Gratituesday: Several Generations of Basketball

I’ve been looking forward to our boys’ basketball season starting (why yes we do play other sports besides soccer!), but I had no idea their first games would be so much fun. We headed to Kansas this weekend for a triangular. Since we were heading south, and my dad and his wife live just a couple hours away from where our games were being played, they blessed us by coming up to watch their grandsons play. Little did we know that my dad (the boys’ “Papa”) would be joining the boys on the court.

See, my dad was a basketball referee for over 20 years “back in the day.” He hung up his whistle over ten years ago, but continues to love the game of basketball. As the varsity boys were warming up to begin their first game Saturday, we could see a referee making a phone call and looking at his watch. It would appear that the second official had failed to show up.

So what did my dad do? He borrowed a black and white striped shirt and a whistle, and out onto the court he went. Well now, that’s one way to watch your oldest grandson play – up close and personal.

In this picture, you can see Asa (#23) – and that referee over to the right? Asa’s Papa. It was awesome.

I have to say, my dad’s still got it. He didn’t miss a beat (although I dare say he was quite sore after the game). He even had the nerve to call a foul on Asa. “Clean your glasses, Ref!” I yelled. Totally kidding.  It was actually a fair call, but I did giggle at the whole idea of yelling at him out on the court.

The “regular referee” showed up as the game was ending, so my dad was able to watch the rest of the day’s games from a seated position. This is Justus’ first year to play. As an 8th grader, he played in the JV games and did great like Asa had done. It’s so much fun to watch them learning and playing hard!

Both boys scored some buckets, both had fun, both were completely worn out on the way home. The weekend was a blast! God is good to allow so many fun activities in life, with the bonus blessing of fun with grandparents.

Menu Plan for the Week (and some Thanksgiving week discussion)

Honey Pecan PieI’m excited about this upcoming week! It involves lots of food, time with friends, and hopefully some down-time.

Since we aren’t doing any traveling, we’re excited to be available to cook some big meals to share with others this week. You’ll notice that our menu for Monday night and Friday night are the exact same. That’s because I decided to make it easy on myself. Coming up with one menu plan to feed two large groups just made sense. I got the enchiladas made and put into the freezer last week. The rest will go together easily before we serve the meals!

I would love to hear what you have going on this Thanksgiving. :)  We plan to have a very low-key holiday this year. We’ll spend time with friends, feed a few college students, and hopefully play lots of board games. I’m thinking we’ll put our Christmas tree up this weekend, do some baking, and maybe a little shopping. We’ll drink Hot Cocoa, come up with some fun snacks, and take some time off. I can’t wait!

Make-Ahead Healthy Snack Recipes

It’s official. Our 16 year old is taller than his dad. That means Asa is measuring at 6’3″ as of yesterday. His legs are longer than his bed. His feet are bigger than his shoes. The bottoms of his jeans only reach his ankles for two weeks. His eyes are as big as his stomach. And it’s a good thing I love to cook.

Should I mention that our 13 year old is almost looking me directly in the eyes, our 11 year old isn’t far behind, and our 8-almost-9 year old must be going through a growth spurt? I promise that he ate six bowls of Easy Noodle Stir Fry in one sitting last week.

So let’s see. Did I need this Getting Ahead Snack Challenge? Why yes, I did. Somehow, I’ve got to stay ahead of these appetites. Have I actually gotten ahead during the past few weeks? Eh, only a little bit. We mostly eat snacks as quickly as I make them. But at least I’ve discovered some great, new, healthy snack recipes to fall back on. We are having so much fun with these new ideas!

I decided to compile all of the new Healthy Snack Recipe ideas here for us as we conclude this Getting Ahead {Snacks} Challenge. All of these recipes can be made ahead of time. They are delicious, low in sugar, hearty, and easy to make.

Here’s a fun and simple craft you or your kids can make to decorate for Thanksgiving! Here’s what to do:

  1. Print the two downloads we have provided.
  2. Cut out the leaves.
  3. Glue or tape the leaves together in a circle. You may find it works better to affix them to a wire hanger that has been pulled into a circular shape.
  4. If you like, give your leaves personality by adding some googly eyes.
  5. Hang your Be Thankful Wreath.

In addition, your family might enjoy writing on the leaves, sharing what you are thankful for.

Pumpkin Chocolate Chip Bread

It’s kind of a no-brainer, converting muffin recipes into quick bread recipes and vice versa. Still, it’s not something I always think about doing.

