Below we have pictures of two of the food items I’ve made today to serve to guests. Which looks best to you – the wholesome Easy Breakfast Casserole, or the (not-so-wholesome) Frosted Fudge Brownies. Or maybe you’d like some egg casserole with a side of brownies? (Would you like a glass of milk with that?)

Here’s our menu for this week:

Sunday, October 2
Marriage class- Easy breakfast casserole, coffee, juice
Roast, potatoes, carrots, gravy
Huddle – Chili (with fritos, cheese, sour cream, olives), grapes, frosted brownies (these brownies, this frosting)

Monday, October 3
Simple soaked pancakes, homemade peach syrup
Taco corn fritters, peaches
Italian roast wraps (with tomatoes), tossed salad

Tuesday, October 4
Banana bread, applesauce
Creamy mac and cheese, peas
Leftover roast and potato skillet, green beans

Wednesday, October 5
Coconut flour muffins, pears
Tuna salad, crispy cheese crackers, apples, carrot sticks with homemade ranch
Chicken alfredo, tossed salad

Thursday, October 6
Fried eggs, cinnamon swirl bread, oranges
Homemade pizza, fruit salad
Beef stroganoff, green beans, tossed salad

Friday, October 7
Homemade honey oat crunch cereal with dried fruit and milk
Corn dog muffins, apple slices, carrots with homemade ranch
Hamburgers, ranch potato wedges, peas

Saturday, October 8
Pancake sausage muffins, applesauce
Leftovers
Cheesy potato soup with carrots, honey wheat muffins

I always enjoy reading your menus. Possibly stealing a few ideas here and there to place in mine. I am working on mine and will have it posted soon.

Since we just finished a yummy homemade pizza I would choose a brownie. I rarely make desserts anymore because our kids are all grown and 2 people don’t need a whole pan of brownies!

Must be a chili weekend. I made HUGE pot of chili yesterday! My mom’s recipe… not sure how to NOT make a HUGE pot of it lol. I added one can too many of kidney beans. My can opener is on the fritz. SO I got a little carried away when opening the cans of kidney beans. I didn’t want to open more cans later.

Hey, I want some of those brownies!

They both look great to me! I have some baked potatoes that need to be used up, so I may have a breakfast dinner tomorrow.

Thank you so much for being such an inspiration to so many. I look forward to your posts all week long and refer back to many of them over and over again. One question I have for you is, how many glass baking/casserole dishes do you have in your inventory? Sometimes I feel a bit greedy wanting more, more, more. It’s not often that all of mine are in the freezer or use in some way but every now and again I feel like I could use at least half a dozen more :O)

I have seven 9×13 pyrex dishes, plus two or three smaller ones. I use them all constantly, so I say if you’ll use them, it’s not greedy!

Here’s my recipe for potato soup: https://www.heavenlyhomemakers.com/potato-soup, but it doesn’t have cheese in it. I had experimented with a different recipe for this weeks menu!
