Menu Plan for the Week – and What is Up With All the Strawberries?

Never, ever, ever have strawberries been available in our grocery stores this time of year that are both tasty and reasonably priced. Typically between the months of October and April, we go strawberry-less.

Somehow though, the past few weeks have brought very tasty strawberries to our stores at a very good price – in January and February. What in the world? Seriously, does anyone know how this can be possible? These particular strawberries are coming from Florida. Are you able to find good strawberries in your area at a good price right now? Shocked as I am, this Nebraska girl is thrilled.

I price-matched (more on that tomorrow!) and got strawberries for just $1.29 per pound. That price is amazing. The strawberries are super tasty, too. As you can see from my huge haul from the store, it was a great price matching week. I loaded up on produce even more than normal. All of the above cost under $100, so I’m very grateful. We will have a great week of delicious food!

Easy Ham and Egg Breakfast Bowls – a Quick and Filling Breakfast To-Go!

Oh man (lady – whatever). You are going to love this idea! Unless you don’t like eggs.  But for those of you who love eggs, and for everyone who wants an easy, real food meal that will pack a punch with nutrition and keep you full until the next meal…

Please allow me to introduce you to these delightful little Ham and Egg Breakfast Bowls:

See that? The ham is the bowl. Isn’t that clever? I didn’t think of this myself, but was enlightened by my friend who was excited to tell me about her fun breakfast of the day. She knew I’d need to know about this idea. She knows me (and my hungry crew) well, don’t you think?

Everyone get out your muffin tins and get ready to have some fun.

How to make Ham and Egg Breakfast BowlsYum

You will need:

Muffin Tins
Thin Slices of Ham
Eggs
Shredded Cheese
Sea Salt
Garnish like Fresh Spinach, Green Chilies, Mushrooms, Peppers, Onion, Broccoli, or Salsa

Push a piece of thinly sliced ham down into each muffin cup.

Crack an egg into each “ham bowl.” Poke each egg yolk with a fork and carefully scrambled it around inside the bowl. Sprinkle with salt, top with cheese, and garnish however you like. Bake in a 350° oven  for 10-20 minutes or until the eggs are cooked through.

You can make these ahead of time, then rewarm them for a quick, ready-made breakfast or lunch! (That’s my favorite part, of course.)

You can also scrambled up your eggs in a dish, and then scoop some out into each ham bowl if you prefer. My kids like the texture of these better if I do it that way.

“So Laura, where do you grocery shop?”

I didn’t think this was a difficult question with a complicated answer until I found myself answering a friend a few weeks ago. She was in my kitchen enjoying a meal with some of our basketball team families. That’s when she asked, “So Laura, where do you get your groceries here in York?”

I don’t think I have a complicated grocery shopping situation in the least, especially since I’ve been fine tuning it for years. But my answer was no less than several paragraphs long. I’m sure she was thinking, “Girl, just tell me what grocery store you like!”

Indeed, I do shop at our local grocery store and at Wal-mart (hooray for price matching, which I will explain in more detail soon!). Also, I:

  • Order beef, chicken, and the occasional package of bacon from a local farmer about an hour away.
  • Order from a food co-cop, Azure Standard, which delivers once per month.
  • Get several dozen eggs each week from a man from church who raises chickens just out of town.
  • Get milk once each week from a family who raises animals in a nearby town.
  • Order one lamb per year from the same family who provides us with milk.
  • Buy from the farmer’s market and grow/preserve our own produce during the summer.
  • Order food from Amazon – lots of it. (This shocks so many people. “You can order food from Amazon?” Oh yes you can!)
  • Order food from iHerb.com.
  • Order food from Vitacost.com.
  • Order food from TropicalTraditions.com.
  • And occasionally, when I’m in the city, I’ll shop at their bigger health food stores or regular grocery stores.

Um, hi. I have a dozen grocery purchasing sources. I really never considered how many different ways I have found for saving money and purchasing the best food I can get my hands on at the best prices.

