Time for a Vanilla Shake

Are you in the middle of making a batch of homemade vanilla extract? If so…might I remind you to get your jar down out of the dark cupboard where it is hiding and give it a shake? 

I always seem to forget to shake my vanilla during the months it is extracting. My husband reminded me this week that it is time for a “Vanilla Shake”. I thought maybe he was going to take me out for ice cream…but nope. It was really just time to get down our jars of “vanilla in the making” and boogy down. 

And so we did.

How I Grocery Shop

Remember how I told you about how I grocery shop when I shared our 2011 Grocery Budget? I don’t usually buy much at grocery stores; I buy in bulk from co-ops; I purchase from local farmers. Some months I hardly buy anything, some months I buy a lot. This month, February, would be an example of me buying a LOT…and you get to witness it here today! Everything just sort of hit all at once this month, but that’s okay. There is money in our grocery budget. I just wait to spend it until I need it!

Here are a few pictures and some details about my grocery purchases this month. Some of this will last us one month. Some of this will last six months. Some of this will last for a year. Some of this will be gone before you read this post. ;)

Here is our Azure Standard food co-op order for this month:

This month’s order was a pricey one because I ordered a case of butter. See that box up there with two pounds of butter on top? There are 28 more pounds in that box. It’s a hefty investment all at once, but we go through a lot of butter and it’s nice just to have it in the freezer for when we need it. I can avoid going to the store as often this way, plus, this butter is much higher quality!

What else did I buy from Azure Standard? Well…10 pounds of oranges, three packages of frozen broccoli, 2 big bags of frozen peas, five pounds of peanuts (to make peanut butter!), a case of raw white cheddar cheese, a bottle of red wine vinegar, 10 pounds of Yukon Gold potatoes, 20 pounds of Fuji apples, a little bag of avocados, 25 pounds of whole corn (to grind into cornmeal), 6 half-gallon jars for milk and other food storage…and three jars of Hain Safflower Mayo. Yep, that would tell you that I haven’t attempted the Homemade Mayonnaise part of the Heavenly Homemakers Recipe Challenge yet. Hey, a girl can’t do everything at once. :)

My co-op order total (with delivery fee included) was $254.00…quite a bit more than I normally spend on an Azure Standard order.  It was the butter.  The cost of butter is rising I’ve noticed. My case of 30 pounds was $108. Ouch.  And yet, I’m paying for high quality butter, and this will last us a while. By “a while”, I mean that I really have no idea how long it will last us. Three months maybe? Maybe not that long. Depends on how much baking I’ll need to do.

Beyond our large Azure Standard order, we also got our year’s supply of wheat last week. Remember how last year I ordered 500 pounds of wheat? It has lasted 12 months and I still have some left over, so this time I held back and only ordered 300 pounds. :)  Total cost for my year’s supply of wheat which will make all of our bread, tortillas, muffins, quick breads, cookies, brownies, cakes, pie crusts, pancakes, waffles, and everything else that needs flour: $144.00. That’s only $12/month for ALL of our high quality, organic, whole grain flour!! Have I proven to you yet that investing in a grain mill WILL save you money? :)

In addition to all of this, I was almost out of chickens and hamburger meat, so I ordered 60 pounds of ground beef and 6 whole chickens from the local farmers we love and trust. That was a hefty (yet reasonable) price tag too:  $362.00. This meat will last us for a few months, depending on the amount of company we feed and how many times I’m in the mood for sloppy joes. :)

 

If you did the math on that, you would have found that I have spent $760 on bulk groceries (so far) this month. This isn’t including what we’ve spent on milk and eggs, or what we will spend on bananas and a few other little things that we do get at the grocery store.

Sound like a lot?! :)  Maybe. But this is how grocery shopping and spending works for us. We buy food when we need it, we don’t buy food when we don’t. We are blessed to have three freezers and plenty of pantry storage for bulk purchases. I am amazed at how much money we save by buying our food this way.

And can I tell you my little secret? I love having a wide variety of all of our staples on hand at all times. Rarely am I out of any basic ingredient, which means that at just about any time, I can cook up any recipe I have a hankering to cook up. This makes meal planning so much easier for me and helps me run my kitchen so much more efficiently.

