Easy Low Sugar Key Lime Melt-Away Cookies

I actually have no idea what makes something key lime rather than simply lime. I’d look it up, but there are fresh lime cookies to eat and also there is a lot of laundry to do since we have been gone all weekend. I would have just called these lime cookies, but key lime sounds more exciting.

Oh wait. I just looked it up. Did you know there are actually Key Limes? You probably did, so before you tease you have to remember that I am from Nebraska where there are no lime trees. Nebraska limes grow on trucks and in grocery stores.

Key limes are apparently great for cooking and baking because they are extra juicy and full of aroma and flavor. I will admit that I don’t know what kind of limes I used in these cookies. Therefore, maybe we should call these Easy Low Sugar On-Sale Lime Melt Away Cookies?

Easy Low Sugar Key Lime Melt-Away Cookies

Ingredients
  • 1 cup melted butter
  • ½ cup sucanat or raw sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • The juice of two limes
  • grated lime rind
  • 1 teaspoon baking powder
  • 3 cups of whole wheat pastry flour (give or take)
Instructions
  1. Stir together melted butter and sugar.
  2. Add eggs, vanilla, lime juice, and baking powder.
  3. Grate lime rind into the mix for extra flavor.
  4. Stir in flour until a solid ball of dough forms.
  5. Drop teaspoon-sized balls of dough onto a cookie sheet, about an inch apart.
  6. Bake in a 350° oven for 10-12 minutes or until cookies are lightly browned.

    These sound good but I am hooked on Low Sugar Coconut cookies! I used your main recipe changing out butter for extra virgin coconut oil, reducing flour by half a cup and adding in half a cup of unsweetened finely shredded coconut. There’s plenty of coconut flavor without needing to add coconut extract. If you make these with butter you would need the coconut extract. Enjoy!

      Sub lime extract for the vanilla extract and have coconut-lime cookies?

    These sound so yummy! How much grated lime rind do you recommend using? The recipe says to use the juice of two limes; did you zest both limes and use that much rind for the recipe? Thanks!

      I probably zest one out of the two limes. But you can do as much or as little as you want!

    Mitch likes lime a lot, so I will try this. Plus, I am trying to wean myself off so much sugar. We saw key limes and limes in general all the time in Phoenix, but they are harder to come by here!

    Now you’re talking! We love the flavor of key or non-key limes!

    All of your wonderful varieties sound delicious (I have no idea why I’ve yet to actually try to make one!), but this one may have to be the first.

    Ah-ha! I have to bake for our church community group. I wonder if they like lime? There’s only one way to find out!

      …and no, I absolutely do NOT live in a state that grows limes, nor was I able to grow limes where I was born and raised in Ontario, Canada. Store limes for me!

    Not that it really matters what kind of limes you used, but if they were the size of typical lemons, then they were most likely typical limes. : ) Key limes are much smaller. Think smaller than a ping pong ball. So while they are juicier, they are small, so you’d probably need more than 2 to get the same amount of juice as 2 regular sized limes. But in recipes such as this, the exact amount of juice might not matter.