Remember how I turned Chocolate Chocolate Chip Muffins into Chocolate Chocolate Chip Bread? That worked just as well when I decided to turn Pumpkin Chocolate Chip Muffins into Pumpkin Chocolate Chip Bread.

Pumpkin Chocolate Chip Bread

To make it easy, I’ll post the recipe here with revised instructions for making this batter into a delicious quick bread!

Pumpkin Chocolate Chip BreadYum

Pumpkin Chocolate Chip Bread

Serves: 1 loaf
Ingredients
  • 3 cups whole wheat flour (I used freshly ground hard white wheat)
  • ½ cup sucanat
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 4 eggs
  • 2 cups pureed pumpkin (or one 16 ounce can)
  • 1 cup melted coconut oil (or butter)
  • 1 cup chocolate chips
Instructions
  1. In a large mixing bowl, stir together all dry ingredients. Add eggs, pumpkin and oil. Mix well. Fold in chocolate chips. Pour batter into two buttered loaf pans. Bake in a 350° oven for 45-60 minutes or until a toothpick inserted in the middle comes out clean. Allow bread to cool for about 10 minutes before removing from pan.

A Nourishing Way to Warm Up

Cold? Hungry? Need some energy? I have the magic potion.  And there are three variations to the recipe!

Have you tried my Warm Vanilla Soother? It’s the first of the three soothing drink recipes I concocted. Drinking this is like being wrapped in a warm blanket on a cold day, and I always feel nourished and energized afterward.

Once I realized how wonderful the vanilla drink was, of course, I had to try making a chocolate variety. Thus, the Warm Chocolate Soother was born. It’s like drinking a brownie that is warm right out of the oven. (Be careful that you don’t trip on the kids while rushing to make this. Yes, it’s that good. But your kids might need dinner or a diaper change first.)

Last, I created a Warm Pumpkin Soother.  It’s a holiday party in a mug. Ahhhhhh…..

So, let’s review. Delicious, satisfying, warm, nourishing, filling, chocolate, chocolate, chocolate. Or pumpkin. Or vanilla. Take your pick.

Gratituesday: John 14:27

“Peace I leave with you; My peace I give you. I do not give to you as the world gives. Do not let your hearts be troubled and do not be afraid.” John 14:27

Those are words from Jesus, and they speak life and truth to me. The comfort and love in those words are enormous. Is there trouble in this world? Yep. Is Jesus bigger? Absolutely. Do we put our trust in people or things or ourselves? No way. We trust the One who gives abundantly more than anything this world has to offer.

I love everything I read in the Bible, but it is the words of Jesus that I’m feasting on.

It works well for me to print out verses and put them up in my house so that I can see them often. In case that works well for you too, I made this to share:

Making Your Thanksgiving Preparations Easier

Making Holiday Preparation Easier

Sometimes I wonder why I don’t make big turkey dinners more often. After all, the food is so delicious and basic:  Meat, potatoes, veggies, rolls, dessert. But each year as I’m prepping the food, I’m reminded why I only make it once or twice a year. It’s a lot of work compared to putting together a casserole and serving it with a salad!

You’ll be glad to know that along with my every day getting ahead tricks and recipes, I’ve figured out many ways to get ahead for the big Thanksgiving meal as well. I usually start a week or two in advance, making good use of my freezer. Does our Thanksgiving meal taste like I’ve frozen and defrosted it? No way. It tastes fresh, because I’ve learned tricks to get ahead and keep the food tasting great!

First, I make my turkey ahead of time. I love getting the big chore of cooking and deboning a turkey out of the way ahead of time.

Easiest Way to Cook a Turkey

Once I’ve got the turkey cooked, I then have several jars of rich turkey broth that I can use to make Turkey Gravy for the big day. I freeze the broth to be used Thanksgiving day.

How to Make Turkey Gravy

Potatoes? Well – I don’t make my mashed potatoes ahead of time. But, the day before, I wash a large amount of potatoes in the dishwasher so that they are ready to go. I also find that it works well to peel and cut the potatoes the night before Thanksgiving. I put the prepared potatoes in a pot of room-temp water. When it’s time to cook and mash them, all I have to do is move the pot of prepared potatoes to the stove and begin the cooking process. Such a Thanksgiving day time saver!

How about homemade rolls? We have two favorite recipes, one of them being these Whole Wheat Butterhorns. They can be made ahead of time, then set out to thaw in the morning and baked at meal time. Easy!