Valentine’s Day Treats

 Matt and I hardly ever do anything “special” on Valentine’s Day…we’re a little bit rebellious when it comes to this holiday. Although one year he did “break the rules” and get me some new potholders.  :)

A few years ago when our boys were all pretty little, going along with my Valentine’s Day rebellion, I didn’t do anything at all special for the family on Valentine’s Day. I guess I thought my kids were young enough not to notice? Or I figured they were boys and that they wouldn’t really get into heart shaped sandwiches? 

What was I thinking?

That evening, they shared with me how disappointed they were that we hadn’t done anything special to celebrate Valentine’s Day. No heart shaped pancakes or anything. Wow, I had no idea that my heart shaped efforts in years past had meant something to them. I ramped it up the next year, making heart shaped everything. They loved it…manly boys that they are. And I haven’t stopped since. I’m glad they care…hopefully they’re learning to do simple, inexpensive things for their future wives. Hopefully.

The Traveling Casserole

When we travel, I always pack quite a bit of food. This takes some effort when you’re getting ready to go on a trip, but we find the work is worth it as we save a lot of money on eating out. Plus, it’s a lot easier on our systems. (Don’t even get me started.)

Aside from good ol’ sandwiches, here are some other food items that we have found travel well:

  • Pizza
  • Burritos (either breakfast, meat and cheese or bean and cheese)
  • Quesadillas (just cheese or cheese with chicken)
  • Tuna Salad with Crackers
  • Corn Dog Muffins
  • Sloppy Corn Bread Muffins
  • Scrambled Egg and Cheese Sandwiches on English Muffins (at breakfast time)
  • Breakfast Cookies
  • Chewy Granola Bars
  • Muffins
  • Fruit
  • Carrot Sticks

In January, after our 3,800 mile road trip, you could say that we were just a little bit tired of traveling and eating in the car. We’d eaten packed food, fast food, snack food and well…a few too many beans. Vegetable soup and salad from the comfort of our own kitchen had never sounded better.

And yet, just three days after our return home, we needed to make a two hour (one way) trip to one of Asa’s basketball games. Matt and I tried not to groan as we discussed our food plan for the day. The idea of eating out or eating concession food made us turn green. Packing sandwiches didn’t appeal to us in the slightest. Nothing sounded good. Even the kids, who normally think eating out or having sandwiches and chips is a big treat, curled their upper lips at us.

What to do…what to do…because we did need food.

Enter….The Traveling Casserole:

I’ve gotta say…I’d never thought of this idea before. (I didn’t think of it this time either…it was Matt’s brilliant idea.)  He dug out the very cool Pyrex Dish with Insulated Carrier that someone had given us as a gift. Why couldn’t we just make a “real meal” and keep it warm in this until we were ready to eat?

Did I mention that my husband is brilliant?

One of the boys suggested Cheesy Beef and Rice…also brilliant. Cheesy Beef and Rice is not messy or runny or gooey or likely to cause stains on basketball uniforms.

I made it, baked it and packed it up just before time to leave. I grabbed a serving spoon, some paper plates and plastic forks….tossed in some yogurt and fruit and we were good to go.

When we were ready to eat, I just served up paper plates and passed them to the back of the van. Not one bit of casserole was left at the end of the night…and not one of us was whining about having a stomach ache or about having to eat a sandwich…again.

So…all that to say…think outside the box just a little bit when packing food for trips. There is no limit to the traveling food ideas.

Except for I don’t think I’d ever want to pack spaghetti. Or anything you’d have to eat with chop sticks.

Like we ever even eat with chop sticks when we’re at home at the table?

I have no idea why I just said that.

What ARE the Seven Layers in the Seven Layer Chip Dip?

Five women friends and I were standing around after church Wednesday night talking about and planning our upcoming Super Bowl party. If you could have listened in on our conversation, you may have rolled your eyes. Or maybe you would have shrugged along with us? 

“What time does the game start?” “What channel is it on?” “Who’s playing this year?”

