Menu Plan for the Week

Last week, when I talked about the meat in my freezer (and showed you the beloved picture of my frozen chicken)…several of you asked to see inside my freezer. Your wish is my command…I opened my freezer….held the door open with my foot….and snapped a shot of it for you.

See all the great meat in there!? 
Cow, chicken, lamb, deer, ground turkey…and a little fish somewhere in there. 
Oh, and yay…a frozen lasagna I made a week ago to have on hand. 

Several of you have asked if we eat pork since I don’t have it on my menu very often.  We love ham, sausage and bacon…but rarely eat it because it is not as healthy as other meats (according to the Nourishing Traditions book). We consider it a “compromise” food…and you better believe as soon as I get my hands on a fresh tomato…we’ll be having a BLT. :)

You really get to know a girl when she opens her freezer for you, huh? What…now I suppose you’ll want to see inside my sock drawer? How about just a look at our menu for the week?

Sunday, March 15
Oatmeal, fruit
Grilled steak, ranch potato wedges, tossed salad, corn
Hotdog cookout at friend’s house…taking fudge brownies and carrot sticks (we can’t help it…we’re pretending it’s spring)

Monday, March 16
Simple sourdough pancakes, milk
Picnic in the park (cuz it’s gonna be 74°!) Sandwiches, carrots, apples
Lamb chops, baked potatoes, peas

Tuesday, March 17
Scrambled egg sandwiches, orange slices
Chicken quesadillas, pears
Swiss steak over rice, tossed salad

Wednesday, March 18
Orange muffins, bananas
Fried chicken legs, fruit-kefir smoothies, leftover muffins
Beefy enchilada bake, taco salad

Thursday, March 19
French toast
Spanish rice with chicken, apple slices
Cheesy turkey sausage stromboli, fruit salad

Friday, March 20
Peanut butter honey toast, pears
Salmon patties, strawberry-peach slushies
Tacos

Saturday, March 21
Biscuits and gravy, scrambled eggs
Clean out the fridge
Homemade pizza

    Yummy meals. Our freezer is still stocked with venison, so it isn’t as interesting as yours! We do have similar freezers though, although ours is probably 20 years older, lol!

    WOW – that is a pretty serious freezer! My folks have a freezer like that, but it’s stocked to the gills with Lean Cuisines. lol

    I tend to not rely on our freezer for putting up much because of power outages – we live in military housing so we can’t do a generator as back-up. Once we are “off grid” and have a back-up for the freezer, then I’ll stock up. Hopefully we’ll be filling it with venison, chickens/quail, and whatever else roams through the back forty. ;-)

    I have to ask – what’s the gold stuff in the jar near the top right? Is that stock or something?

    WOW. I would love to have a freezer like that. Our local HyVee didn’t have the smart chicken on a decent price when yours did. I must admit I was a tad jealous of that purchase. I’m currently researching how to buy 1/2 or even 1/4 of a cow for meat since I’m sure there are farmer’s around here who practice organic farming/feed. Any ideas how I’d even begin to look for someone?

    I’m looking forward to your posts this week. PB fudge sounds too yummy. My son is just getting into dinosaurs, and we’re going to San Francisco during Spring Break to check out the dinosaur bones. I have truly appreciated your Women with a Mission series. I need to be reminded (often!) that taking care of my family is what God wants for me. I’m so thankful I found your blog.

    I’m curious as to what is on each shelf. I am very excited to see this picture as we will be getting our 1/4 of a cow next month so I will be well on my way to achieving a similar freezer.

    Stacey in Nebraska – try your state farmer’s federation as a possible first stop. I also did a Google search and found several links to a National database type site – sorry, I don’t have any of that information saved. Good luck though.

    Your menu sounds wonderful! I must say your freezer looks amazing. It is so organized and not messy at all. Mine looks horrible and I am embarrassed by it now. Thank you for sharing all of this!

    Ok, so I need to ask (but you don’t have to answer if it’s too personal)… how much do you spend weekly on groceries?

    How do you budget meat into it so that you can stock up so much?

    Melonie…the gold stuff in my freezer is chicken broth from a chicken I cooked last week!

    When I buy meat, I divide the cost of it up over the 12 months for the year since I usually buy a lot at once.

    Your menu looks great this week! I love me a good BLT, too! I have found a better bacon-no antibiotics or nitrites. It’s from Applegate Farms-it is called Sunday Bacon. It is a better bet for me when I just have to have some bacon! And, who among us can resist a BLT with thick slices of home grown tomatoes fresh-off-the-vine? Yum!

    I made your salmon patties last week. They were a hit. Wasn’t sure about draining off the oil, yes or no? I drained some and they seemed a little dry. Thanks!

    I seriously love looking at your menu plans for the week. It gives me inspiration. :) Your freezer is jam packed! Wowzers! Oh…and I received my Nutrimill today! So, anytime you feel like talking more about grinding your own grains, I’d sure appreciate it!
