Menu Plan for the Week

We’ve got a big week coming up!

My dad and his wife Tacy planned a trip to Branson for all of us “kids” and our families – so all 21 of us are heading there at the end of the week. On the way, our family will be stopping in Kansas City to meet some of you, then we’ll meet more of you in Branson the next day! On the way home, we’ll hit Springfield to meet even more of you. Hope those who live in those areas can come!

I’m thankful that for the most part, we’ll be eating home-cooked meals (I guess that would technically be “lodge-cooked meals”) while in Branson. Each of our families are taking turns preparing a meal for the entire group. This is so much better than eating out all week – and everyone in the family is a great cook! 

We’re also all planning to take along some desserts and snacks. I started baking Chocolate Chip Cookies today to take along, plus I plan to make some Chewy Granola Bars, Giant Breakfast Cookies, and a bunch of fruit. Our time away should be lots of fun!

Here’s what our menu looks like for this week – at least what I know of it. :)

Sunday, March 10
Oatmeal, fruit
Chili Mac, peas
Huddle at friends’ house

Monday, March 11
Honey cinnamon  muffins, scrambled eggs, grapes
Alfredo with pasta, steamed broccoli and carrots
Turkey sausage and red bean stew, cornbread

Tuesday, March 12
Quick mix biscuits, creamy orange coolers
BLTs, ranch potato wedges, baby carrots
Italian pasta bake, tossed salad, green beans

Wednesday, March 13
Easy breakfast casserole, oranges
Leftovers
Pizza boats, peas

Thursday, March 14
Scrambled egg sandwiches, applesauce
Sandwiches, baby carrots, peaches  (on our way to the KC Meet and Greet!)
Dinner at our friends’ house

Friday, March 15
Giant breakfast cookies, apples
Lunch out with family (on our way to the Branson Meet and Greet!)
I’m not sure… :)

Saturday, March 16
Scrambled eggs, toast, fruit
Bbq meatballs (cooked by another family member)
Frito Chili Pie (cooked by another family member)

    Oh man! We will miss you by two weeks :( Our family is in Missouri and we will be visiting them at Easter and the week after. You will only be a few hours from where they live. We are in Michigan, when you coming my way?!

    I don’t understand why your chocolate chip cookies look so light (in color). When I use sucanat and whole wheat flour, mine turn out so … brown! They still taste good, but it’s obvious to everyone that I made them “healthier”. In my house, healthier usually means “brown”. If any baked items come out lighter in color, I usually get, “Oh, these aren’t the healthy kind are they?” I really threw them the time I made your coconut flour muffins – Ha!

      I actually used brown sugar in this particular batch. I’m giving half of them to a church function on Wednesday, so decided to save my sucanat. :)

        Ahh… that explains it! Thanks for being honest! (-: Don’t you find it a hard call sometimes when you are torn between using healthier, more expensive ingredients and less healthy, more affordable ingredients when you are having company or taking food to an event where you know the people TOTALLY DON’T CARE? I find myself often choosing to substitute with something more affordable, but still feel a twinge of guilt, knowing it’s not quite as good as it COULD be. Yet, I reason it is still homemade and MUCH better than store-bought, processed junk!!!

          Yes, I definitely do struggle, although when I’m at least using real butter and freshly ground ww flour, I don’t feel too bad about using brown sugar instead of sucanat. When the others don’t care, I don’t feel like I should use “the good stuff” the costs more. :)

    Hi Laura – enjoyed talking with you on Saturday! We will be in Branson for basketball Nationals all next week(starting Monday). Didn’t put that together :). I didn’t hear how your last game turned out? Our varsity won the tourney with a buzzer beater 3! It was AMAZING! Looking forward to home cooked meals this week! Will pray for eczema issues!

      Thanks, Monica! I LOVED our visit and was so encouraged by it (as I have been each time I’ve been with you).

      So exciting that your varsity won!!! We won as well – both our boys and our girls, so it was very exciting!! What a fun (and exhausting) weekend. :)

      Come to the Branson Meet and Greet if you’re able. It would be fun to see you again! Homecooked meals, YES!! Veggies are my friends, at least until we leave again on Thursday. :)

    So bummed you aren’t going to be in St. Louis! It is the same distance from us as Springfield, but we have more family there so my husband would not mind as much going out for a day. We shall see if I can make it.

      Last year, my husband took a soccer recruiting trip to St. Louis in November. If that happens again, we’ll come along and have a Meet and Greet there. Not sure though – so that probably doesn’t help you make your decision about Springfield… :)

    I live almost EXACTLY half-way between Branson and Springfield!! Yay! I can’t wait to meet you!!
