavier than those made with white flour. They also seem to get dry quickly (which isn’t usually a problem at my house because we eat them all right out of the pan, but still).

Recently I discovered that if I use sour cream in place of milk in a muffin recipe, I get a super moist, fluffy muffin! The switch is very easy. If a recipe calls for 3/4 cup of milk, I simply use 3/4 cup of sour cream instead. Occasionally, I need to add a bit more sour cream to moisten the muffin batter.

The first time I tried this idea (on Chocolate Chocolate Chip Muffins), I didn’t tell anyone in the family that I’d made a change. (And for the record, these were made from frozen batter that I’d set in the fridge the night before, yay!)  I served the muffins on a Sunday morning, which means that each of us were in and out of the kitchen at different times, grabbing breakfast as we had time. One by one, the boys found me getting ready for church and would ask, “Did you do something different with the muffins? They were better than ever!”

Aha! So they noticed. And they liked the change. Score!

I will be adding sour cream to muffins more often. And of course, I will forever and always be making the batter and freezing it ahead of time. Now I have moist, fluffy, tasty, healthy, and convenient muffins.

My Latest Handy Kitchen Gadget

No need to thank me. It’s what I’m here for. And that, my dear friends, is why I am so happy to introduce to you the latest addition to my kitchen:

No, not the toaster oven. You already knew I had that.  I’m talking about the ten pound dumbbell.  Ain’t she a beauty?

You see, after many uses, our toaster oven door decided not to close all the way by itself. Our food wouldn’t heat well, we were wasting energy, and something just had to give. That’s when my husband came up with the genius idea to bring down the dumbbell from our collection of weights. When placed against the door handle of the toaster oven, the door stays closed, and our food is heated properly.

I’m thinking I should paint it yellow to match the buttery color of my walls. What do you think?

A Jar in My Ceiling Fan

I’m not sure how long it was up there without me noticing it. Finally, Matt pulled me into the kitchen and asked, “Hey, have you seen the new addition to our dining area?”

Let’s see…fresh crumbs and a chunk of scrambled eggs under the table. Surely that’s not what he’s referring to. Tablecloth is the same. Scattered paper pile under my Bible, same. I give up.

“Look higher,” he suggested.

Does my husband know me, or what?

He had seen the idea online somewhere to replace our regular light bulb cover with a quart sized jar. Knowing my love for and obsession with jars, he took the opportunity to make the switch while I was out with the boys one afternoon.

Love that guy.

Apparently, it was as easy as finding a jar that fit, and screwing it in where the regular cover had been. In our case, a regular-sized mouth (not wide mouth) jar worked perfectly.

If only all of our home improvement projects were this fun, easy, and jar themed… :)
