How My Grocery Cart Looked After a Week of Travel (And is Price-Matching Going Away?)

Our family just rolled into town (at 1:30 this morning!) after a long but quick trip to Arkansas for a family reunion. We get together once every two years – and this year we celebrated our Nana’s 90th birthday! Look at this beautiful lady:

There were aunts and uncles and cousins (and even a doggie), food, and games all weekend. We all had lots of catching up to do!

We made it home just in time to do several loads of laundry, then send the teenage boys off to their first church camp of the summer. This leads me to my grocery shopping dilemma:

  1. We were all starving for fresh fruits and veggies after a road trip.
  2. Most of the boys will be gone all week.

I do not even know how to grocery shop for three people.

I am so used to buying half the store for my family every week that when I only have to buy for a few, I feel lost. I settled on “only” 8 pounds of strawberries, 4 pints of blueberries, 4 containers of raspberries, and only 1 watermelon and 1 pineapple. I got a bunch of mixed greens, carrots, peppers, nectarines, and peaches. I’m quite sure I bought more than 3 of us can eat. But after a week of travel food, we’ve been feasting on berries and greens all day – so maybe we’ll finish it off without a problem.

We’re also joining with friends to take a meal to our local mission tonight, so some of this fruit is going there. :)

Have you heard anything about Wal-mart taking away Price-Matching in your area?

I’ve caught wind of a new policy rolling out for Walmart in which they will no longer offer a price-match guarantee. Boo-hoo. Some stores are already affected by this, though thankfully, my store still price-matches – at least for now.

I can’t find any official information on which stores are taking away their price-matching perk. What have you learned about this?

I’ve become quite spoiled by price-matching, so to think we might not get to anymore is quite a bummer! We’ll see how it plays out, and if I hear any more, I’ll keep you posted!

With that, I’m off to enjoy some more berries and glasses of water to counteract the french fries I ate on the road last night. :)

Low Sugar Banana Cake

I’ve come a long way since 2008.

Here’s what I used to think about adapting recipes to make them healthier: I thought that if I simply switched white flour for whole wheat, white sugar with sucanat or honey, and vegetable oil with coconut oil or butter – I was healthifying a recipe. So way back in 2008, I did just that. I took my regular recipe for Banana Cake and switched out all the bad for the good and shared the recipe with you here. I even called it “Healthy Treat for Today: Banana Cake.”

I really thought the changes I’d made had created a healthy treat.

In my defense, I suppose the changes I’d made did make the cake healthy-er. Getting rid of empty ingredients and bad fats and replacing them with ingredients our bodies can utilize does make a recipe healthier. But I stop short now of calling a treat healthy if it still has loads of sugar in it.

This goes to show that we always have room to grow and learn, right? Makes me wonder what I’ll write a year from now after I learn more!

In the meantime, I’ve re-healthified what I thought was a healthy cake. Even with this newest version of Banana Cake, I still maintain that it is a treat and that other foods provide more of a nutritional punch than this. Still – with the sugar cut way down and with the ingredients all being foods our bodies recognize and can utilize – do feel free to eat this for breakfast if you like. ;)

Banana Cake

Ingredients
  • 2 cups whole wheat flour
  • ⅓ cup sucanat or brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • 2 over-ripe bananas, mashed
  • 2 eggs
  • ½ cup milk or buttermilk
  • 1 stick butter, melted
  • 1 teaspoon vanilla
Instructions
  1. In a large bowl, stir together dry ingredients.
  2. Mash bananas in a separate bowl.
  3. Make a well in the center of dry ingredients.
  4. Pour in mashed bananas and all other ingredients.
  5. Stir well (or beat with hand mixer).
  6. Pour into a greased 9×9 inch pan.
  7. Bake at 350° for 30 minutes.
  8. Allow to cool completely before frosting with the Cream Cheese Frosting below.

I prefer to make Cream Cheese Frosting with Stevia now so that it has no sugar in it. My boys prefer it if I add just a little bit of maple syrup.