Your food sources are going to look completely different from many of mine simply because of your location and options. My tip for you today is to think outside the box and find the sources that will work best for you as you find wholesome, nourishing food for your family! There are sources out there, you just have to find them. And if you’re in the U.S. I encourage you to look into the online resources I mentioned above. Online grocery shopping rocks!

You should know that our source for farm-fresh eggs has changed something like five times during the past nine years. I share that to encourage you that if one source falls through, ask around and search for another source!

With a bit of trial and error, you will find what works best for you as you seek ways to find quality, real food ingredients for your family. :)

Chocolate Cheesecake Dessert

Not that you have to wait until Valentine’s Day to make this, but just in case you’re starting to think about hearts and chocolate and treats with the ones you love – I thought you might be interested in this recipe. You should probably make one now, then another early next week, then another on Valentine’s Day. Or would that be considered cheesecake overkill? (Is there such a thing?)

Remember this Chocolate Cheesecake Pie recipe I shared about this time last year? Here’s another similar idea using stevia to lightly sweeten. I also used my Shortbread recipe for the crust this time since I’ve discovered what a great, buttery crust it makes. It does not get any easier than this! (Here are Pumpkin Pie Bars with shortbread crust and Pumpkin Cheesecake with the same crust. Told you I love it.)

Easy Chocolate Cheesecake DessertYum

2 8-ounce packages cream cheese, softened
1/2 cup cocoa powder
1 teaspoon vanilla extract
Liquid stevia to taste (I use 30-40 drops)
2 cups heavy whipping cream
Baked and cooled Shortbread Crust

Cream together softened cream cheese, cocoa powder, vanilla, and stevia. Set aside. Whip cream until soft peaks form. Fold in cream cheese mixture until smooth. (I actually throw all ingredients together in my BlendTec and let it do all the work of whipping and blending at the same time.)  Spread mixture over cooled Shortbread Crust. Cover and chill for about two hours until set. Makes about 18 servings.

Gratituesday: Snow Day

Phew! This weekend has been incredibly fun and exhausting. I was too busy to take pictures so I will instead give you a bullet point run-down of our past four days:

  • Friday evening, 140 teens and sponsors arrived at our church building for a weekend youth rally. Matt was home working frantically to at least get our new shower in place since we were housing boys all weekend. I stayed at the building and helped organize housing for all the people. THAT is a job.
  • 17 teenage boys came home with us to “sleep.” They found our drum set.
  • We fed the boys snacks, even though they had just eaten at the building.
  • I accidentally said words out loud about the smell of the feet. All of the boys blamed all of the other boys.
  • Matt stayed up until 4:30 in the morning trying to understand instructions about installing a shower that read something like, “Put the white thing with the other white thing, then slide it onto the round piece.” There were a lot of white things and different sized round pieces. God bless him. He got it up and running.
  • I slept from about midnight to 1:30, then could not go back to sleep until 5. What in the world???
  • We delivered the boys back to the church building at 8:30 (it took three trips to get them there). We dropped Malachi off at a friend’s house, then Matt and I headed to the rally to teach classes.
  • Matt and I enjoyed teaching four sets of teens throughout the day – Matt with mixed classes and me with roomfuls of girls! It was wonderful and fun. What great youth!
  • We finally got back to pick up Malachi at 8:00 pm. He was thrilled that he had been able to play with his friend for “over 10 hours, Mom!”
  • We made three trips to get all the boys back to our house.
  • We fed the boys snacks, even though they had just eaten at the building.
  • Somehow after the full day and lack of sleep, the boys still didn’t want to sleep. They have so much fun together and have limited time together throughout the year so it would seem that sleeping would waste their precious together time.
  • We woke up to snow. Lots and lots of snow.
  • Matt has a snow removal business. He bundled up and headed out for what would be a very long day.
  • We called for help and got all the kids to the building for brunch and worship.
  • It became very clear that no one could drive home as had been the plan. Several other moms and I worked frantically to pull out leftovers to warm up to feed everyone. After church, we had a huge spread of random but tasty items for the kids to eat while we visited with sponsors about driving conditions.
  • 110 of the youth and sponsors needed to stay an extra night. The kids were thrilled with the extra together time and the fact that they would miss a day of school on Monday. Phone calls were made, youth leaders talked to all the parents.
  • Housing arrangements were made yet again for all the youth. We shuffled them around so that entire youth groups could be together, making it easier on the sponsors/drivers to get up and go on Monday.
  • We needed more food! And a Super Bowl Party! What to do, what to do? Adults made plans. Kids hung out, fell asleep on church pews, headed across the street to play in the college gym, or played board games. They were loving life.
  • A man from church with “connections” came to the building with the hugest TV I’ve ever seen. He set it up in the fellowship hall, and fixed it up to stream the game that night.
  • Several adults headed to the store and came back with 48 frozen pizzas, a ton of popcorn, and stuff to make 14 batches of party mix. We got busy in the kitchen.
  • We had a fabulous party, the kids loved it, they were very gracious and seriously – I think this turned out to be the kids’ favorite day of the entire rally.
  • Matt had been moving snow all day (that continued to fall and blow). I texted him to let him know that we’d be having 12 extras that night and to please put sheets in the washer when he went home. (I hadn’t been able to stop and go home all day.)