Clearly, we are a well informed group of ladies, always keeping up with the latest trends and world events.

One of the girls jumped in excitedly with, “No wait. I’ve got this one.” Then she told us not just one, but both of the teams playing. Very impressive. I can’t for the life of me remember what she said now.   I was just in awe of the fact that one of us actually knew.

We should have stopped talking right that minute, or at least began to focus on the food part of our planning. But no. Instead we had to discuss where we thought the teams were from. Why? Why would we do that?

It would appear that we don’t know our football geography very well. I’m not going to rat anybody out, but somebody thought the Steelers were from California. 

(Just so you know, in case you are also going to a Super Bowl party, the Steelers aren’t…from California. There is no end to the helpful information you can learn while reading this blog. I am always glad to be of service.)

Finally my friends and I moved on to territory we are well informed about:  FOOD.

My pregnant friend who was helping to plan the party suggested hinted BEGGED that someone should really make “that seven layer chip dip thing”. Hey, I’ll make anything for my pregnant friend, since she finally figured out something that sounds good.

In addition to the dip, I’m planning on taking something else fun (suggestions???) in that above pictured  football dish someone loaned me. 

And I could do a Swag Search to find a recipe for Seven Layer Chip Dip Thingy. But you all are so smart and have so many fun ideas…I decided to just ask you.

What seven layers should I layer?  Meat or no meat? Onions or no onions? Never mind. I don’t think she’ll want onions. But she does want avocado. (Don’t you love it when I think out loud?)

I’m afraid with all of your answers I’ll end up with a Twelve Layer Chip Dip Thingy. That will probably be okay though, won’t it? We will, after all, be needing a large container of dip while we visit in the background watch all the commercials thoroughly enjoy the game.

Breakfast Organization (With Some Great Giveaways!)

At the mention of my family’s Oatmeal Rebellion, many of you piped in with your ideas for quick and easy breakfast ideas. You shared some great suggestions, which made me excited to mention some more. You can NOT have too many helpful breakfast ideas in your back pocket. Although I don’t really recommend keeping your actual breakfast in your back pocket. That would be a bad situation on so many levels.

While Sunday mornings are a bit crazy as we all try to get out the door looking halfway presentable…I’m going to also venture to say that every day can be hectic at breakfast time if we don’t have a plan. My kids are hungry from the moment they wake up. One of my boys would actually eat my leg if I didn’t shove an egg in his mouth as he rolls out of bed. He is that hungry. You’d think I didn’t just feed him four helpings of dinner the night before (and a snack before bed).

One of my best recommendations for us to keep our Breakfast Time Organized is to plan ahead. But my best, best recommendation is that if at all possible…make breakfast the night before. 

If I can, I bake our next day’s breakfast muffins or bagels or quick bread while I’m making dinner the night before. Or, I’ll start my pancakes or waffles to soaking. Or, I’ll mix up a Breakfast Casserole to have ready to bake the next morning.

It’s easy really…to make breakfast the night before while I’m cooking dinner. I’m already in the cooking mode. I’m already making a mess. Might as well make a bit of a bigger mess and get breakfast baked up too, right?

Then, after dinner, we get the whole kitchen clean (LOVE our Kitchen Chore Chart!) and put our breakfast on the table for the next morning (unless it needs to go into the fridge because leaving out a raw Breakfast Casserole would be about as bad as putting your breakfast in your back pocket).

Cooking Week Recap (Complete with Ugly Corn Dog Pictures)

Well, I got a lot of cooking done last week. I don’t have a lot of food to show for it, as we did our fair share of eating last week too. But, eating is a good thing, and I was able to stash a little bit in the freezer for quick meals later on too.

I am happy to report that I was able to make everything on my list (except for the Ranch Dressing), plus a few extras. What I’m not so happy to report is that with some of the cooking…I got a little bit lazy.

Take for instance these Corn Dog Muffins. They’re so easy to make and are great to have in the freezer for a grab and go meal. My problem though came when I just didn’t feel like taking the time to cut the hotdogs to the right size. I was in a hurry and just cut them all in half (instead of into thirds). This means that the dogs did not fit into the muffin cups at all and instead just sort of sat on top of the cornbread. 