Stevia Sweetened Cream Cheese Frosting

8 ounces softened cream cheese
1 cup heavy whipping cream
1/2 teaspoon vanilla extract
Liquid stevia to taste (I use 2 droppers full)

Whip ingredients together until smooth. Spread over cooled cake. Store in the refrigerator.

Maple Cream Cheese Frosting

8 ounces softened cream cheese
¼ cup softened butter
3-4 Tablespoons real maple syrup
1 teaspoon vanilla extract

With a hand mixer (or in your blender), whip together all ingredients until smooth. Spread over cooled cake.

The Difference Between Mother’s Day and Father’s Day

Have you noticed a difference in Mother’s Day vs. Father’s Day? In my experience, Mother’s Day seems to have us all focused on bowing down to mothers and spoiling them -recognizing all their hard work and amazing influence in the lives of their families. Not that I mind this too much. Yay for all mothers, everywhere. We are awesome!

Then comes Father’s Day. It seems like we somehow switch gears, letting Father’s Day become an opportunity to lecture men on how they should be better leaders and good role models.

I’m all about empowering men to lead and grow. But if all the sermons on Mother’s Day were about how I should step it up and be a better mom, I sure wouldn’t feel very honored. Not that I need accolades. That’s not my point. My point is this:

My man works hard. Most men work hard. Most men are incredibly good to their families and they all deserve to be honored just as much as the women.

The Difference Between Mother's Day and Father's Day

I’m guilty too. I’m guilty of expecting to be spoiled on Mother’s Day then barely throwing together a small token of celebration for Matt once Father’s Day rolls around. Sure, maybe this is because I cook for him almost every day of the year and do all I can to take care of him all day, every day. But this year I’m struck by how much I need to honor him for all he does for our family. Truly, what would I do without him? He is a rock star in our home, an incredibly hard worker, and I’m quite sure I don’t tell him this often enough.

While my love language is “acts of service”, my husband’s love language is “physical touch.” If I stood behind him all day, every day, giving him a scalp rub – he would not mind even a little bit (so what if there was no dinner on the table that night?). So while I’ll be making him his favorite peach cobbler and other favorite meals for Father’s Day, I’ll do my best to spoil him with physical touch so he knows without a doubt how much he means to me. If we can squeeze it in between camp sessions for the boys, we’ll probably play a family game of Settlers of Catan since I know he’ll love that too. (You can be sure though that just because it’s Father’s Day, we will not have mercy and let him win. Whatever though because he almost wins anyway.)

I Add Spinach to Salsa Chicken (and Nobody Cares)

I’ve talked in the past about how I add fresh spinach to several different foods for added nourishment. Read more details about this here, but below is a list of foods I’ve added spinach to successfully:

  • Scrambled Eggs
  • Salads (obviously)
  • Smoothies
  • Alfredo Sauce with Pasta
  • Beefy Vegetable Soup
  • Cheeseburger Soup
  • Chicken Noodle Soup
  • Chicken Patty Sandwiches
  • Chicken Salad (I didn’t stir it in, just ate it with the chicken salad)
  • Easy Noodle Stir Fry
  • Lasagna
  • Pizza Boats
  • Pizza Soup
  • Potato Soup
  • Salmon Patties
  • On top of Homemade Pizza
  • Cheesy Cauliflower Cakes
  • Runza/Bierock Filling

Most recently, I tore up a bunch of spinach leaves and added them to our Salsa Chicken for our Build a Burrito Bar. Here’s the thing about adding spinach to Salsa Chicken: No one can even tell.

I mean, I tear and I tear and I tear. (I make it sound like it’s hard work. Tearing spinach is a two-second job, and mostly I just tear spinach leaves in half by the handful.) I probably put four ounces of fresh spinach into a big pot of Salsa Chicken. (Four ounces of spinach is a lot of spinach.)