Let’s pause now so that I can tell you that Matt called around 6:30 to tell me that:

Our washer had busted. We could do no laundry.

I giggled because I was loopy, exhausted, and giggling sounded like the best response. As I hung up the phone, I looked straight ahead of me and realized there was a washer and dryer right in the kitchen I’d been working in all day. I called him back. He brought the sheets to the building. We washed them while we worked. Perfect.

  • At 10:00 we made it back to our house with the 12 extra people.
  • You guessed it, we fed them snacks, even though they had just eaten at the building.
  • We had a great time getting to know our new guests (a few girls and a mom this time, yay me!).
  • We went to bed at a more reasonable hour, like 12:30. It was bliss.
  • I made a big breakfast before sending everyone on the road this morning around 10:00. I was so thankful for bags of muffin batter in the freezer!
  • We declared the day to be a “snow day” even though as home schoolers, we never take snow days. Most of us stayed in our pj’s all day. Bliss.
  • Matt picked up the piece we needed to fix the washer and had it ready for me by early afternoon. Then he went out to do more snow removal. Love him.
  • The afternoon and evening has been spent making broth and soup (perfect for a cold day like today!), doing laundry, and reading quietly. I took a really long nap and woke up as a new woman.
  • OH! And our internet has been out since last night and none of us had the energy to do anything about it until this afternoon. It was a wireless router issue, and at this point, everything is working except for my work computer. Oh well. :)  We’ll get it figured out when our brains work again.

So there you have it. It was truly a wonderful weekend. We love these kids!!! I’m pretty sure they will remember this youth rally for a very long time – hopefully the spiritual parts too. :)

The Groceries I Bought This Week and Why I Bought Some Junk

Well, I can’t really say that I blew the grocery budget plan that I had this month – but I did end up spending over the $400 I thought I’d spend this month during my freezer/pantry challenge. It’s food, and we need it, so all is well. Since I stayed right around $500 for the month, this is still huge savings for our big family. My hope is to get back at it and continue through the month of February with this challenge. We have plenty of meat to work with and plenty of pantry items. Sticking with purchasing only produce and dairy should work for one more month just fine!

Here’s a peek at what that extra spending went into:

Our Azure Standard order came in, which is always fun. I ordered sweet potatoes, frozen peas, carrots, chicken thighs (love these!), and roasted peanuts.

I filled my cart at the grocery store – mostly with produce. But as you can see, I also bought some junk. Be glad you can’t see the frozen pizzas hiding behind the chips.