Thankfully, my family doesn’t mind eating ugly little Corn Dog Muffins, but let’s just say these fellas wouldn’t win any prize at the fair.

Nor would my Honey Whole Wheat Bread this time around. Want to know what happens when you’re too lazy to knead your bread for as long as you should knead your bread?

It get’s all funky in the oven and comes out looking like this:

Again, my family doesn’t mind funky looking bread, especially if I slice it before they notice. While making our bread, we took a little extra time to make some loaves of Cinnamon Swirl Bread – always a favorite. My kitchen helper loaded it up with cinnamon…the more the better right?

And again, I have to say…if the bread is ugly, slice it up before anyone can see it. It doesn’t look nearly so ugly when it’s toasted and has butter melted all over it…

For a snack while the boys were having an art lesson (because drawing and eating at the same time is a great way to creatively sketch animals), we had Cream Cheese Apple Dip with sliced apples. That stuff tastes SO good.

I made six pounds worth of Turkey Sausage, browned it and bagged it up for future use with Pancake Sausage Muffins and Easy Breakfast Casseroles. I can’t tell you how nice it is to have pre-made Turkey Sausage on hand to grab out of the freezer for a quick meal!!

Of course, while I was at it, I went ahead and made two batches of Pancake Sausage Muffins. We ate a batch the next morning and froze a batch for later.

Again, my lazy side took over and instead of making Mini Apple Pies, I made one big apple pie and an apple crisp. The boys decorated the top of the pie using cookie cutters with the leftover pie crust dough.

I made a batch of Whole Wheat Hamburger Buns, which is probably one of my favorite foods to have in the freezer! They’re great to have ready to pull out for Sloppy Joes or Ranch Burgers or just plain sandwiches. 

Because I had talked about stretching one chicken to make six meals…I decided I’d better cook a chicken to prove it to myself and to experiment with the best way to get six great meals from one chicken. After eating some of the chicken and broth, we still have some chicken and broth in the fridge for future meals. I’ll be working on the “How to Stretch Your Chicken” post, and in the meantime, I hope you are all picturing us in the kitchen with a raw bird, seeing how far we can stretch him…kind of like a tug of war. Just kidding…don’t picture that.  And please, whatever you do, do NOT give my children any ideas.

I made Warm Vanilla Soother one morning to go with our breakfast, so with the leftover egg whites, I made a batch of Coconut Macaroons for a friend who can’t have wheat. We did a little “quality control” before sending the cookies off, and we declared that the cookies were certainly fit to eat.

The Poptarts finally got made toward the end of the week…and there is exactly one left. These Poptarts are a hit…and I’m just sure they freeze well…but in my house, they have yet to make it to the freezer.

So what do you suppose is the loudest activity in our kitchen? Give up? It’s making Homemade Peanut Butter. Peanuts flying around in a food processor is really, really loud. Of course, then it gets even louder because my kids tend to like to try yelling over the noise. It’s a highly effective way to communicate.

With our fresh Peanut Butter, we made some Healthier Rice Crispy Treats for snacking. Then we made more (loud) Peanut Butter to fill our jar for the fridge.

So let’s see…what did I learn from my week of cooking? Don’t be lazy. Cut the hot dogs smaller, knead the bread dough longer. Don’t try to draw animals while eating apples and dip because you’ll end up with a very sticky horse. And never tell your kids you’re going to see how far you can stretch a chicken, or they’re likely to grab the bird and yank the legs off.

Lots of Food…Nothing to Eat

I stood in my beloved kitchen last Thursday looking around, trying to get reacquainted with this “long, lost friend” after being away for almost three weeks. There was plenty of food in my pantry and freezers…but it seemed there was nothing to eat. Ever felt that way? 

There are plenty of ingredients to be found, but unless my family is willing to chew on some grains of wheat with a side of coconut flakes for dinner this week…I’m going to need to get busy.

I’ve had a hard time deciding whether to spend several hours cooking…or several hours (days?) wading through all the emails I  have now become so much more behind on after being “on Christmas vacation“. 