Then I let the spinach cook in with the meat and salsa before I shredded it all together. The spinach adds nourishment, but doesn’t change the flavor or even the look of the chicken. I think the spinach just looks like part of the salsa once it’s all cooked down. See how pretty?

I really don’t try to hide nutritious ingredients in my recipes, but neither do I always announce what all I’ve put into the food while I cooked it. I’ve done this “add spinach to Salsa Chicken” twice now, and when it was all said and done – my kids are none the wiser. To them, it just looks like I’ve made Salsa Chicken. Therefore, they proceeded to put more fresh spinach on their burrito as they build it. Nutrients on top of nutrients. How great is this?

As an aside, I’ve taken to snacking on fresh spinach while I’m cooking with it. It barely tastes like anything and it’s refreshing. Plus if I’m super hungry while I’m cooking it helps me feel like I can wait until meal time to eat with the family.

Tired of Sandwiches? 10+ Easy Summer Lunch Ideas

I shared these Summer Lunch Ideas on Facebook Live a few hours ago, and today I’m sharing the written version with recipe links!

I’ve mentioned before that our family rarely eats sandwiches. The cost for the bread, cheese, and meat can really add up since we’re such big eaters! We typically save sandwiches for travel, packing them to take with us when we hit the road. It’s funny. Sandwiches have kind of become a “treat” for us since we don’t have them very often. We like to load them up as if we’re at Subway. (I’ve learned to love sliced cucumbers on mine!)

For my own benefit and yours, I’ve put a list together of more than 10 great lunch ideas that work well during the summertime. None of these require an oven, and very few even require a stove-top. Most have options for you so you can work with whatever you have in your freezer or with leftovers you need to use up.

Family Friendly Real Food Summer Lunches

Here’s to having a list so that we don’t have to think so hard when the kids ask, “What’s for lunch?”

10 + Summer Lunch Ideas

1. Meal-type Salads

This is the best way to get my family to eat lots of greens. Our favorite salads are:

  • BLT Chopped Salad
  • Taco Salad
  • Chef Salad that we make with leftover grilled chicken or chopped up ham

2. Baked Potatoes in the Crock Pot

These are amazing because I can bake many potatoes at once and we can top them with whatever I have on hand at the time. Some ideas are:

  • Taco fixin’s
  • Nacho Cheese/Meat Sauce
  • Ham, Cheese, and Sour Cream
  • Leftover grilled chicken, cheese, and sour cream
  • Leftover grilled steak, sliced and sauteed with peppers and onions

3. Chicken Salad or Tuna Salad

We eat this on a bed of lettuce, with crackers, on a tortilla, or sure – on bread like a sandwich. ;) We like making fruit smoothies with this meal because the combination is so refreshing!

4. Sloppy Joes

I usually make several pounds of Sloppy Joe meat at one time, then freeze it in meal size portions. We usually skip the buns and eat this with tortilla chips – sometimes with salsa and cheese sprinkled on top.

5. BLT Wraps

These are completely amazing. Bacon and cream cheese with lettuce and tomato in a tortilla? Every bite is excellent.

6. Chicken Tacos

This is such an easy meal because you just dump chicken and salsa into a crock pot. Everyone can build their tortilla however they like and I feel like I haven’t even cooked (because I pretty much haven’t!).

7. Grilled Hot Dogs or Brats

It’s a little bit hard to find great quality dogs and brats without having to fork out the big bucks, but occasionally we’ll grab a good nitrite free, beef variety to grill. We all love these, and since we eat them with a bunch of raw veggies and fruit I don’t feel too bad about them not being the most nutritious food option. :)

8. Pasta Salad Bar

This meal is great because again, everyone can fix their bowl however they like it!

9. Hearty Dips

We typically think of serving Homemade Guacamole or Black Bean Salsa as a side dish – but since both of these are pretty filling and nourishing, they make a good “main dish” at lunch sometimes. Smoothies or fresh fruit, along with raw veggies (also good for dipping) makes it a complete meal with little effort.