Why did I buy junk, you ask? Our church hosted a big youth rally this weekend, and our family signed up to host several of the boys for two nights. Many of the boys who came to town (from 5 different states) are good friends with our boys, having become acquainted at church camp the past few years. Youth rally weekends like this are like reunions for them! All that to say, we housed 17 teenage boys Friday and Saturday nights. There is no shortage of great friends for our boys, that is for sure!

Their meals were all taken care of at the church building, but once at our house for the night – they  needed snacks. I laid out huge bowls of fruit for the boys to help themselves to, and I also provided chips and a little bit of pizza. Homemade food was out of the question this time as Matt and I have been teaching classes at the youth rally all weekend.

Surely you’re wondering:  How was it housing so many extra teenage boys? Oh my, it was so much fun. We know most of the teens at the rally. So having the boys in our home was awesome. It always sounds like a lot – having so many extra teens. But truly, they are so nice, so polite, and so enjoyable.

I will say, with much affection and a bit of a cringe:  My entire house smells like a 3,000 square foot sock. Whoahoho. I love these boys and will gladly fill my home with them. But 34 teenage boy feet is something else. There are no words.

I should also let you know about the um…interesting situation with our bathroom remodel. All is well really – but as is typical of home improvement projects, this one is taking longer than expected. Matt had been working and working to at least get a working shower in before all the boys (and their feet) showed up. He was up until 4:30 this morning finishing it. (And then he taught Bible classes all day today at the rally. He is a Rock Star.)

Everything else looks pretty disgusting in the bathroom right now, but hey, how about that pretty shower?!!!

Fun as all this is, I am one tired mom. Sleep isn’t on the agenda much during youth rally weekends. I’ll nap after they all go home on Sunday afternoon, you can bet on it. Writing out a menu plan for this weekend to share with you isn’t within my physical or mental capability. Maybe you can leave some yummy meal ideas in the comments for me this time? 15 Delicious Dips for Your Super Bowl Party

As is always the case this time of year, I have absolutely no idea who is playing in the Super Bowl. If it mattered to my husband it would matter to me. But it doesn’t, so it doesn’t. Make sense?

What does matter to me is the fun night of fellowship we will have at our friend’s house during the game. Matt and I actually do enjoy watching the occasional game of football. The big buffet of fun foods never hurt my feelings either. I’m all about the dips at a Super Bowl party. I have several I’m thinking of making to share. Here are some of our favorites:

Black Bean Salsa
 – Five healthy ingredients, it’s like a flavorful meal all by itself.

Cream Cheese Salsa Dip – This is the easiest dip on the planet (2 ingredients!) and everyone loves it.

Easy Veggie Dip – Oh my cucumbers. This is the very best way to enjoy raw veggies. It stirs together in about two minutes.

Healthier Cheese Dip (a Velveeta/Rotel Knock-Off) – Who needs “processed cheese product” when you can have the real deal?!

A Safer Kitchen ~ From Plastic to Glass

We’ve talked the past two weeks about switching from Teflon to cast iron and stainless steel and switching from aluminum to safer bakeware.

Today, let’s talk about one of my favorites (right, like the others aren’t also my favorites too?). It’s just that this one involves jars and Pyrex. I super love jars, and with all the Pyrex I have in my kitchen now, it may look to an outsider that I have an addiction to glassware.  I won’t deny it.

A Safer Kitchen

Why do I love glass so much? Because hello, it’s pretty. And then there’s all the others stuff about it being much healthier and safer for us to use. You can read this post to learn more about why storing food in glass is safer than storing food in plastic.

It has taken me a few years to switch out all my plastic containers and replace them with glass. Beyond better health, I love that I can see through my containers to easily identify my leftovers in the fridge! Glass is very nice like that. :)

One of my favorite ways to store leftovers is in wide mouth jars. Wide mouth pints and quarts are my favorites, which I use with lids like these. (I don’t mind these lids being plastic as they don’t touch the food to cause harm.)