Slowly but surely, I’ve been doing both. That’s why there may be a little bit of coconut oil or ketchup on your emails when I finally get back to you to answer your questions. Here’s a napkin just in case you need it.

After this week, I’m hoping my kitchen will be re-organized and functional again. The Christmas dishes will be put away until next year, the fridge will get a good scrubbing…and I’m gonna cook and bake and fill my fridge and freezer with some healthy convenience once again!

Snowman Pancakes

We haven’t yet had a big, hard snow fall in Nebraska. I’m sure it’s coming sometime. The boys are really looking forward to some Snow Ice Cream. It is SO worth the uncontrollable shivering and blue lips to eat Snow Ice Cream.

While we eagerly (sort of) await some snow…we’re having fun making some (warm) snow related food.

I just used my regular Simple Whole Wheat Pancake recipe with mini chocolate chips. Sometimes our snowmen receive randomly placed buttons and eyeballs when we accidentally drop a chocolate chip in the wrong spot. You’ve gotta love a snowman with freckles.

We also had a lot of fun last week making Snowflake Quesadillas:

And…I thought I’d share this idea sent to me last year. One reader, Jenny, used my whole wheat soft pretzel recipe to make Pretzel Snowmen. Too cute to eat…almost.

Kitchen Chore Chart – Free Download!

Well, I didn’t really know he was going to do this, but I thought it was awfully sweet that while I took the boys on a field trip last week, my husband Matt (did all the breakfast clean up and) wrote a guest post explaining our “Kitchen System“. The system was his idea after all, and it’s been working beautifully. So many of you asked about this system after I wrote about it last week…so here you go! Once it’s springtime again, I think I need Matt to write a guest post about how to build a raised garden bed, what do you think?

My Heavenly Homemaker had too much of the cleaning responsibility in our kitchen falling on her. And I think she felt like the kitchen was falling on her sometimes. We have children ages 5 (he’ll tell you five and three quarters) through 13 right now. They should be doing more. Rarely will a child just magically hop in and do more. If you are blessed with one of those who jumps in and works hard, it is due to your parenting. BRAVO! If they need some help in this area, then likewise, it is up to your parenting. Laura and I recognized that our boys needed guidance in this area so we came up with a Kitchen Chore Chart aka The System. 

We spend a lot of time in the kitchen, making many messes and monumental masterpieces there, but Mom was usually stuck with the aftermath. Notice I said “was.” We’ve moved from (after)math to music (to her ears). In our effort to conduct our family as an orchestra playing a work of art we are becoming more organized. Below is our plan for kitchen chores plus some other cleaning that we felt was being overlooked or needed to be systematized. Click on the link below to download:

Kitchen Chore Chart

Remake or tweak the chart to fit your context. Then FOLLOW THROUGH. Be the parent. I know this audience is overwhelmingly Moms, but Dads, get on board with the plan. Yes, literally mark your name/initials on the chart and work alongside your family. I have had fun and I have been firm also. You reap what you sow. So sow seeds that will reap dividends better than so-so. (I couldn’t resist.)

A few notes:

1) In the early, training days of implementation it will probably take you and the team longer to complete the tasks than if you just did it yourself, but after proper training, it will pay off.

2) We are rotating the duties every meal and changing the lineup a bit daily in hopes that it won’t get old and because each day is different.

3) Obviously, older kids can do some chores that younger ones aren’t capable of yet, but don’t forget to graduate the younger ones onto higher expectations. Right now our chart separates “Put away leftovers” from “Clear table/buffet” so that our youngest has a couple of different chores he can do or team up with someone else to do. In a year we’ll probably combine the two.

4) Ideally, the chart is updated for the following day at the end of the day so you aren’t scrambling, confused or arguing the next morning. Hmmm, does that sound like we have had that experience?

Many hands, even mini-hands, make light work…when trained and organized.

And just in case you were wondering, “Mo” stands for Mom and “Ma” stands for Malachi. And “D” stands for Dad because we couldn’t have another “Ma” that stood for Matt. Wow, this system is really complicated, huh? Okay, no, not really.