10. Pizza on the Grill

If I already have homemade pizza crust in the freezer, or if I’ve purchased them from Bountiful Baskets – it is super easy for everyone to build their own pizza with their favorite toppings, then we heat it for a couple minutes on the grill. Admittedly, we prefer our pizza baked in an oven. But on a hot day we make the sacrifice. :) We’ve also made Pizza Boats on the grill, which is even easier.

Build a Burrito Bar (It’s like Chipotle, only better. And cheaper.)

I have been to Chipotle exactly one time.

It’s borderline ridiculous that it took me until last April to try it out. After all, I’d heard great reviews about this restaurant. We just don’t eat out much unless we’re traveling.

After our (one and only) great experience there, we will definitely put this on our list of restaurants to find when we’re on the road. But in the meantime, we’ve started “making Chipotle” at home for easy Sunday lunches after church. It’s not much different, I suppose, than a regular Burrito Bar in which I’ve set out fixin’s and everyone fills a tortilla. But copying the Chipotle idea means I add a few burrito fillings that I hadn’t added before.

This has been great for our family, but even better when we have guests over. Everyone can make their burrito however they like. I personally skip the tortilla and make a big Burrito Bowl. So yum.

Here are the food items we like on our burrito bar:

  • Salsa Chicken
  • Seasoned Hamburger Meat
  • Brown Rice (seasoned with chili powder, garlic powder, salt, and a splash of lime juice)
  • Black Beans and or Pinto Beans
  • Salsa
  • Guacamole
  • Sauted onions and peppers
  • Mixed Greens or Spinach
  • Shredded Cheese
  • Tomatoes
  • Olives
  • Corn
  • Sour Cream
  • Tortillas

I think one of the best aspects of setting up this Burrito Bar is that I can get my entire family in on prepping it. I try to have the meat and rice made the day before so we can quickly warm them up when we get home from church. We all work together to cut and shred and dice – and within just a few minutes we can sit down to lunch!

What If Change Can Be a Good Thing?

A few weeks ago I did a phone interview for an upcoming online Christian Homeschool Summit. I wasn’t very sure of myself going into it and questioned why I had actually said “yes” to the invitation. Sure I’ve been homeschooling for over 14 years. But all that’s really taught me is that I have a lot to learn. Share my knowledge with others? What knowledge??

Therefore, I decided I needed to pray before starting this interview (because I hear that works sometimes). I asked God to let the Spirit work and for my words to be from Him.

What happened is that one of the questions I answered ended up being exactly what I needed to hear – and I realized immediately that the Spirit was indeed at work. After all, I was sharing words of truth that I had not clearly recognized before. It was this:

Always be open to change. Just because it has worked well for your family in the past doesn’t mean it will continue to work well now. Seasons change. Family needs change. Kids get older. Commitments and ministries and obligations and activities evolve through the years. If something that has been working for you suddenly is not working – that doesn’t necessarily mean you are doing something wrong. It might simply mean that it’s time to switch things up to make them work differently. To make them work better.

I very much needed to hear those words. It’s crazy how that prayer thing works.

What if change can be a good thing?

I’ve needed to embrace this truth as our kids have gotten older. My current parenting and teaching teenagers while working from home full time stage is different from my parenting and teaching little boys stage. Sometimes it feels harder. But what if it isn’t? What if it means that I’m trying to work with a system that used to work but no longer works? What if it means I need to make some adjustments?

Change can be hard. But what if some of the adjustments are slight and not even as hard as I think they’ll be?

And what if change doesn’t have to be hard? What if change is good? What if change brings peace?

If we are truly listening to the Spirit and letting God guide us with His perfect wisdom, what do we even have to fear? Anxiety and peace cannot coexist. Do we trust God or are we relying on self?

I love God so much. I love how gentle He is about drawing me back every time I slip back into worry and anxiety mode. I get so frustrated with myself because “I’ve done it again.” But God. He’s not even shaking His head at me. He’s just gently loving me as I once again surrender to seek Him better and to find confidence in His guidance.