And what about Pyrex?

I have two complete sets of this variety of bowls with lids. I love them so, so much.

See how perfect they are for prepping salads and fruits and veggies? These also double as mixing bowls, of course.

The following set, with a mixture of rectangle and circle containers with lids is one of my favorites for storing leftovers. I love the variety of sizes, and of course, I love that they have lids to match. A glass container without a lid is really not very beneficial to me.

Fruits and Veggies On the Go 2

Of course, I use the following oblong Pyrex dishes all the time for making and baking casseroles. I also use these to freeze extra casseroles for future meals on the fly.

Without a doubt, I have found that having a wide variety of shapes and sizes of jars and Pyrex dishes with lids is key to efficiently storing food. I use larger containers when I’m preparing food ahead of time for us to pull out and eat. I use smaller containers for leftovers, shredded cheese, or veggie dips.

Switching over from plastic to glass has been a huge help in my kitchen in so many ways! I’ll end with a contented sigh as I think about my lovely glass container selection. Some girls love jewelry and flowers; I love jars and Pyrex. What can I say?

How I Prepared 2 Healthy Meals in 20 Minutes

I dropped Malachi off at piano lessons at 10:00 this morning, arriving home at 10:05. I needed to leave again to pick him up at 10:25. That leaves 20 minutes. (That was your math lesson for the day. If only all story problems made that much sense. Who invented those anyway?)

Knowing my day was super full:  school and website work throughout the day; piano lessons for Malachi at 10; soccer for Matt, Asa, Justus, and Malachi at 2; grocery shopping for Elias and me at 2; someone coming by to pick up a co-op order at 3:30; friend coming over to study with Asa at 4; Bible study at 6:30 – and did I mention there’s a “ready to be assembled” shower in my living room  and plaster dust all over my house right now?? Well, I knew I needed to stay on top of meals if we were going to actually eat today.

I decided to see how much meal prep I could get done in my 20 minutes of time before picking Malachi up from lessons. See, I can’t just say, “Here’s how to put a nutritious meal together when you’re low on time.” No. I have to go into all the details about my schedule and give my opinions on math problems and tell you about the new toilet that promises to flush efficiently that’s still in the box but will soon be in my new bathroom but not until we get all the tile issues figured out. (That is a story problem in and of itself.)

So busy day, blah, blah, blah. Here’s how to put a nutritious meal together when you’re low on time:

2 Healthy Meals in 20 Minutes

Today I decided to make Easy Noodle Stir Fry for lunch and Taco Salad for dinner.

At 10:06 I started browning meat for the Taco Salad. While it was cooking I washed and cut carrots and broccoli, throwing it all into a pot with spinach for Stir Fry. (The asparagus I had planned to use up was slimy so I had to throw it out. I was very disappointed and apparently need to re-read this post somebody wrote recently about not wasting food.)

I gave the meat a stir from time to time. I answered a question about an English assignment, drank a few swigs of water, and threw some blueberries into my mouth for a snack. I put water in a pot to boil noodles at noon. I got out the noodles. I dumped mixed greens into a big bowl, poured in cheese I had shredded Monday, and tossed it all around with the freshly cooked taco meat. I mixed up French Dressing for the Taco Salad.

At 10:26 I ran out the door to pick up Malachi.

With all the major prep work done for our day’s meals, at lunch time all I had to do was turn on the stove to cook the prepared veggies and boil noodles. At dinner time all I had to do was get the prepared salad out of the fridge, dice some tomatoes (which I picked up at the store this afternoon on my grocery run), and get out the tortilla chip crumbs I’ve been saving for such a meal as this. I also cut up a pineapple to complete our evening meal. That took two minutes.

Now you tell me. Is it really so terribly time consuming to prepare healthy food? I think not.