I’m taking time this summer to pray and seek God’s guidance toward any changes I need to make in how I manage my time and energy. After all, I hear that prayer thing works sometimes.

Something fun for you

Not that caterpillars aren’t adorable (and fuzzy and squishy) and a wonderful part of God’s creation, but my preference is to enjoy these creatures once they’ve made their transformation into a butterfly. What if?? What if change for you and me can be like that? What if we’re fine(ish) as we are, but God has more for us? What if He wants to transform us, leading us through changes that make our lives into something more beautiful?

Cheesy illustration? Sure. But I like butterflies and the transformation they represent. I like how butterflies prove that change can be good!

Want an update on how my new organizational binder is (or is not) helping me?

A few weeks ago, I started doing this radical thing called “write stuff down so I don’t forget” in a never-heard-of-before item called an “organizational binder.”

I know. I’m one of the first to do it. This type of thing has never been done before. No one has ever heard of it. Planners? Calendars? What even are these?

Sarcastic much, Laura?

You know what? You people who have been doing this list thing since you learned to write words? You just laugh all you want. I’ve always been a “write-it-down” rebel. I’ve never wanted to be tied down to any list. Lists stress me out – as if writing it down means that I’ve failed if for some reason I can’t cross it off at the end of the day. There were too many days I’d leave too many items unfinished and un-crossed off. Boo.

So instead I just kept my 40,000 item to-do list trapped in my head, swirling around, all day long. This is the main reason I’d stare blankly at my children when they’d ask about having friends over on Friday. In order to answer, the file cabinet in my brain had to pull out several drawers, and then the brain papers scattered, which means I provided several different facial expressions before I’d finally answer the can I have friends over on Friday question with put them in the pantry when you’re finished answer.

What? My kids are used to it.

But enough is enough, so finally a few weeks ago I began to get better about writing down the absolutes of my schedule. I printed all my favorite organization pages from the Homemaking Bundle and put them together in a cute binder. I didn’t want to hate my lists, so I did this instead:

  • If it has a day attached to it (such as Hannah’s reception, 2:00 Saturday, April 30) I write that down on the specific day. I’d already been doing some of that, because even I have understood the importance of writing those kinds of details on a calendar.
  • If it doesn’t have a day attached to it but is only an I hope to get this done sometime before Malachi graduates in 2023, I write it on a general list. After all, if I wrote it on Monday and didn’t accomplish it on Monday, then I’d be mad at my list and we’d be right back where we started.

How’s my new organizational binder treating me, you ask?

Splendid, I’d say. (Channeling my inner Mary Poppins there. Or was it Bert? Whatever. I’ll add look up who used the word splendid on my never ending to-do list. Oh, no, wait. I remember. It was Mr. Banks. Okay, moving on.)

As I begin each day, I write down the must-do’s and the hope-to-do’s in my binder – in separate sections. As they come to me, I jot down meal ideas on the meal planning page. As I think of recipes I want to try to invent and posts I want to write, I write them on a different list.

Now if my kids say, “Can I have friends over on Friday?” I look on the calendar and say, “Yes. We’re free.” This isn’t nearly as much fun as telling them to put their friends in the pantry, but it is more efficient.

Here’s the truth about my organizational binder that I finally recognize and why I can stop being a “write-it-down” rebel:

My planner doesn’t own me. 

I own my planner. 

So what if I write down an idea based on a plan I have for the day or the week, but other needs arise and I don’t get it all done? Who even cares? I only need to do what I do. Not getting all of it done isn’t a symptom of failure – it’s a reality of life.

Words on paper mean nothing (unless it’s the Bible or like a marriage certificate or something, but you know what I mean). But the simple act of writing down all the to-do’s and getting them out of my swirling head has truly been helpful. I shall continue this revolutionary idea of writing lists in planners.

Maybe you all should try it sometime. No pressure.

The Time Matt and I Talked About What Dating Should Look Like For Us (Plus, You Could Win a “Date Night!”)

A few weeks ago, we discussed dating in marriage. (And by we I mean you and me, not Matt and me.) Remember that?

I loved this discussion because it was so good for me to hear what so many of you are doing to keep your marriage strong. That so many are being intentional, recognizing that a marriage relationship doesn’t take care of itself without two people being dedicated to its care – well, it blessed me to hear your thoughts.

And then, without warning, I became discouraged.

What is it about hearing what others are doing that can sometimes make us feel that we aren’t doing enough or doing it right? Why, when we hear what works for others, do we sometimes choose to feel bad if that very thing isn’t working for us?

Good grief. I know better. But shoot. Some of you actually have dates with your spouse every single week. You’re super creative with your time together. You’ve found fantastic ways to fit dating into your schedule. Even better – it is an actual, non-negotiable part of your weekly schedule. And then there’s Matt and me. We rarely find time for dates, struggle to create alone time, often have unfinished conversations.

So does this mean that surely our marriage is doomed and that we, as a couple, must be a complete mess?

Oh, for real.

There’s no doubt we will always have room for improvement in our relationship. Sometimes we struggle. Sometimes we don’t communicate well. We’ll continue to go through various seasons in and levels of busyness in life. Sometimes there is more time to connect, and sometimes we need to be more creative.

It is so important to recognize that what works for one might not work for another. It’s also so very important to be open to learn and willing to grow. That’s why I loved this dating discussion with you. I learned. I was encouraged (I mean, at first, you know, until I got silly and let myself feel inferior to your awesomeness).

So then I did what I should have done in the first place. I talked to my husband about it.

I’d been praying about this area in our marriage – simply because we are very, very busy and are very involved with several ministries and all of our kids’ stuff and all of our work – and I’d been feeling too much of a disconnect between the two of us lately. Like we’d been spending time together but not really spending time together, you know? So here’s what we did, and brace yourself – maybe even prepare yourself to take notes – because this date suggestion is one for the books:

I hopped in his truck with him while he headed to the gas station to fill his gas cans with fuel for his lawn mowers.

You guys.

He in his grease-stained work clothes. Me in…probably something that didn’t match. Gasoline fumes all around us. It was, quite obviously, the ten minutes of date time I had been longing for.

We discussed and decided that this is where it’s at for us right now: stealing away for a few moments whenever we can even if it doesn’t look pretty. Matt knew the dating topic had been on my mind for a while so in between gas can fill-ups he said, “Define date.” And I was like, “This. Going to the gas station with you. Doing anything with you. I don’t even care. We don’t need to spend any money on dates, ever. I just want us to figure out how we can have more time together focused on each other.”

Ironically – the very week after this discussion, not one but two families randomly blessed us with “thank you gifts” in the form of gift certificates to local restaurants. Um, hi God. 

We definitely decided we would have to be intentional about this each week since no two weeks ever look the same for us. It is best for us to look at our days as each new week begins and figure out together when we can block out time during the week for a “date.” Honestly, sometimes this means something as simple as sitting in the van alone together after we’ve arrived home from a family activity. (Mom? Dad? You guys coming? Nope.) And sometimes it means we actually dress in something cute and go to a restaurant to order something yummy.

What if it doesn’t have to be normal? What even is normal anyway?

After our most recent restaurant gift certificate date, Matt grabbed his flashlight as we got back into the van. “Would you mind heading over to the property where I’ve been working and holding the flashlight for me while I go down into the crawl space to access the damage? I kind of need to get that done so I can turn in an estimate.”

I giggled because, this. This is our normal.

I sure do love my hard working guy. So what if our date time looks different from your date time and your date time looks different from our date time? Either way, I still love hearing what you are doing. I love getting new ideas, and most importantly, I love hearing about couples being intentional about their relationship. I think the point is that we look at our individual marriages with each individual need and we let God lead us in keeping our marriages strong, with His power at work.
